The What's for Dinner Thread- June 2012 (recipe index in OP)

I can't believe it is Friday already!!

PIO ~ You curry looks amazing. I am really getting a taste for curries. You all have got me interested - I've not cooked one myself but have ordered out a couple of times. I am the spicy one in the family. ;)

pigletgirl ~ So glad that DD is back to her happy self. It is so scary when they fall, are sick and hurt themselves as they can't tell us where or how bad it hurts. I was always so glad when they could finally say - It hurts here!!

Alison ~ Welcome home!! So glad the babies were glad to see you. I usually come home from WDW losing weight even though we eat all the time. I think it is the 10+ miles we walk every day.

Kimmar ~ I like your idea of lasagna also. I ordered lasagna out awhile ago and they came all rolled up. I had never see it like that before. If that is what you were thinking, I can't wait, as I would love to have the recipe for them.

Brandi ~ Thanks so much for the link. I ordered some. That looks amazing, and I love your idea of dessert. Thanks!!!

YoYo ~ hope you are having a good day.

This only working 3 days a week is kinda nice, but I can't believe it is already Friday again. I'm not complaining but it sure makes the week go fast. We don't have any big plans for the weekend and I am really looking forward to a nice quiet couple of days. Doug is playing all day Sunday in a golf tournament so I will go to church and come home and hibernate. I can't wait.

WFDT ~ Pork tenderloin, summer squash and potatoes - all on the grill.

Make it a great day and an awesome weekend.

Dessert is a good thing. Please let me know what you think of them?

Weve been having home cooked dinners for the past few nights. We have been eating a lot of caprese salad with all the tomatoes coming out of the garden.

Friday I made Balsamic Chicken, which is pretty much my chicken cop out recipe. Salt pepper and garlic powder sprinkled on the chicken and thwn drizzled with Balsamic vinegar and olive oil. Bake until cooked.

Saturday we had spaghetti with sauce I took out of the freezer and some steamed zucchini, also from the garden. Last night was pork chops, stuffing and gravy with another tomato salad. Tonight we hae an event at WDI and they're serving a buffet. We get to listen to imagineers talk during dinner. I wish I could share pics but they already told us to keave our cameras in the car.

The Balsamic Chicken recipe sounds like a great "Easy go to Meal" kind of thing.

Good morning everyone!!

Kimmar ~ Oh a nice long visit with Mom. Enjoy every minute!!

PIO ~ I had a blast last night...............

OH.MY.WHAT.FUN.I.HAD.LAST NIGHT!! I walked up to the door and Lilly took one look at me and jumped into my arms. We got her backpack and jacket on we were outta there. The rain had stopped but it was still cool and cloudy. We went right to her new swing set. Oh it is so cute and she loves it. We had dinner, went for a walk - twice in 2 different strollers, rode her trike, pushed her in her coop, blew bubbles, saw bunnies, robins, smelled the flowers and wrote on the driveway with sidewalk chaulk. It was wonderful!! I gave her her bath and rocked her to sleep. I can't think of a more fun way to spend a night.

Got up early and got her to daycare by 7:30am. Now I know why I stayed home with my kids, good grief I will be truthful, I almost shed a tear. :crying: I don't know how Mom's do it. Got to work about 15 minutes late, but oh well.

Ethan has a ball game tonight so we are going right after work. The little scoot is pretty good. I am excited to see what he does tonight.

WFDT ~ I have no idea when, where or if we will eat anything. It might just be a bowl of cereal when we get home. Oh how I love summer!!

Make it a great day.

Ellen what a lovely time you had, and I am sure no one had to rock you to sleep either!

Two nights until we move!

We have band tonight so dinner will be from a drive through.

Yes, future dinners will be at the new house. I'm not sure I will cook on Wednesday as it will be a full day of preparing for the move. My first big project is to empty my dressers that they can move it with the beds.

Ellen is sounds like you had a fun time with Lilly.

I hope everyone has a great day.

Super excited for your move. Hope you are enjoying this adventure also!

It's Wednesday!

Ellen - Yes, DD and I are doing a Mom and Baby swim class. It's nice bonding time and she loves the water! It's just another activity to do outside of the house when it's so beastly humid and hot. We will continue through the summer.

Hope everyone else is healthy and well. We're fine here.

WFDT - Creamy Cheese Enchiladas, black beans, salad and fruit.

Thursday night and we've got a new routine here. DS' piano class has shifted to a Thursday night; which means that I can sit in on his class as well. The class is at 6.15 pm; which is a little too early to have an early dinner.....and too late to have a late cooked dinner. So, we're looking at trying out takeaway and then homecooked on an alternating basis.

Tonight is takeaway night. It's probably going to be burgers for us tonight.

last night was tofu, collards, and tomatoes, cucumbers and bell peppers for me and David changed the tofu for Pork Chop.

The collards came from my CSA this week and they were beautiful, I cooked them in water then added them to a pan with a quart of homemade Salsa, from last summer, and then finished them off with a little Apple Cider vinegar, and we were both impressed, they tasted great!

Happy Thursday,

Alison ~ Today is MOVING DAY!!! :cool1: I hope all goes well.

pigletgirl ~ Your swimming lessons sound like fun. I know my girls and grandbabies loved it. I went to just watch. The neat thing is, is now they love the water.

Brandi ~ I have to be truthful with you - I have never ever had collard greens. It isn't something we see here at all. It's kind of like grits - we never see them either. When ever we travel south that is the first thing I will order is grits, collard greens not so much. :lmao:

PIO ~ I so understand you. Stephanie is my pianist. I would go to her lessons and then when she practiced at home, I would just sit and listen. She is really good and has already (at 2) has Lilly at the piano. She loves it!!

I had a very quiet night last night and it was wonderful. I walked my 3 miles then watched TV. Took a shower and went to bed with my Kindle. Slept all night and feel like a million bucks this morning.

Ethan has a game tonight so of course - as their new mascot - we have to go. It is at home tonight so that will be nice - no traveling.

WFDT ~ Veggie burgers, sweet potato fries and a jello salad.

Make it a great day.

Veggie Burgers!!!!!

Collard Greens is something I grew up on... I mean it was cheap, and we were poor, so we ate it alot...

Vinegar, changes the taste so much, we always had a huge bottle on the table with peppers shoved down in it.

last night we had Chaang Saag, which is an Indian Dish, meaning Chickpeas and Spinach, with tomatoes and spices. David and I both enjoyed it.

Tonight is black bean burgers on lettuce with Avocado's...

Happy Friday again girlies,

Brandi ~ Your dinner sounds amazing. Something both Doug and I would love.

Ethan's team won again last night. It was close though, they were down by 3 going into the last inning but the boys got those bats swinging and ended up wining 4-3. They were so excited - so were the parents and Poppys & Nannys. :cool1:

I am working out in my boarders this weekend. We have placed the "curb it" around the house and then we placed fabric and white rocks down. It is so pretty but I have one spot by the front door that has lots of weeds. I always put Round up on it but this weekend I am going to redo it. Take all the rock out, treat it and put new fiber down. It has to help. It just looks really bad the way it is.

Lilly is coming to spend the night tomorrow. Stephanie bought a golf and stay package for Marty for Father's Day. They will be back early on Sunday afternoon and then we are all (Elizabeth and the boys to - Jay is at Guards) going to the Country Club. Should be a fun time.

Happy Fathers to all of the Father's out there. You make such a difference in our lives. Thanks!!

WFDT ~ Chicken salad stuffed tomatoes, crackers and sweet tea.

Make it a great day and an awesome weekend.

Am I not good enough???? :guilty:

Of course you are!

I think you're the one with the gold star for remembering! :thumbsup2

::yes::

I completely forgot we agreed for roll-up dinner this month. :duck:

And then a "lasagna" next month. I already know what I'm making for that. The jury is still out on my rolled up dinner. Depends on how moved in we are by then.

The Balsamic Chicken recipe sounds like a great "Easy go to Meal" kind of thing.

It is. And it tastes good too.

Happy Thursday,

Alison ~ Today is MOVING DAY!!! :cool1: I hope all goes well.

As good as such a thing could go. It took us three trips to accomplish what we wanted. Beds and glass cabinets in the first trip, TVs and cat trees in the second trip and kitties in the third.

Oh my gosh! What a task it was to herd up all the kitties!!!!! They were already freaked out since we took away all their furniture a couple hours prior. I nailed their reactions to the new house. The white things (two sisters, identical except for blue/yellow eyes) are still freaked out and hiding. Tesla couldn't have been happier. Once he found all his cat trees in the house, he loved the long hallways and wide open spaces. He was rolling on the couch purring. We didn't have a couch at the old house, just a love seat that always covered up with junk.

By morning everyone but the "solids" (all white or all black) were happy and back to their normal selves. I'm not sure why it is the multi colored cats are all happy, but the all black one, Velcro, is still a little skittish as are the white things.

I can't believe I am sitting in my family room of a gorgeous giant house writing to you all. And I get to do it every day! And that walk in tub... :faint: :cloud9:

Sounds like a very successful move, Alison! :thumbsup2

I love Indian food, Brandi. Wanna share that recipe?

Your garden is sounding great, Ellen. :thumbsup2

Pigletgirl - Enjoy the swimming lesseons.

I had dinner last night with some of the other Melbourne Dis-sers. It was a nice night and we just found a food court and got dishes from there.

We've got a 'nothing' weekend planned. Well.....that's after we change the sheets, clean the house, grocery shop, weed the garden and just get our chores done. :joker:

Have a great one all.

....for Father's Day, we're gonna grill ribs, chicken, and hot dogs. I'm also making GF pasta salad, mini corn on the cob, and broccoli...

Kimmar - Great sounding menu! YUM.

It's American Father's Day.

We don't celebrate it until September.

....for Father's Day, we're gonna grill ribs, chicken, and hot dogs. I'm also making GF pasta salad, mini corn on the cob, and broccoli...

WOW - sounds amazing. Then you topped it all off with chocolate and ice cream. YUM!!

PIO ~ I have to agree with Kimmar, I thought Father's Day was universal. Sill me :rotfl2:
I totally agree with taking a do nothing weekend ~ after all the chores are done. :lmao:

Alison ~ Oh you and Fran so deserve this beautiful house. I don't think I know 2 women that work as hard as you do. You just sit back and enjoy it my friend. You deserve it!!!

Brandi ~ I have enjoyed your pictures on FB.

Wow, what a weekend we had. Matthew was texting me Friday night about wanting tickets to the TCU World Series game and how they couldn't find any. Katelin graduated from TCU and then came to Nebraska for her Masters. She really wanted to go. So Doug and I made a few calls, pulled a few strings and got them tickets. So Saturday morning we set off to meet 1/2 way to give them the tickets. We didn't end up getting home till 4. And then the storms hit. They had forecasted terrible storms and they were right! It was slow moving and as Doug said, "Was quite the Rodeo". All in all we got almost 3" of rain, no damage - thank goodness. We have been so lucky!!

Sunday was church, golfing and grilling. I think Doug had a great Father's Day. But let me tell ya - I was glad to get to work this morning. :p Nasty storms again this morning (right now it is really dark and windy) but suppose to be better this afternoon. Ya right ;)

WFDT ~ Steak salads, and sweet tea

Make it a great day!
