The What's For Dinner Thread - Feb '09(recipe index in OP)

We talked to FIL last night (hey, if I just call them Jan and Dewitt, can you guys follow easier? I feel hideous using acronyms to identify them!). Anyway, they now have a plan.

Happy to hear they have a good plan. Jan & Dewitt work better on my prayer list than MIL & FIL.:goodvibes

Oh, Schmoopy (One of many nicknames for Tee Tom, aka hambone, chumbawumba) let me sleep until the sun came up. He woke up about 4:30ish and I took him into bed where he fell asleep until about 8!!! :yay:

Such adorable nicknames, so glad you got a good night's sleep. I finally got one myself, the previous two nights we had some pretty bad storms.

WFD - Bacon wrapped grilled shrimp with chipotle bbq sauce, this bbq sauce is addicting, pasta salad and charred corn relish, which I've been addicted to.:laughing:

Would you all believe I KEEP FINDING more paper to go through? :faint:

morning everyone, I'm almost done muddling through my paperwork.

Becky- I think it will be warm enough to grill, but I don't know if it will be dry enough!

Lauren- I'm used to being home alone all day, so my cat and dog have a pretty big collection of nicknames. Sometimes I forget when I'm not alone and I get odd looks. I have about 20 pounds to lose, but since I'm really short it really shows. I refuse to by new clothes because I got lazy over the summer, so I better get a move on it. I'll be using my eliptical, have fun on your treadmill.

Linsay- I'm glad there's a plan, since she'll be there for a while maybe you could get her a good pillow. I'm not joking at all, hospital pillows are worse than hotel pillows. I spent enough time there with my husband I started to get the employee discount at the cafeteria. You did say she might be isolated, so I don't know if a pillow would work. I know it sounds silly, but anything to make her feel more at home.

Tomorrow is hamburger day, we have them on sundays in the spring and summer. Don't know what's for dinner tonight, but I'm done stalling and off to work on a cover letter.
 

No luck tonight but it was fun. My appetizers were good. I cut the recipe in half, this makes 60.

Baked Artichoke Squares

2 cans (8 oz each) Pillsbury® refrigerated crescent dinner rolls or 2 cans (8 oz each) Pillsbury® Crescent Recipe Creations™ refrigerated flaky dough sheet
1 can (14 oz) Progresso® artichoke hearts, drained, chopped
1 box (9 oz) Green Giant® frozen chopped spinach, thawed, squeezed to drain
3/4 cup grated Parmesan cheese
2/3 cup mayonnaise
2/3 cup sour cream
1/8 teaspoon garlic powder

1. Heat oven to 375°F.
2. If using crescent rolls: Unroll both cans of dough; separate into 4 long rectangles. Place crosswise in ungreased 15x10x1-inch pan; press over bottom and 1 inch up sides to form crust. Press perforations to seal. If using dough sheets: Unroll both cans of dough; cut into 4 long rectangles. Place crosswise in ungreased 15x10x1-inch pan; press over bottom and 1 inch up sides to form crust.
3. Bake 10 to 12 minutes or until light golden brown.
4. Meanwhile, in medium bowl, stir remaining ingredients until well blended. Spread mixture evenly over partially baked crust.
5. Bake 8 to 10 minutes longer or until topping is hot. Cut into 1 1/2-inch squares. Serve warm.

Yummo! That's exactly the same topping I smeared over chicken breasts earlier this week. I love it! Keeping this recipe for when I need some appy's to take somewhere!
 
Scotlass - We are a family here, and what's family for if not to help you through those times you don't feel well. We don't want you to leave!!!

Lindsay - Sounds like a good plan is in motion. You might want to mention to Jan and Dewitt that dark purple grape juice helps with the nausea. When my aunt underwent chemo for breast cancer, the nurse told her to drink an 8 oz glass of dark purple grape juice before the treatment to keep the nausea at bay. Have Jan check with her medical team and see if that's something she can do.

Lauren - I'm so jealous!!! Timothy really had a bad night last night. He was up every hour! So annoying! I'm hoping I can convince Alan to take all the kids out somewhere so I can get a nap later.

Thai food was fabulous last night!!! We went to Thai Village and it was incredible! I had pumpkin curry, and Alan had a dish called 3 brothers. It had chicken, pork, and shrimp in a mild Thai sauce with veggies. So yummy! It was so reasonable priced, too. Both of us ate for under 25 dollars! Then we went to a specialty dessert store for cupcakes. Yummy! It was a great night. I'm speculating, however, that Timothy didn't like the spice from the Thai food!

Not sure wfd tonight. Something quick and easy. Most likely a mac and cheese casserole.

