The What's for Dinner Thread- June 2012 (recipe index in OP)

Your pictures from the pop up whiskey bar were really cool!

I missed these! Where were they posted? And what the heck is a pop up Whiskey bar?

Alison ~ I wish I could have been to your concert. It sounds just amazing.
Sweetie, I worry about you doing to much. You are burning the candle at both ends and I worry that you are going to get sick. You need to take some time for you and just lay back. It will all get done, it just doesn't have to be done today.
Love your garden bounty pictures.

Yes we got more rain last night. The roads into town are just terrible. I slipped and slide the whole way to town. My nice pretty car is mud covered, but there is no sense washing it in this crappy weather.

WFDT ~ Pizza and brownies (Ethan's choice) if the party is on! If not, grilled brats and a cucumber salad.

Make it a great day!!

Thanks for your concern. We had a mellow day yesterday. Fran spent most of it sleeping. I caught up on the DIS and posted some updates on the TR. Today I'm having a slow morning before I have to pick up Darcy. Today I'm going to have her clean the house instead of working WITH her to unpack and stuff. The workmen are supposed to come back here and finish up this week starting today.

Ellen, I worry about you with all this weather you are having! Driving sounds very dangerous out there! Sliding in the mud. Stay safe!

WFDT? Not sure tonight was supposed to be "something from the freezer" but we did that last night. We could have the crab ravioli that was supposed to be last night's dinner, or we could have sloppy Joes which is supposed to be tomorrow night's dinner.

WFDT? Turkey burgers on the grill with guacamole and cheddarjack cheese, salad [lettuce and cukes from our garden] , and corn...

Brandi - Glad you liked the pop-up whiskey bar. I thought of you when I got the Cosmo.

Ellen - HB to Ethan. 10 years? Time does fly. Hope it dried up for the game to be played.

I missed these! Where were they posted? And what the heck is a pop up Whiskey bar?

I posted them somewhere anonymous. :rolleyes1

But.....just for you. :)

I got wind of a pop-up bar event that was being held on Friday night. As pop-up bars go, it was a very unusual venue. As Aussies go, it was par for the course. The venue was the Old Melbourne Gaol (or jail). This country did start out as a convict settlement, afterall.

So, among the death masks,

salubrious cell conditions....

and 'toys'.....

It was a party atmosphere.

And what was this pop up bar in aid of? Yup. Not beer. Whiskey!

As part of my entry ticket, I had vouchers for two tastings. I decided to go with the unusual Japanese whiskey. I had no idea that the Japanese made whiskey!

I almost went with another whiskey for my second voucher but as I was driving home, I decided to go with a cocktail instead. This was the Cosmopolitan that tasted like fizzy lime cordial after the whiskey. I'm pretty sure that there was some alcohol in it....I just couldn't taste it after that whiskey shot. *hic*

I also got a food voucher, which I cashed in almost straightaway. I needed some oil intake as a buffer against the alcohol. To quote another Dis-ser "I haven't met a fried chicken that I didn't like...."

And because I was driving home, I decided to have some Creole shrimp and cheese grits with the Cosmo.

It really was a very pleasant way to spend Friday night. Especially when serenaded by a Jazz duo; set up where the scaffold was.

Cheers!

WFDT? Turkey burgers on the grill with guacamole and cheddarjack cheese, salad [lettuce and cukes from our garden] , and corn...

YAY!

We're cropping kale and coslettuce from the garden.

I'm hoping for some broccoli, carrots and cabbage in a couple of months time.

WFDT? Grilled Oriental chicken salad:

Grilled Oriental Chicken Salad

Marinade boneless chicken breasts in a mixture of low-sodium soy sauce, sesame oil, fresh grated ginger, and minced garlic for about an hour. Grill on both sides (about 15 minutes). Meanwhile, in a large salad bowl, combine lettuce (I use baby greens and lettuce from my garden), 2 oz of almond slices, 1 oz of less-sugar dried cranberries, 1 large can drained mandarin oranges, and 1 small can drained water chestnuts. Slice cooked chicken and mix into salad. Add Ken's Lite Asian Sesame with soy and ginger dressing and toss.

Thanks for posting PIO, I have not had much time and I've been spending it on the DIS rather than FB.

Today we are moving a huge display case. Not that I'm doing much we hired Gale's guys to do the heavy lifting, but I have to drive the U-Haul. We're having sloppy Joes fir dinner tonight. I had to make sure that I had all the ingredients at the new house to make dinner.

I also started on my rolled dinner yesterday. I stuffed my rolled things. You'll have to wait for the big reveal for the details.

Happy Thursday all,

Brandi ~ I was going through some recipes here at work yesterday. Getting my "summer" ones out. :rotfl2: I saw this and thought of you. It is really good and my go to for the summer when I can get the squash.

Southwest Style Spaghetti Squash
1 medium spaghetti squash
1/2 lb ground turkey (substitute black beans for meatless)
1 Tbsp olive oil
1/2 red onion
chopped garlic - 2 cloves
1 minced jalapeno pepper
1 minced red bell pepper
1/2 Tbsp ground cumin
1/2 Tbsp oregano
1/2 Tbsp chili powder
Kosher salt and freshly cracked black pepper to taste
1 cup frozen corn - thawed
1/2 cup freshly torn cilantro, more for garnish (I don't like cilantro so used parsley)
juice of 1 lime
grated cheddar cheese to top

Cook the squash. The recipe recommends slicing the squash lengthwise, removing the seeds, sprinkling with salt and pepper and placing cut side down on a baking sheet and baking for 30-45 mins in a 400 degree oven. Remove from oven and scrape the squash into strands. I cook the squash whole in the microwave then cut lengthwise and remove the strands. It's faster and the squash is easier to cut.

