The What's for Dinner Thread- June 2012 (recipe index in OP)

Quick FLyby! safe travels Dean and Brandi!

I have been cooking very light meals, that can be used as leftovers. And we have eaten out quite a bit. Today I am making a quick chicken noodle soup, very plain, becasue Buddy is sick. He went to work but he sounds terrible.

PIO- dinner looked fabulous! But you certaily deserve such a lovely meal to recognize what you do!

I am going back to taking my tests, but will continue to check in!
 
Good Freezing morning!!!!!!!!!!!!!!!!! It is really cold here, and I do not like it!
I hope Dean and Brandi are off on their vacations and already having a wonderful time!

PIO- thank you for the well wishes on my test. I think I did well, and had Marisa check it for me. She is a tutor in the learning center, so I know if she looks it over and lets me hand it in, I should be okay.I spoke to the professor and made sure he knew I used every resource I could find, and he agreed that was his intention. He said the tests are designed to make sure you need to really go over the chapters in depth and use that information to complete the problems, and said I would have been able to take one in class. Nope....I could not have!

Marisa started on the one for Intermediate and said it is very difficult. Oh well. I'll begin later.

Dinner is at my sisters. Deb is home for two days and will not be back for the Holidays, so we are skipping school for dinner with Deb! Buddy will probal=bly stay home because he is still felling lousy.
 
Nancy - Glad that the test went well. How strange to have Marisa look over it! I'm not sure my ego could cope with DS checking my stuff! :rotfl2:

I'm not sure what we will have for dinner tonight. I'll have to see what's in the freezer.
 

I bought a box of lentil burger mix to try from the market the other day.

The instructions said to put some mix in the food processor with onion and herbs. Add some oil and water to form a paste.
I finally got round to trying it tonight. The flavours were amazing but the patty was not good. It just disintegrated when I tried to pan fry it. :(

Anyone have any ideas on how to make it work?
 
PIO- I have no idea, so I would probably turn it into a scramble. Whenever by burgers fall apart, that is how I "save" them ;).

I seem to be suffering from some sort of posting problem. I think I hit the "X" before I hit submit! Anyway, I am going to try again, and hope I get it right because I have lost several posts here lately.

First, I hope that everyone traveling is having a wonderful time. I am pretty jealous, I must admit. Buddy has been against taking a vacation because he was pretty nervous about his job. He can retire, but with the healthcare thing going on here, it is not a good idea. He is more optimistic about the company though, the general manager stepped down and the accountant stepped in. Things have greatly improved since then, so hopefully he will not worry so much and will release his "inner spender"

Last night was Pie Night and what a glorious night it was! We invite our neighbors and enjoy goodies. I ordered pizza becasue allpie all night was a dangerous thing!

Tonight I am in school and Buddy is at the farm so we are having leftover pizza. I expect to come home with another test and will be turning the one I just finished in. But today is the only class day!!!!!!!!!!!!!!!

Hi All! It's been just crazy around here, trying to get in before the twilight zone hits!

Brandi and Dean, I hope that you are enjoying your cruise, we'll hear from you when you get back!

PIO - You have been an updating machine! I'm surprised you have found time for dinner anywhere in there!

Us, we are driving to my folks house tomorrow in about five hours. The car is loaded and I just have to shut down my computer, pack the cooler and other food items, feed the cats and I think that's about it. It's the most "ready to go" we have been in years, but tomorrow is one heck of a travel day and we have a loooooong way to go. We'll see how it turns out!

Have a safe and wonderful trip, Alison. And my updates have been easy to do on the road trip component. I kept a journal and most of the "prose" comes from what I wrote on the road. Most of the time, the words were in my mind when I took some of the pictures. I had to stop every so often and take time out to write it down before I forgot. :rotfl:
 
Well I've had a couple days of wonderful dinners! We had traditional Turkey on Turkey day, turns out we had the exact same menu as my sister did at their house. Stuffed and happy we went to bed early. Isn't that how turkey day is supposed to go?

Yesterday we went out to a fabulous dinner out and tonight I have a giant Prime Rib in the oven. We saw Frozen at the matinee and today has been a great day. Just waiting for the roast to be done and we are making our leftover mashed potatoes from turkey day into potato cakes.

I mixed the mashed potatoes with sour cream, grated cheddar, chives and a beaten egg. Then I formed them into patties and now they're in the freezer. When the roast is resting, I'm going to fry them in bacon fat for our side dish. Mom has broccoli all ready to go. I'm going to have gained about 5 lbs this trip! :rotfl2:
 
Frozen doesn't start here until Boxing Day. :mad:


Alison - Glad you had a couple of great Turkey dinners. That mash spud side dish sounds great.


Today, I went to help a friend celebrate a birthday. She was putting on a BBQ/cookout for lunch. We got there at 1 pm and she was in total disarray. She still needed to make her salads and had 10 lbs of shrimp to shell. :faint: Guess who peeled the shrimp????
Lunch didn't happen til 3 pm. :sad1:

Now we're all too stuffed to eat dinner. At least I don't have to cook.
 
....wfdt? Turkey pot pie made with my leftovers.....omg - de-lish!
 
....actually, it was more like a shepherd's pie, since it was topped with leftover garlic mashed potatoes....
 
My dinner from Thursday night.

I made breaded Flathead tails (fish) and put some white potato and sweet potato in the oven (chips).


 
We just disembarked in Fort Lauderdale this morning after 14 Transatlantic from Barcelona on Celebrity Equinox
All I can say is "Amazing "
We have eaten some very fine food on board & once back home & have downloaded some pictures - I will post on here
We will visit Disney's Animal kingdom tomorrow & will take some food pics to post also.
We had our first Thanksgiving dinner onboard the ship
