The What's For Dinner Thread - Feb '09(recipe index in OP)

Good Morning!

Sorry to worry everyone. I wound up going back to sleep yesterday morning and it threw me off so I did not get a chance to get on yesterday. Kathy, Thank you for calling...Maria, I didn't see the text. I am sorry I did not respond.

Dinner last night was Chinese food delivered. Not sure about tonight...I did parboil some chicken breast so maybe Bisquick chicken pot pie. Andrew has baseball practice tonight so it has to be quick.

Kat, Glad you heard from Wendie. Wendie, we all miss you. Come back soon. I pray that everything falls in place soon. How is Kyle feeling today?

Sheryl, Love the pics of Alexis baking!

Glynis, Timothy is getting so big. What a cutie!

Happy Birthday Alan!!!

Ann, Very nice suit!

Lindsay, I think you are thinking too much into the FB invite. They are probably just really excited and like others have said, anything goes nowadays. I would just respond to the invite and then also to the paper invite and be done with it. Don't stress. I do alot of things people do not agree with but I do them anyway. You can't please everyone. If you do not want to wear the shirt and flips, just wear whatever in beachy summer attire.

Thank you all for your continued thoughts and prayers for Charles. He wound up back in the hospital on Monday for a blood clot. He continues to be in alot of pain and his spirits are not as up as they were so he wanted to go home so they did let him go on Tuesday. I have yet to see him and hope to get there in the next couple days. He is not sleeping so he is exhausted.

We are all good. The baby has been wonderful. We took him out for a walk to the bus stop yesterday. It was nice. My incision is getting betting. It was not infected the other day...it is just not aligning right so the scar may be a bit bigger than normal. I really do not care since I will always have a little belly and won't see it. The doc did say it was not from over doing it...sometimes this just happens.

I hope everyone is well. Sorry if I missed something.

party: Happy Birthday Alan!!!party:

Today I have to go return DS's new sneakers. I noticed the tongue is defective and they are leaving a mark on his little XW feet. Then I have an afternoon appointment to have my teeth cleaned. DS is going to visit with Grammy and Papa while I am at the dentist.

WFD- Pork Schnitzel with mushroom gravy, rice, and some kinda veg.(maybe carrots or peas w/ pearl onions)

Morning everyone.

Lauren- My thoughts are with you and your family. I wouldn't worry about a little scar either, it's like a battle wound you earned. If your having the same grey weather we are having, chicken pot pie sounds perfect.

Kathy- I just picked up some sweet potato fries from Trader Joe's, they are becoming an addiction.

Laura and Maria- Thanks for the book suggestions. Laura, the Allison Weir book would take me forever to get to, I started in the "A's" in the library and am just working my way along the shelves. I think I'm in "G", I don't really look at name, just see if it sounds interesting. I love our little library and there are plans to remodel it, I hope it doesn't mess up my system.

Glynis- What wonderful pictures, thanks for sharing them with us. I love your napkin holder, just the perfect touch of Disney.

We are having leftovers for dinner tonight, there's enough variety everyone should be happy. For breakfast I just had some steel cut oats. I had never had them before, but I loved them. I don't think I will eat regular oats again.

Glynis, Timothy is adorable! He has gotten so big!

I also hope Wendie comes back.

I had a bunch of other stuff to say but forgot it all! I should have multi quoted.

I went with the healthy option last night and made a cod and mussel stew. It was very tasty.

Dinner tonight is going to be marinated flank steak for John, along with peppers and onions. I may make myself a chicken sausage, or else just have some vegetables. I'm also making mashed cauliflower and an arugula salad.

Great pics. Its nice to put faces to names!

Last nights dinner was Shepards Pie. It was a recipe on the back of a box of mashed potatoes and everyone gave it two thumbs up. Not sure yet about tonight but I informed my family that I am on a mission to avoid eating out for the rest of the month. They initially all agreed heartily until last night when my oldest DS jokingly asked himself why he agreed to that. Its just so easy for us to give in and grab something quick.

Glynis--thanks for sharing the pics! Your little one is just adorable! Happy Birthday to Alan as well

Wendie--Wish you would come back! Miss you!

Lauren--glad to hear that the incision wasn't infected. Lots of hugs and prayers going out to your brother and to the whole family.

Last night's indian food was yummo! The naan especially, love me some carbs! Not sure about tonight. It's my mom's turn again and Emma has soccer practice, so it will be quick. I think there are some fish sticks and fries in the freezer. Kid friendly and fast. I'll just pick a sandwich up on the way to work. Time to get the kids to school!

I am just worried already and they are not even engaged, you know that there will be something said no matter what they decide and Donny has waited a long time for someone so special in his life so I don't want them hurt.

Anyone who says anything is rude and doesn't deserve your attention. When the time comes, you can talk to Donny and mention your preferences for the wedding. He may not take your suggestions, but I am sure he will take your feelings into consideration.

I honestly don't know what I'm going to say if they ask me why I haven't responded on Facebook. Any thoughts?

I would just say that you thought it was intended as a Save the Date invitation, and you thought you were supposed to respond when the paper invitation arrived.

Laura, the Allison Weir book would take me forever to get to, I started in the "A's" in the library and am just working my way along the shelves.
 Well, when you get there, it is worth the read. I do like your method though. My reading material all comes from Becky.

I'm also making mashed cauliflower

What do you put in yours?

I have a chicken that has been sitting in a salt brine for a couple days, so I am roasting that. Sides are spinach, cauliflower (maybe mashed), and turnips.

Morning Y'all,

Kathy thanks for checking in & taking care of all of us!

I'm feel so bad for Wendie & will be praying for her. I will send her a pm letting her know how much we care & miss her!:grouphug:

Gretchen, Have Fun!!!

