Don't know if you remember but last year this time my cousin was killed in a motorcycle accident in Florida.......As you can imagine my Aunt (his Mom) is having a very tough time. Tomorrow she is getting a very special present from the Easter bunny, an 8 week old "hot dog" named Angel so she'll have some special company.
She loves dogs but hasn't had one because she used to spend 1/2 the year in Florida, now that my cousin is gone the Florida house is going to be sold.
Can't wait to see the puppy:love:

I've been wanting to go to Pei Wei - there is one a few minutes from where we live. I've actually gone into the restaurant but was discombobulated about what to order, so I left before getting in the line. :crazy: Any recommendations about what to order - what are your favs?

I like the Lo Mein and the spring rolls, but my most fav thing is the chocolate chip cookie. :rotfl: My sister really loves their salads.


Well we decided on making dinner tomorrow. So we are having the ham, baked potatoes instead of mac and cheese, rolls, eggs, asparagus, corn on the cob and Chocolate Ugly Cake, cantalope, strawberries and a cream cheese/sour cream dip.

*whew* I'm tired.

I made the baked pasta with basil, deviled eggs, and boursin creamed spinach and stuck it all in the fridge. Will make tomorrow much easier, though!
 
Here are some of the cupcakes, some of the icing I tinted light pink & yellow but it doesn't show up. The cupcakes with the single chocolate circle are red velvet.

Hi, everyone.

Well, our trip to Nashville turned out to be an interesting one. We got up there and made pretty good time. We got lost trying to find Dewitt, but we eventually caught up to each other. He had bad news though. On Thursday they did another bone marrow biopsy and the results showed that the chemo had done nothing and she was going to have to have another round.

We then got to her room. She looked fine, just tired. She's been having nosebleeds and was having to contend with that. We stayed awhile and Scott and I ran down to get some lunch. Man, you want to talk about a Mac Daddy hospital? It's Vanderbilt!

Anyway, we went back up and Scott's childhood friend Amanda (now my good friend, too!) was there. She lives in Nashville, too. I think I've mentioned her. Anyway, she's been doing what she can for them up there. Jan was fighting to stay awake, so all of us went and had some coffee so she could rest. We left an hour or so later because she had to go for an ECHO and was looking pooped. She had really fought to stay awake when Kevin visited to the point they had to give her something to make her sleep.

While we went for coffee, Nashville and Murfreesboro were under a tornado warning. Talk about nerve racking! But that coffee probably saved us. On our way home, we got caught in bumper-to-bumper traffic. The holdup? The DOT clearing the road. The 'Boro tornado went right along the interstate. we saw many uprooted trees, a rig turned on it's side, and a house without a roof. It was scary!
 
Maria, I am so impressed with those eggs!! They are so cool looking. Nice job decorating the cupcakes too!

Glad to see your home safe Lindsay I heard about the tornado and thought of you and prayed you were ok. Sorry for the bad report of Jan.
 
Lindsay Isn't it funny how it is a little seemingly unexpected delay that shows you how God works? Glad you and Scott are ok. Sorry that Jan is having to go throught this again.:hug:

I tried to make Easter as simple as I could since I have to fly to Sacramento this evening for work.

Kids baskets were done last night. We are having a brunch today with spiral ham, hashbrown casserole, green beans, and asparagus. We also hard boiled eggs and decorated them. After we eat we will hunt for eggs. DH will drop me off at the airport and spend the evening with his family.

I made the drunk dawgs, I think posted in this thread somewhere?, along with deviled eggs and leftover "boursin" cheese and pumpernickel bread as appetizers. Those were all ready when we got home to keep the troops happy. I really liked those drunk dawgs!

We grilled the filets using this method:

Porcini Crusted Filet
• 3/4 cup (1 1/2 sticks) butter, room temperature
• 3 tablespoons chopped fresh chives
• 1 1/2 tablespoons chopped fresh tarragon
• 1 small garlic clove, pressed
• 1 (1/2-ounce) package dried porcini mushrooms*
• 6 1-inch-thick filet mignon steaks
• *Available in the produce section of many supermarkets and at specialty foods stores and Italian markets.

Preparation
Mix first 4 ingredients in small bowl for herb butter. Season butter to taste with salt and pepper. Process dried porcini mushrooms in spice grinder to fine powder. Transfer powder to plate. Sprinkle steaks with salt and pepper. Press steaks into porcini powder to coat both sides well.
Melt 2 tablespoons herb butter in heavy large nonstick skillet over medium heat. Add steaks to skillet and cook to desired doneness, about 6 minutes per side for medium-rare. Transfer steaks to plates. Spoon rounded tablespoon of herb butter atop each steak and serve.


YUMMY! The pasta, asparagus, and spinach was all delicious but the winner was the boursin creamed spinach - my steak loving brother even stopped eating his filet so he could save room for an extra helping of spinach.

Two of the three boys are now snoozing and no one has room for dessert yet. I really want to take a nap but am trying to stay awake. We have TONS of leftovers. I always seem to make too much :confused3

Lindsay -- When I read the paper this morning, I was hoping you avoided the horrible weather. I am glad to hear you are safe. I'm sorry Jan has to go through more chemo.

We had a nice day here. The kids got up at 6 (ugh) to find out what the Easter Bunny had left them. They were both excited about their treats and little presents (our Easter Bunny doesn't leave very much candy. He does leave Caili a new stuffed bunny every year, and she loved this year's version.) We went to my parents' house mid-morning, and the Easter Bunny had hidden eggs all over their house. The kids had a lot of fun finding those...except there is still one missing. Good thing they are plastic eggs and not hard-boiled ones! For dinner, my mom made roast beef, roasted potatoes, gravy, spinach gratin and roasted butternut squash. It was all good, and it was all hot!

:scared1: Wow that is incredible! You'll never look at coffee the same way again!

Just checking in; I'm still down in New Orleans. (Well, Metairie to be technical.) The weather here is ugly today but I'm filing that in the "out of my control" category so we are just hanging out inside. I'm hoping it's not too violent.

It's been a good trip so far. I go back to NYC on Tuesday. I'm about 10-12 pages behind on this thread so I think I'll just jump in and move forward.

For the first time ever my ham came out extremely DRY. I always cook my hams the same way so I can only say it must be the brand.....Paula Deen, sorry I'm never buying Smithfields's again.:mad:
