The What's for Dinner Thread- June 2012 (recipe index in OP)

WFDT?


I 'cheated'. Found a new fishmonger and they had some housemade fish cakes. They had some that were made with Trevally and they added herbs, soy sauce, panko breadcrumbs and a touch of chilli. They also had some made from Salmon with herbs and breadcrumbs. Panfried them for about 3 minutes each side and served with broccolini, corn on the cob and sweet potato fries. I added some sweet chilli sauce on the side. YUM!
 
....I made the ground chicken/turkey [with s/p and garlic powder to taste] mixture into a slurry by adding a little bit of water and cooking it to 'ALMOST done':

...I know, I know - I kinda cheated, but I always make my own and, since it takes 45 minutes to cook, I used frozen, ready-made rice:

...meanwhile, I washed the peppers, and hollowed them out:

....giving the meat mixture a chance to cool off, I stuffed each pepper to the brim and sprinkled on some grated parmesan cheese:

...they were simmered in marinara sauce for about 90 minutes. I added some shredded mozzarella cheese to the top of each pepper and covered the pot for an additional 10 minutes to melt the cheese:

Morning all!!

Kimmar ~ Wow, your peppers look amazing. I have never tried to make them on the stove top. I always put them in the oven (My Momma always did so I do to) I like your idea better, especially in the summer. I hate turning my oven on.

halleous ~ I completely understand. I could eat 2 meals a day and be happy.
Don't ya just love it when the Mr. cooks. I know I do!!

When I got up this morning I went out in the Kitchen and there was Doug sitting in my chair. He was not a happy camper - our living room TV quit working. He had gotten up and let Cooper up and he heard a loud pop and sure enough the lamp had blown. Turned it off and tried turning it back on - nope nothing. DAMN!!! He looked at me and said, "I was going to buy you flower for our Anniversary tomorrow, I guess you get a new TV." I have been after him for months that I wanted a new one. This one we have had for over 10 years. I want a new one!! Guess I got my wish.

We are suppose to get 3 - 5" of snow today. It is already raining and by afternoon it is to turn to snow. The good thing about snow this time of year is we know it won't turn to ice and be around for a long time. It is suppose to be in the upper 50's on Saturday. Which is a good thing because we are going to the Horse Races. Then on Sunday is Lilly's 2nd birthday (where did that time go) and the kids have over 25 people coming.

We are going to just enjoy being away from here, and hopefully there will be sunshine everyday!

I know I'm really lucky as he finishes work earlier than me most days so Mon to Fri he cooks however today I'm off so have been cooking...

It's the end of the school term and it's school holidays for the next two weeks here. The year is really running fast so far.

WFDT? I had take-away noodles for dinner. Home alone; as the boys were at swim school.

Good morning all.

I am not sure if you all know but my DH has a real family history of not doing well under the anesthesia, he has had trouble coming out from under, and his Grand Father died from it. Today David has to be put under for a procedure, I am asking you all to keep him in your prayers today as we head to the surgery center.

Well we have a pretty new TV. But I have to tell you all my story. I got on line and found a 55" within our budget and Doug and I were texting back and forth and he thought it was a good deal. Then about 10am he comes into my office with the lamp from the old one. He wanted to see if I could find it and how much it was. I could have throttled him..........I don't want to fix this dinosaur I want a new one. But I got online and found the part and it was only $69.99 - Double damn!! So we talked and talked, even Pastor Dyton got in on the conversation. I relented and said fine (but a real pouty fine) so I started ordering it and when I got to the part that it was going to take 10 days to get here (remember I live in the middle of nowhere) the look on Doug's face was priceless. I think he finally realized he was going to be without tv for that long unless he wanted to sit in the kitchen and try to see my 18" or in bed. That was all it took -he said no and went and got the new one we wanted and had it up and running when I got home. Such a good DH!!

Busy and fun weekend - Horse Races tomorrow and Lilly's 2nd birthday on Sunday.

WFDT ~ The kids are taking us out tonight. We are going to Skeeter Barns a really good BBQ place. I can't wait!

We are having dinner tonight out at the steakhouse at the Disneyland Hotel. It's a special wine dinner with Kurt Russell' s winery and he's supposed to be there. :love: Also it's another chance for a DISmeet with jedijill who has been in town at DLR all week.

No special plans for this school holidays. DS learns 2 musical instruments under the Suzuki method. They hold their autumn festival at this time of year so we are booked in for 4 days worth of music program and enrichment.
