Did you mean Pork Lo Mein? If so when I have made it, I usually followed Lo Mein directions on the package of noodles. Not much help but it worked. Good luck.

WFD tonight..i am not sure because we have to run down and meet the wedding coordinator at the Westin tonight to talk wedding stuff :) whee!
BUT last night I made a very yummy dish...thai chicken lettuce cups..SOOO good..it is a Hungry Girl/ Weight Watcher recipe ...

Ingredients:
3 leaves romaine, butter, or green leaf lettuce
3 oz. raw boneless skinless lean chicken breast, cubed
3/4 cup peeled and diced cucumber
2 scallions, cut into 1/2-inch pieces
2 tbsp. shredded carrot
1 1/2 tbsp. Thai peanut salad dressing or sauce (low in fat with about 35 calories per tbsp., like the one by Litehouse)
2 tbsp. seasoned rice vinegar
1 tbsp. chopped cilantro leaves
1/8 tsp. garlic powder
Dash red pepper flakes, or more to taste
Optional garnishes: lime wedges, sesame seeds

Directions:
In a medium bowl, combine cucumber, scallions, carrot shreds, rice vinegar, cilantro, and red pepper flakes. Mix well and refrigerate until you're ready to assemble your cups.

Bring a pan misted with nonstick spray to medium-high heat on the stove. Add chicken and sprinkle with garlic powder. Cook chicken, stirring occasionally, until cooked through, about 4 minutes.

Place chicken and peanut dressing or sauce in a bowl and toss to coat. Remove veggie mixture from the fridge.

To assemble, evenly distribute the veggie mixture and the chicken among the lettuce "cups." If you like, finish with a squirt of lime juice and/or a sprinkle of sesame seeds. Chomp chomp!

MAKES 1 SERVING
SO GOOD..the only changes i made were adding water chestnuts instead of cukes and I also added some chow mein noodles on top for extra crunch! Oh i also omitted the cilantro..not a big fan ;)

Not sure what I will have for dinner tonight, I have class. I was going to make a pork stir fry but really don't have the time so I will make that tomorrow night. That way I can marinate the meat.

I got distracted while trying to post this, so I apologize for missing things. This day has kind of slipped away on me. I don't even know what is for dinner yet. I better go figure that out!
 
Good Morning, Not sure about dinner...Andrew has a friend coming over, practice and then supposed to go to a sleepover. Maybe pasta with meat sauce or sloppy joe's and tossed salad.

Morning all! Think Indian food for dinner tonight, tikka masala, naan and veggies. Will have to think of something else for the kids. Hope everyone has a good hump day!:goodvibes
 
Last night I just made our favorite sandwich-the pan bagnat--very similar to what I made last week. It has tomatoes, roasted peppers, basil, olives, fresh mozzarella, olive oil, balsamic vinegar, and shallots. I also made some potato chips--I sliced them on my mandolin and cooked them in olive oil.

Tonight I HAVE to use that chicken I thawed out. Not sure what I am doing with it yet.

I just had a crappy phone call.

One of my best friends just called to tell me his wife had a miscarriage last month.

Dan is just so kind,warm and loving and to hear the pain in his voice today just breaks my heart.

I hate my friends hurting...:sad1:

Dinner tonight is chicken something. I have it thawing but I don;t know what I want to do with it. I think I am still feeling the no cooking thing
 
Scotlass -- I am sorry about your friend.

I'm not sure what to do about dinner tonight. Caili has skating, and then we have to go to the school art show because both Liam and Caili have something in it. I might just give them sandwiches to eat in the car and I'll eat when we get home. Last night I made mutter paneer. It was good.
 
Scotlass, sorry to hear about your friend. I had a good friend go through the same thing in November. It is very hard. Sending prayers to them.

Hope everyone had a great Easter, my internet has been out for days. Now it's up and running so I'm back to bother you.
Last night for a quick dinner we had turkey pesto parmesan burgers from Trader Joe's and tonight some kind of chicken.

Today is a crazy day - 2 meetings down, 2 to go with church squished in the middle :laughing:

I am eating whatever I get my hands on tonight; DH is driving through Taco Bell, last I heard.
