The What's for Dinner Thread- June 2012 (recipe index in OP)

It's Sunday night here and my weekend is nearly over.

Dinner tonight was those zucchini and haloumi cheese fritters. DH and DS really enjoy them; so they've made the rotation. At least it's a nice fall-back to have in the repertoire.

Last night, we headed into the city to enjoy White Night Melbourne 2014. It was wall to wall people and an estimated 500,000 Melbournians were there. We finally got home after 2 am in the morning.

Good Sunday morning! It is gorgeous here, warm(ish) and sunny, and supposed to be like this all day! Buddy and I took a walk finally, because the street was clear. It has been a lumpy icey trail so this is a great change.

Ellen- I just saw that Cooper was not feeling well and hope that today he is much better. I hate hearing that the furbabies are ill, and there has been a lot of that lately. Please know that your Cooper is in my prayers,
 
I forgot about dinner. Last night Kady was here and she asked for cheeseburgers and french fries. Granted! We had sundaes for dessert. Friday night Buddy and I had grilled cheese and tomato soup.

Today I have a lot of homework, so dinner is going to be easy, again. Not sure what, I have plenty to pick from. The kids want to drag buddy ut for breakfast, but I dont see that happening
 

Nancy - Glad that the weather is finally clearing up for you. Hope Buddy is doing well. I'm hearing you about wanting to keep meals simple. I'm the same. Hope you get the homework done!




Week 4 of the Quit Sugar diet and we're at the halfway mark. Tonight, I'm going to make hamburgers for DS and myself. I worked out that hamburger buns have a high sugar content so it's going to be a "deconstructed" burger. I'll cook the patty and put all the lettuce, tomato, onions on the side. And also include two slices of toast. I think I might make a tomato/onion 'sauce' to go with it.

Ellen - I sure hope that Cooper gets better!

PIO - I can't even believe it's been four weeks of no sugar.

I noticed that Peppers are on sale for 2 for $.99, so I think I might make my peppers in advance and freeze them.

Tonight we're going out for dinner at an average Greasy spoon and then going to see the Music Man. This morning we toured a private car collection that was really awesome. Fran is asleep right now as she gets really tired whenever we do something. We want her to stay awake for the show tonight.

PIO ~ Your pictures are amazing. You are so lucky to be able to take advantage of things like that. Some of them kind of reminded me of the projected castle show in WDW. Just amazing!
I have a recipe for you that might like - I will post it in the next post.

Nan ~ So glad you and Buddy got out for a bit. I bet he thoroughly enjoyed it. How is he doing? I mean "really" doing?

Alison ~ Your car show sounds like fun. Again - you do the neatest things. You are so lucky and smart that you go. Oh how I love the Music Man. Was it good?

Well Cooper must have just had a tummy ache. Either that our your prayers all worked. When I got home on Friday he met me at the door like usual. He seems to be fine now. I am wondering if it isn't the treats I give him. When I opened the new box they looked really funny to me but smelled ok. He had had about 4 or 5 (in the course of 5 days) of them before he started feeling yucky. So to the trash they went. I am not taking the chance that something was wrong. But anyway he is back to his old self. I am so thankful.

We got almost 6" of snow from Saturday night to this morning. It was a pretty snow and full of moisture so that was really good.

On Saturday morning Stephanie called me and wanted to know if I had any plans for the day. Remember I told you all I really didn't have much planned and Doug was on call. So we took off and went to Grand Island and shopped all day. Lilly Bug was a perfect doll - not one problem and we had a ball. Got home about 7pm and the snow started at 8.

Yesterday we went to church with only about 50 of our friends - it was really snowing! Fixed a big pot of Potato Soup. It really hit the spot.

WFDT ~ Pork Tenderloin, tomato salad and roasted beets.

If you like cookies - And who doesn't - these might fill the bill.

They are eggless, dairyless, there is no flour or sugar. And surprising really good.

3 mashed ripe bananas
1/2 cup applesauce
2 cups oats
1/2 cup almond milk
1/2 cup raisins
1 t vanilla
1 t cinnamon.

Mix all together and drop by spoonfuls on a greased cookie sheet. Bake at 350f or 15-20 minutes.

Morning ladies,

PIO ~ I hope you like them. I love them and bring them to work for my afternoon snack. I don't feel guilty that way - I LOVE cookies and these are almost good for you. :rotfl2:

We are to get more snow today, tomorrow and through the weekend. Right now it is really cold out, about 5 with a windchill of -15. We could really use the snow so we aren't complaining, it wouldn't do us any good anyway.

I got on the scale this morning and have lost 12 pounds. I am pretty excited. It has been 6 weeks since I started with my personal trainer. I will do my measurements tonight. I am anxious to see where this is at also. All I know is I feel SO much better and don't have the little aches and pains anymore.

WFDT ~ Baked Chicken breasts, steak fries and a green salad.

OH.MY.GOODNESS it is cold cold cold here this morning. My car said -8 when I left the house. I am so over this cold weather. I don't mind the snow, after all it is winter, but it does NOT have to be sub zero. We did get a pretty snow fall last night. Ethan had his Winter concert last night and as we left the school it was snowing. It was so pretty and fluffy. Today we are to get to 29 and that is to be the high for the week. Let's see only 29 days till Spring. I am almost afraid to say it though as we usually get our worst snow/blizzard storms in March or April. At least then it doesn't last and it is warmer.

WFDT ~ Meatloaf and baked potatoes. I put them all in the crockpot - we shall see how this works.

It's been a rather full 3D week so far this week. Lots of running around and full days at work. At least I'm occupied, right?


Tomorrow is the last day of summer in Oz. So looking forward to autumn.

Ellen - I was telling DH about that recipe tonight. We're going to try it at the weekend (I hope).
 
Steamed Bream, with Ginger and Chives



My starting ingredients:






  • 400 - 500 g of Sea Bream fillets
  • Ginger, finely sliced
  • Chives, sliced
  • 1 teaspoon oyster sauce
  • 1 tablespoon soy sauce



Place ginger and some chives at the bottom of the dish large enough to hold all the fish in a single layer.







Place the sea bream fillet in the dish and add more ginger over it.







Mix the soy and oyster sauce together. Reserve some more chives for placing on top of the fish.






Steam the fish in a covered wok (or covered steamer) for about 4 minutes.







After 4 minutes, pour the sauce over the fish and sprinkle the reserved chives.






Cover and steam for a further 2 - 3 minutes. Remove from the heat.









Serve with rice and some stir fry vegetables.

PIO ~ Your fish looks so good. I get so hungry for fish. As we are totally land locked, all we ever get is frozen. Once in awhile we can get fresh when we are in Lincoln, but then I have to get it home.

Kimmar ~ The meatloaf turned out perfect.

We are cold - really cold - once again this morning. But the sun is shining and the sky is beautiful blue. I think the sky is bluer in the winter. It looks amazing out, but it is only -9.

The meatloaf last night was wonderful. I will totally do this again. I had made 4 meatloafs and put them in the freezer. Yesterday I pulled one out plopped it in the crockpot with foil wrapped potatoes on top. Put it on low and when I got home last night it was perfect. So stinking easy and really good.

WFDT ~ Parmesan baked chicken breasts, boiled potatoes with a tomato and cucumber salad.

DBF has a coupon so we're having pizza. :)

Last night I made a slow cooker recipe: chicken, rice, and cream of chicken soup. You cook the chicken all day in 4.5 cups of water, shred it, put it back in the water, throw in two cups of rice and let that cook on high for about 30 minutes, then throw in the soup and mix thar up and let it cook for another 15.

It's so tasty, and goes great with some crisp raw veggies!
 
....last night's dinner was so awesome, that....wfdt? A repeat performance.....well, more or less....