In a large skillet, heat oil over medium-high. Add ground turkey, onion, garlic, and jalapeno. Sauté until turkey is browned. Add (the black beans at this point if you are not adding the turkey) red bell pepper and stir in cumin, oregano, chili powder, salt and pepper. Sauté for about 2 minutes. Stir in corn, half of the cilantro and lime juice until well combined. Add the spaghetti from the squash to the mixture, tossing to combine. Season as desired.

Set oven to broil. Stuff each squash half with the squash-vegetable mixture and top with grated cheese. Broil until cheese melts and gets brown and bubbly. 1-2 minutes. Garnish with remaining cilantro. Enjoy!!!

We had so much fun last night. And I know Lilly is my blessed grand baby but she was perfect!! Doug and I were remarking that there would have been nothing to have her be better. At 2 years old, I think she enjoyed it. She sat on my lap and watched everything. She has been potty trained for just over 3 weeks so that was a concern for me but we only had to go 3 times. It didn't get over till 10:45 and this baby is in bed at 8 every night. She fell asleep about 10:30. Doug carried her to the car and she woke up when we got there so I got her jammies on and gave her, her milk and her duck (her blanket) and she was out and slept all night till 7:45 this morning. We had so much fun, I am almost scared to take her again tonight as she was so good last night. Oh and yes it stormed - of course it did!!

WFDT ~ and elephant ear at the fair grounds. So not good for me but I only get them once a year and by golly I am going to get it loaded and love every bite of it. :cool1:

Make it a great day.

That sounds killer!

Foggy Wednesday,

Allison ~ OH another big piece is being moved. Every thing that gets moved just makes it one step closer to being there full time. I can't wait for the day when you are finished and totally settled in.

Kimmar ~ your salad is very similar to one I make. It is a go to for a quick summer meal - love it!!

PIO ~ Love the pictures and the premise of a pop-up Whiskey Bar. Never ever heard of such a thing, but it sure looks like fun. You do the neatest things.

t-daniels ~ It is really good - with the turkey or even with the black beans. Both are yummy.

Well the party was put on hold. They played in the tournament last night and won 4-3. Oh my it was an exciting game!! Stephanie and Lilly even came to watch. They play again tonight but Ethan left this morning for wrestling camp so he won't be there. The game is about 25 miles away and I don't think I am going to go. We shall see!!

WFDT ~ bacon, eggs and blueberry muffins. Oh breakfast for dinner is one of my favorites.

Make it a great day!

Last night was Baked Butternut Squash, Cuban black beans, and Garlicky Kale..

The Kale was so good, even DH went back for thirds!

Good morning all,

t-daniels ~ I really need to try tofu again. The few time I have tried it I didn't care for it at all.

Brandi ~ I have to admit - I used to not like Kale, but with your prodding I have tried it a few ways and am starting to really like it. How do you prepare your garlicky kale? I love garlic!!

 to everyone else. I miss everyone!! Hope you all are ok.

Elizabeth wasn't able to get Ethan to the game last night. As the wrestling camp said that if he left then he couldn't come back. Silly rule I think, but whatever - he stayed. I was a bad Nana and didn't go. I haven't heard if they won or not.

I HAVE to go grocery shopping tonight. I played last week end and I need a few things. I hate to go during the week, but we are working on the house this weekend and I know I won't want to go then. So tonight it is - and besides if I go without Doug my bill is always a LOT lower. He is worse than a kid!!

WFDT ~ Chicken salad stuffed tomatoes, wheat thins and sweet tea. Doug will eat at the Country Club.

Make it a great day!

...right? So easy and so refreshing! Another version of that is that I replace the oranges with sliced strawberries, add crumbled goat cheese, and use raspberry viniagrette instead of the Asian one...

Well we weren't totally successful with our move yesterday. We got the cabinet in the truck, and the truck is in Long Beach, but the cabinet is not yet in our house. We also hope that the truck is in the location we left it last night and it has not been towed.

We can't park commercial trucks outside our house as per the CC&Rs. So we need to go get the truck this morning. Last night we were so tired we just ordered chinese. I was surprised to find a place that delivered to our new house, but it was pretty good food.

Tonight shoukd be sloppy Joes finally.

I have mainly had it as a scramble. I always like that. Some times with baked or fried tofu I don't like it. But scrambles can taste crazy close to eggs!

Oh no !

Exciting on delivery though.:-)

I truly am building an ark - NOT kidding!!

We got another 1" last night and more on the way today. Flooding is starting - even in my town, which doesn't happen very often. This is getting serious.

Kimmar ~ That alternative sounds really good to. Nothing better in the summer than a nice salad. Thanks.

Allison ~ :scared1: OH my I sure hope it hasn't been towed. Hopefully by now it is safely in your house. That is just scary.

t_daniels ~ I will have to take your word for that. :rotfl2:

I am so sad today :sad2: We have tickets to Lady Antebellum tonight. I have waited 3 years to see them, 2 years ago they sold out before we got tickets, last year I had tickets and they cancelled as she was pregnant so this year we got our tickets the very first day. And tonight is suppose to be severe storms, lightening, hail, high winds and torrential rain. This is an outside concert!! I think I am doomed to ever see them. Doug is going out today and get us rain jackets. Last year (if your remember) we saw Toby Keith in the rain. We got soaked to the skin. Hopefully the storms will hold off until later - but I really don't think that will happen.

WFDT ~ something at the fair grounds - maybe another elephant ear. Yea, that will be dinner.

Make it a great day (NO RAIN) and a wonderful weekend.

....oh Ellen....hey, you can borrow my beach umbrella, ella, ella, ella....:beach:
