So the Jambalaya keeps getting pushed forward.....

This morning we were watching an episode of The Culinary Adventures of Baron Ambrosia and they mentioned Barbacoa...that reminded me of the Barbacoa that I had in my freezer. It was one of those those Costco purchases, but I split it up and froze it. They had a recipe on the package for enchiladas. I made them the second night we had the Barbacoa and I made them again tonight. They were yummy!

DS13 had football practice until 5:45, then both boys had piano lessons from 6-7:30. We just stopped at our fav. place on the way home. :goodvibes
 
Hey everyone! Sorry, again, I've been MIA. I normally post here first thing in the morning and the past few weeks I have had so much going on and couldn't get on here. Anyway, tonight is dinner at church so no cooking for me!

ETA: I need some cooking advice/suggestions. This is a very long story so bear with me.

As you have been reading on Facebook, I have been learning how to play chess this summer. Scott works with a guy who's practically a grandmaster, it's scary how good he is. He is also the coach of the chess team at the local Montessori school. Scott mentioned to him while he was in Orlando (work trip I believe I mentioned, this guy went as well) and he said he'd be happy to teach me. In the meantime, I get an app, watch a few videos and learn the basic moves.

We get together the end of August with him at Panera to play and get some tips. I had chatted with him before this date while having lunch with Scott at work and such, so I got to know him a little better. Anyway, back to Panera. I had written out a very nice thank-you note for him and put a Panera card in it. He sat there with us for 2 hours, giving us help while we played, sharing tips, etc. He has the patience of an absolute saint and I was so thankful he took time out of his weekend for us. Here's where my request for advice comes in.

He and his family are vegetarian and really into healthy eating and eating whole foods(it's kind of funny, we run into him at Publix all the time). My BIGGEST way to thank someone is to make/bake them something. Knowing this, I had no idea what to do for him, so I went with the Panera card. We are getting together with him again this Saturday. Scott just texted me and said he'd talked to this guy and had asked if 2:00 was ok. I said sure. He told me the guy mentioned he might possibly be a few minutes late, he is coaching a soccer team beforehand. Oh. My. Word. I can not NOT do something kind for this guy. Shoot, after coaching a kids game, I would probably want to go home and put my pajamas on, lol.

I am racking my brain for a nice gesture. When I gave him the thank-you note he said, "Oh, this was not necessary. I do this kind of thing because I love it." But still, I really want to repay a kindness with a kindness. I thought about making him and his family (he has a wife and 2 kids, 11 and 8, by the way) something like homemade granola, but how do I do that without first having to ask if they eat honey, therefore giving away the idea I am making something for them. Know what I mean? He knows I cook, by the way, so I don't think he'd be scared of something that came from my house, lol.

Any suggestions? Thanks ahead of time!

ETA again: Not a coffee drinker, either. :(
 
Lindsay - Your idea of granola sounds perfect. You could substitute the honey with Apple Juice Concentrate.

But I checked up a vegetarian recipe book over here and found this recipe. I haven't tried it out so if you do, I'd love to know what you think.


Date and Oat Mountains

2 ripe bananas
1 grated apple
squeeze of lemon juice
1/2 cup chopped dates
1/2 cup water
1/2 cupe each sultanas and sesame seeds
1/2 cup cornmeal or pure cornflour
1 cup rolled oats
1/2 cup rice flour
pince of cinnamon


Mash the bananas in a bowl, combine with the grated apple and stir in the lemon juice.
Cook the dates in the water for about 5 minutes or until quite soft.
Combine with all the remaining ingredients, including the banana mixture and stir well.
Put spoonfuls on a lightly oiled baking tray and bake in a moderate oven (170 C) for 12 - 15 minutes.
Cover with a tea towel whilst cooling to prevent them drying out.
 
Last night I went out to eat with some people from here at the conference to some Italian Place in Winter Park, I had a great pizza, Prosciutto and Fig.... Yummy....