Lauren, I'm glad the dr said that you aren't overdoing it. Don't know if I believe that or not. :rolleyes1 ;) I'm glad T is doing well. Prayers are ongoing for Charles!

Glynis, Your St Patty's day dinner looked fabulous!!:thumbsup2 That baby is so darn precious!! I love that picture of him in his green, all smiles! I can't believe how he's turning over already. You may have your hands full with this one! Happy Birthday to Alan!!! I hope the family enjoys the day!

Okay Becky! You are really starting to make me jealous of your East Coast Seafood!! :lmao: That looks sooo delicious!! If we ever manage a trip up your way, will you please feed me!! ;) :goodvibes

I've got to get a move on here. Mom & DD are going by for lunch & then baking those pies. I also promised my Mom a Soda bread, so I need to that first & fix something nice for lunch. And get my kitchen cleaned up enough for 3 women to work in it! Better get on with it!

Robin, Do the steel cut oats really taste that different? I usually buy regular or quick oats(not instant). DH eats oatmeal every single weekday, he has for years. Although this morning he had to get out of here early & was more than happy to take a large hunk of Glynis's Soda bread with him!

Nancy, I agree with Laura. Some people just need to make themselves feel superior to others & they just make themselves look small. Don't spend your time worrying about those kinds of people!
Hope I didn't miss anyone, Y'all have a great day!

What do you put in yours?.

Same as mashed potatoes--butter, milk (not nearly as much of either as for potatoes), sometimes a little cream cheese or parmesean cheese, salt, and pepper. It does not taste as good as mashed poatoes but it is nice and light--kind of fluffy. I have not really been wanting potatoes recently. Except for french fries!

It does taste good with roasted chicken.

Sheryl- They taste a little different, but it's more of a difference in texture. They feel like your eating grits, but with fiber! The ones I got also had ground flax seed and dried egg whites. I don't know if they all come like that, but I was at BJ's and they were 2 dollars so I thought they were worth a try. The directions said to make with water, regular oats I use milk, and I didn't miss the milk at all. I added a small pinch of salt, some dried cranberries and cinnamon when I was done. These will be a staple in the house.

I have been following this thread for along time but I don't post.Tonight I am making the delicious looking Stuffed Chicken Florentine from Shovan. It looks so good I had to try it and my husband has been losing weight so I have been cooking healthier for all of us-I am running out of ideas for chicken already(I don't eat fish).I wanted to say thanks for the great recipes!:thumbsup2

I'm flattered! Let me know how it turns out and come back just to chat! As you can tell we are a chatty bunch!

Robin, Thanks! What is the brand name on those oats?

Ladies, I forgot to tell y'all, they didn't find anything in DD's MRI of her neck. (Well nothing that needs surgery now.) So she is going to have the surgery on the disc in the lower back. Scheduled April 3rd, one day surgery with about 2 weeks recovery. So that sounds pretty good. She might as well get it overwith while she still has the same insurance coverage & isn't working.

I meant to say earlier:

Lauren -- I am glad all is well with you. Take it easy and enjoy that baby.

Have fun Gretchen!

Thanks, Beck...I'll make those if I can resist the urge to make mashed potatoes. My brain is saying, "No mashed potatoes with roast chicken??" :confused3

ETA: That's good news Sheryl!

How is Kyle feeling today?

He's already feeling much better, thanks for asking!:goodvibes

Kathy- I just picked up some sweet potato fries from Trader Joe's, they are becoming an addiction.

I know.......:rolleyes1

That's good!

Not sure what is for dinner tonight, didn't take anything out as usual and really don't know what I'm in the mood for.

Made a really good tuna melt sandwhich for lunch today and the toaster oven in the office kitchen is not working. :headache: Looks like the electrical outlet is the problem because the micowave stopped working too. The sandwich just isn't as good without the cheese melty and the bread toasty.

Wonderful news!

Dinner will probably be smothered chicken and barley but I am still not sure. Buddy's cousin is coming over this afternoon but I hope to get dinner done anyway. If not I have plenty of food in the refrigerator.

Sounds promising :flower3:

I am making salmon croquettes tonight (is that how you spell it?) with zucchini/squash on the side and maybe some leftover quinoa.

The boy loves Shepards pie.....which is handy because its one of the very few things I can make !!

Welcome!

Maybe I'll make something with canned beef tonight, stroganoff or my own version of Shepard's Pie. :)

Sheryl - what wonderful news for your DD! This does seem to be the best time for the surgery!

Poodrmr - Welcome to our group! Stick around and join in the family fun! We love to chat, and occasionally we share recipes:rotfl: . Actually, everything I've tried from these ladies has received thumbs up from my family, so you are definitely in the right place.

Well, the pound cake was so yummy! The recipe called for lemon extract, but I didn't have any, so I used orange instead, and it was so good!!! Kind of tasted like a creamsicle! I let Katie do most of the mixing, measuring, etc., and that was her present to her daddy. The rest of us went in together and got him "lightsaber duels" for the Wii. He loved it all! Good news is that there's enough pound cake left over for after school snacks for the kids. The instructions said to start the cake in a non-preheated oven, and not to peek at it the entire hour and a half that it baked. It was so hard not to look as it smelled so heavenly, but it really worked! It was the most dense pound cake I've ever made!

Dinner tonight will be cider glazed chicken with berries. A new recipe, so stay tuned to see if it's any good.

I'm off to finish up the shopping for the twins party on Saturday, and then I need to sit down and make 11 chef hats. Wish me luck!

Thanks for all the comments on the baby! Now that I've got the charger back, I've gone a bit picture crazy, so you may be seeing a whole lot more. Let me know if I bore you!
