Kat - Congrats to the LSU team!! Way to go!!!

Lindsay - I think your new challenge sounds awesome! I found a recipe for pumpkin granola that I think I'm going to try today. My kids love to munch on granola for a treat, and I love pumpkin, so I'm going to see if I can make it to keep on hand!

Our trip up the canyon was fantastic! Of course, in true Glynis fashion, I forgot the camera. Oh well, Alan promised another trip, just to do leaf peeping! The kids had a great time, and they caught 3 fish. Timothy caught a golf ball, and thought he was in heaven! It was just nice to be able to spend some time together without worrying about running through bedtime! We were all home, bathed and ready for bed by 9:00.

Today I'm working with Katie and her partners for her scene for Shakespeare Competition. Did I mention that she auditioned, and was cast for the competition team??? We are so excited!!! The competition is next week, and she and her 2 partners are working so hard! I'm going along to give moral support from a distance. She didn't want me chaperoning, so I have to drive myself. Oh well, small price to pay.

No idea on dinner. I think I'll wait and see how the day shapes up. Although Lindsay's suggestion of Beef Stroganoff sounds delicious!

Glynis, congratulations to Katie! How exciting!

Lindsay, carbonara is actually an easy recipe to make. My trick is to hold back a good amount of the cooking water--you can use it to get the sauce to the consistency you like.

Kathy, I don't think I have posted the fritatta recipe before. Here it is:

Red Pepper Fritatta

1 tbsp. olive oil
1 onion, peeled and minced
1 red bell pepper, seeded and sliced
1/4 cup chopped basil or mint, or a combination of the two
6 large eggs, beaten
1/3 cup freshly grated parmesean cheese
salt and pepper to taste

Preheat oven to 375 degrees

Heat the oil in an oven proof skillet and cook the on ion for 5 minutes. Add the pepper and cook until all vegetables are tender, about 10 minutes more.

Meanwhile, stir the cheese, herbs and salt and pepper to taste into the eggs. Add the cooked vegetables to the mix. Pour back into the skillet and cook over medium low heat until the eggs are set on the botttom.

Transfer to the oven and cook until the eggs are just set all the way through and the top is lightly browned. This should take about 10 minutes longer.

Cut into wedges and serve warm or at room temperature.

Here is a picture of last night's brined beer can chicken. It was delicious. We ate it with sliced tomatoes and corn sauteed with basil:

WFD: either quesadillas using up the rest of my bell peppers and the leftover chicken, with pico de gallo and guacamole, or pan bagnat sandwiches.
 
Morning ladies,

This is going to have to be a real quick fly by as I am swamped at work.

Yesterday was a true Monday - Printer broke among a LOT of other things. So I am playing catch up, plus it is pay week and that is always busy. I have a conference call tonight plus our Annual Planning meetings. I have no idea when I will get home. Bed will feel good.

WFDT ~ Beef Stew in the crockpot before I left and wheat bread to be ready when Doug gets home just in case I never make it.

All this talk of fondue is killing me. We have a Melting Pot here and I’ve wanted to go for years but can’t talk Johnny into it. He refuses to cook his own food.:rolleyes:

UncleR made us the most wonderful crockpot chicken with carrots, turnips and potatoes. :cloud9: It was delicious.

Tomorrow is going to be Aimee's green chile sour cream enchiladas.

Also, Tooter goes in tomorrow for her spay. So, good luck to Tooter.

Jen-I googled Dallas Shabu Shabu and the three places that came up didn't sound like the experience I described. I like the Melting Pot. We agreed to do fondue with my parents over Thanksgiving.

Janice-The Hot Pot is the Chinese version of Shabu Shabu. PIO also told me about another variation.

And the big news in our town is that we're getting a McDonald's. You KNOW you live in a small town when the front page of the paper keeps advertising that it's coming and even the ladies down at the barber shop are talking about it.

DH loves granola bars; so I'm going to file that away in the necktop computer and when we run out of the current stash, I'm going to try it.

Quick flyby here! WE are leaving tomorrow morning for Myrtle Beach. I just want to let you all know that yesterday Donny suffered a grand mal seizure at work. He has been seizure free for about 7 years and has not needed meds for about 3. He is fine today and has scheduled appointments with his Dr's. at least I know that he is seeing his PCP. The neurologist is tougher.

Thank God that his employer insists that management keep up on emergency procedures so his boss knew exactly what to do.

I will check in this week but I am not good at posting on my new phione so I will ask Marisa to keep up here.

Thank goodness for his employer. Seizures are scary things. I hope they found out why he is getting them again. :hug:

Try to have fun on your trip


We are turning into ducks here. It has been raining since Sunday night. I am pretty sure the ground has taken in all the moisture it wants. I scheduled some stuff for my lawn that they can only do when it is dry. Of course this would have been welcome after they were done. I am having the lawn aerated and them to put down some more grass seed.

Dinner last night was clean out the frig night. I am thinking of stir fry something for tonight.

Jen - I remember when the town I grew up in got it's first stoplight, and shortly after that, a McDonald's! It was a huge time for our small town! I remember walking to the McDonald's after Jr. High and ordering fries and a hot fudge sundae. It tasted so good, then!

Nancy - I'm so sorry about Donny! That is really scary! Thank heaven his employer is on the ball. My niece suffers from epilepsy, and since she just found out she is pregnant, her husband is terrified that something is going to happen. So scary!

Becky - Great picture of a sandwich! You can make that look so appetizing!!!

PIO - Fabulous pictures, although I could do with the spider! I'm having enough heebie jeebies with a spider that's taken up residence in a corner of my house I can't reach, and of course, Alan is gone!

Dinner last night ended up being taco salad. Something we all love, so it was a success! Tonight will be spaghetti. Alan has his late day today, so he won't be home, and spaghetti is easy to make and get my kids to eat!

Well, I've got to get off and find a life jacket for Jacob. His Scout troop is going boating this afternoon, and I need to get everything ready.

Janice ~ I hope you dry out soon. We could use some rain, but to tell you the truth I am loving this weather pattern we are in. So are the farmers, the corn and soybeans are drying out real good.

I am at Elizabeth's this morning. Her and Jay have gone into Kearney for a Dr. appt. She is going for a Gestiational Diabetes test. She has to fast for 12 hours then drink 8 oz. of gluclose water. I think all of the testing they do now days is such overkill but afterall what do I know. I really thinks it makes the Mother/parents worry about things WAY too much, but again what do I know. :confused3

Doug was such a doll last night and took pity on me and brought me a chicken salad for my dinner. He enjoyed the fruits of my labor at home, by himself. I ate it at my desk as I continued working. I didn't get home last night until 9:30. I am so glad I don't do this very often. I workaholic I am not. :lmao:

Tonight is church night so it will be a long night again, but at least I will be home somewhat early.

WFDT ~ Date night out before choir - I think I will have their Lemon basted Cod with new potatoes. Sounds good. I just hope the vegetable tonight isn't peas.

I'm Glynis a SAHM to 5 kids (ages 14 to 2). I'm a novice cook, but I really enjoy it.

Rules are: jump in where you are, and enjoy!!! If you've got a recipe you really like, post it! Pictures are not required, but we love our food porn! You must enjoy chatty women, and the occasional man, and be prepared for us to include you in our family!

Kathy does a great job of keeping up the index in the first post, so if you're strapped for ideas, that's a great place to browse. I've tried so many recipes posted by these ladies, and have not found a dud, yet!