Glynis IF I had known that Timothy would have such a difficult night I would have taken him. I was up just as often :confused3. I heard every noise last night. Needless to say I feel very hungover without the drinks to make up for it.:rolleyes1

I'm taking a small break from cleaning then I need to return.

I have not decided on dinner yet. I have to see how much energy I can scrape up. It is cold and windy they said something about snow later:scared1: I hope it doesn't.

Cute nicknames...I love chumbawumba. I am glad you got some sleep!

Glynis -- Too bad Timothy was not as cooperative. I hope you were able to get your nap in.

Lindsay -- It sounds like things are moving in the right direction with Jan's care. It is nice that you have someone close by to visit her. I like Robin's idea of a good pillow. That really does make such a difference.

I am making spaghetti and meatballs for dinner.
 
My menu is going to be jamaican jerked shrimp, whipped curried sweet potatoes, grilled molasses bananas, summer squash/zucchini saute with sun dried tomatoes and basil, and sweet and sour red cabbage. I wish John would get home, I am starving!

Can someone pm me instructions on how to add a picture to your signature? I am having a brain blip and can't remember how to do it.

Good afternoon!

I went out last night with some girlfriends and didn't get home until late so I had HOPED to sleep late but Ace-the-foster had to potty at 5am, and then Lucy-the-Schnauzer decided 930 was a good time to get up. So we moved to the living room couch, they all piled on me, and we slept until almost 2pm :eek:

My goal today is to not leave the house. It's COLD outside and I spent too much at Ulta yesterday so I'm staying put.

I've just about finished off the leftovers in the house so I may have to run to Mickey D's for dinner (and youknowwhatelse) :rolleyes1
 
Can y'all help me with Easter lunch?

I will be leaving the church around 1230 or 1. I wanted to do a beef tenderloin but the instructions I found online have it cooking for 1 hour+. It can't be done ahead of time, can it? And not lose flavor? Should I have some appetizers prepared and have lunch around 3pm instead? That's what we did growing up :confused3

I'm leaning towards that. It'll just be me, DH, my dad and my brother. They plan to hang out the whole day and watch a movie or two.

If I did that, what appetizers can I have ready for snacking almost immediately? All I can think of is deviled eggs :laughing:

What sides would you make with beef tenderloin? I was leaning towards a potato casserole of some sort but wonder if I should do a mac and cheese instead. Or both? Can you do two starches?

A veggie tray would be nice. Also, some fruit. You could make a crock pot of meatballs in sauce, or cocktail weenies, etc. You could make some dips, and just heat them up in the oven when you get home. Deviled eggs are a must for Easter!

As for sides, what about a potato gratin? That would be yummy! Maybe some asparagus.

If I did some veggies & fruit with dip, deviled eggs, and some weenies in the crockpot that would probably hold them over for an hour or two... esp since I expect them to be helping me with cooking some :lmao: DH requested queso - um, not exactly Eastery but he thinks anytime there is a holiday, Velveeta/Rotel dip should be included :confused3

I was thinking asparagus too. I don't think I've made potato gratin. Is it like a scalloped potato casserole?

Aimee- My sister is near Fort Worth and I hear she is freezing! We had a nice day....go figure?

I would not cook the meat ahead of time, that is an expensive cut so I would not chance it. Fruit and veggies are always good but that appetizer that Marilyn made sounds like to could be made ahead and it sure did make me hungry!

For sides I like steamed Haricots Vertes from Costco. Then I add some grape or cherry tomatoes and toss with Italian dressing. It is very good. Also Sugar peas or English peas with butter and mint are nice for Easter and they are fast to cook.

I picked up a rotiserie chicken at Costco today and made a salad. I'll cook a veggie adn call it dinner if Buddy ever gets in. He and Daniel ar admiring an old (I mean ancient) boat at the neighbors house. He started it up and the smoke was all over th neighborhood :scared::scared:

Tomorrow our neighbors are coming over to play cards. She is bringing a lasagna and it is to die for! I will make a salad and some sort of casserole for Marisa.

Went to Panera for lunch/dinner today. Was supposed to be lunch but by the time we got there it was almost 6. I used to love the place, but I think this location is going downhill or I'm just having bad luck with it. :confused3 The panini was good but the soup not so much. At this rate, at least I won't miss it much when I move! :rotfl:

scalloped potato and gratin are essentially the same thing, in my book.
 
bigmerle--those appy's sound yummo! Like spinach dip in phyllo.

The crust was really flaky. I was worried because crescent rolls will get burned tasting really easily and this had to bake so long. But they turned out really good and everyone loved them.

I suppose I should go take my shower, Laura and the kids will be here soon. We are making roasted chicken, mashed potatoes, gravy, brussel sprouts, carrots, and spinach for linner today.
