The What's For Dinner Thread - March '11 (recipe index in OP)

Hello all. I am poking my head in for a minute. A's computer had a virus and I have to scan mine too in case it shared.pirate:.

Last nights spicy turkey wraps were good but spicy. :firefight
 
Marilyn the storms we had on Sunday night were pretty scary. I hope the winds die down soon.

The really strong winds have died down but we are still kind of windy today.

Dinner tonight will be rotisserie chicken from Costco and leftover veggies from dinner last night.

The Morning Doves have discovered our office windows this year. We usually have this one little sparrow looking bird that visits and taps on the windows. The doves show up later in the day when they can see in the windows and look in on us. :goodvibes
 
:lmao::lmao: Dan chose teh keyboard in 4th grade. It was not offered as a class but the instructor took teh kids before and after school as well as during lunch. There was the annual concert adn they played Ode to Joy. Dan wanted it becasue I loved it. Holy Smokes..............yours was a funeral dirge adn Dan's version was a polka! He finished long before anyone else :lmao:

Chocolate Peanut Butter Passion Bars
1/3 cup vegetable oil
2 eggs
1 pouch chocolate brownie mix (they suggest Ghirardelli triple chocolate)
1 cup peanuts, chopped
14 ounce can sweetened condensed milk
1/2 cup creamy peanut butter

Preheat oven to 350. Lightly grease a 9x13 pan.

OMG these look awesome! I'm so glad I checked in tonight because I'm going grocery shopping tomorrow and want to get the ingredients!

Awww. That is so neat. We have a pair of ducks hanging out in our yard this spring. They come right up to my kitchen window and we throw bread out to them.

It was so dreary and rained all day here, temps in 40's. Spring seems really slow in coming to Michigan this year! Took DS clothes shopping today at kohls, not our fav thing to do together. He drove me to a bunch of other errands to get driving practice so that was good. For a treat I told him we would do dinner out his choice. He picked Bar Louie and ordered potstickers for our appetizer and he had a cuban sandwich, DH ordered a loaded burger and I had the pear and blue cheese salad. It was fun to get out on a rainy night!
 
Sheryl, that tart looks amazing! I am adding it back on to the "must try" list.

Marilyn, my yard is full of mourning doves. They usually build a nest in this hemlock tree in my backyard. One year a pair set up shop in a planter I left hanging off my deck all winter! They were so cute and ended up having two sets of babies over the course of the summer.

WFD: I think I am going to make a sausage-tomato-pepper stew. It is easy and tastes good leftover. John has another business dinner tonight, so I am trying to decide which house project to tackle this evening. I've been gradually uncluttering my house as part of spring cleaning.
 

Good morning! Kyle pitched his butt off last night!!!! He gave up a few hits in the first inning then settled down and threw four awesome innings. We were leading 4-3 when he left the game. I could not have been more proud of him. Unfortunately Nicholls State rallied and ended up winning 8-4. It was a great night, some of my NOLA galpals and their families came out to the game. Thanks to all of you for the support.:grouphug:

Glynis – I hope Katie is feeling better today. I’m really puzzled about what to do for Easter dinner. For the first time ever, Kyle has a game on Easter Sunday.

Aimee – 12 hour workdays would kill me, try and get some rest my friend.

Y’all have been very busy posting pics & recipes, I need to update the OP!!

I have a bit of time this morning to catch up with you all. I have to go back and read 6 pages. Wow, you have all been very chatty. ;)

Oh my girls, have any of you tried Zumba? Monday was my first class. It was a TOTAL blast but it kicked my fanny - let me tell you!!! What a total workout it is. Targets everything in 45 minutes. I am feeling it - but in a real good way. I love it!!!

We painted last night till almost bedtime. Hopefully we can wrap this up this weekend. Wow, you think painting a room is easy, but then you start thinking of this and that and it really starts adding up. But it will be SO nice when it is finished. I can't wait. Now Doug wants to redo the bathroom. Good grief!!

This is one of my favorite times of the year - 4 whole days of the Masters. I so hope my Phil does good.

WFDT ~ grilled tilapia packets, roasted potatoes with fresh asparagus and cantaloupe.

I'm making roasted shrimp with feta tonight; I'll probably make some sort of rice to go with it. I used all my green beans the other night so I may stop and pick up some asparagus or something :confused3

Aimee- The bars look so good, I am definatly NOT going to make them. I don't think I have that kind of self control! I really like ghiradelli brownie mix, a little more money but worth it.

Glynis- I was thinking of you last night- I was watching QVC and they were selling little cake bites from The Sweet Tooth Fairy. They showed them with lollipop sticks and stuck in little terra cotta planters, it was cute.

I don't know what's for dinner. My freezer stash has gotten a little out of hand so I'll find something from it. Have a great day all.

The squirels love our deck and my DM has made it worse by feeding them.:sad2: She throws them stale bread, cereal and anything else like that.

We get them occasionally at home, this is the first time I have seen them here. We see all sorts of birds here as we are right on a lake. There is a heron that likes to sit on the boat dock and lots of Canada Geese.

At home the birds like to nest in the slats under the deck and in the vent for the dryer. I haven't ever seen what nests in the vent, I don't think to watch it to see what's in there.


Kat- glad he had a good game even with the loss.


Not sure about dinner tonight. I really want asparagus but no one has it on sale right now.

I knew they were going to be on QVC, but I forgot to watch! The gal who created the company lives in a neighboring town, and she never expected her business to get this big! The cake bites are amazing! I'm addicted, and I don't care who knows it!!!
 
Good afternoon! Boy, did the morning get away from me! I've been cleaning my house like a mad woman all day! I host book club tonight, and I always panic on the day! Anyway, my house looks good, and now I can focus on what we're nibbling on while discussing Pride and Prejudice. I'm making coconut macaroons, and a pound cake that I'll serve with sliced strawberries and cool whip. I also have an assortment of "biscuits" for the ladies to have with tea or lemonade.

Dinner will probably be pizza, as that's usually what Alan brings home to share with the kids while they have their own party in the basement! He's a good daddy!
 
I was house cleaning today too but mostly cleaning out. Last night I watched an episode of Hoarders on TLC so I felt the need to purge junk out of my basement this morning. That and the fact DD will be moving home from college for the summer at the end of this month and I needed to make room for her dorm room stuff.

WFDT = made oven fried chicken, baked potatoes, carrot sticks and a fresh pineapple. DH is getting ready to make milk shakes for a dessert.

I did buy the ingredients to make the Peanut butter Passion Bars... maybe I'll get to them tomorrow. :thumbsup2

Roasted Shrimp with Feta
3 tbsp. olive oil, divided
1 medium onion, chopped
3 cloves garlic, minced (just grate them over the skillet - must faster!)
1/3 cup dry white wine
1 (15 oz.) can diced tomatoes, with liquid
2 tsp. tomato paste
1½ tsp. dried oregano
1 tsp. kosher salt
½ tsp. black pepper
1 cup fresh bread crumbs
3 tbsp. minced fresh parsley
1 tsp. lemon zest
1 lb. large shrimp (16-20 per lb.), peeled with tail segments left intact, deveined
5 oz. crumbled feta cheese
Juice of 1 lemon
Fresh lemon wedges, for serving

Preheat the oven to 400˚ F. Heat 2 tablespoons of the oil in a large skillet (I used my cast iron skillet) over medium heat. Add the onion and cook until slightly tender, 5-8 minutes. Add the garlic and cook just until fragrant, about 1 minute. Add the wine and bring to a boil, scraping up any browned bits. Continue to cook 2-3 minutes, until the liquid has reduced by half.

Add the tomatoes with the liquid, tomato paste, oregano, salt and pepper. Stir to combine, reduce the heat and simmer, stirring occasionally, 10-15 minutes.

Combine the bread crumbs, parsley, lemon zest and the remaining tablespoon olive oil in a bowl. Toss well with a fork to blend.

Remove the pan from the heat. Lay the shrimp in a single layer, tails up, on top of the the tomato mixture. Scatter the feta over the top of the shrimp, followed by the bread crumb mixture.

Bake for 15 minutes, until the shrimp are cooked through and the breadcrumbs are browned. Squeeze the juice of 1 lemon over the shrimp. Serve with additional lemon wedges.

Aimee- The shrimp looks really good, I would never have thought to put feta with shrimp.

Marilyn- I used to put stale bread out for the birds, until one time I put out a hot dog roll. Then the seagulls came. They started fighting with the crows, I never realized how big seagulls are until I saw them next to the crows, they are twice the size! I don't put out stale bread anymore.

Today is $5 rotisserie chicken at the store so that will be dinner with mashed potatoes and greenbeans. I'm really looking foward to dinner tomorrow. I'm making the general tso's chicken Aimee posted, fried rice, and dumplings. Hopefully at least one of those will come out well!

If you make that tart, remember I seasoned & cooked the onions more than the recipe called for.

Robin, I'm sorry I thought it was Aimee who had fixed that! :guilty: Well I took your advice & cooked the onions longer. I also added quite a bit more seasoning to the onions. Bob liked it & he didn't even ask "where's the beef?"!! lol!

Well like Vic, I have a reason other than spring cleaning. ( I'm more in line with Aimee, there is no season for cleaning! ;)) I've been working hard this week getting our spare room cleaned out, so that I can turn it into a nursery for our soon to be grandson. What a mess that room was! It was like one big giant closet! Thank goodness our aide/friend Miranda came help me!

Dinner last night was marinated & grilled lamb chops. Arugula salad & "Princess Potatoes". Alexis was sitting at the counter doing her homework while I was preparing the potatoes. First she asked if I needed her help to fix them. Then she says that she wished she could rename "her first recipe". She would rename it "Sassy Potatoes"!!!! Oh yeah that's my girl!!!:lovestruc :rotfl:


I might try that Roasted Shrimp dish. Aimee did a great job on that!
