The What's For Dinner Thread - Feb '09(recipe index in OP)

Peggy, I am so sorry about the loss of your pet. :hug: I have lost two in the past year and still feel the void that their absence has left. Please know that you are in my thoughts today.

Aimee- I am thinking about an Easter brunch. I'll let you know some of my menu as soon as I can pin it down myself ;)

Merle- I love Shepard's pie, it seems we all had that comfort dish this week.

Glynis- I also would like the pound cake recipe if you do no mind.

Bethany- how is the apartment/job search going?

Ladies- all this talk about bikini bellies :lmao::lmao:Let's just leave it with I have not worn a bikini in many many years and I will not be wearing on ein the future :rotfl2::rotfl2:

Dinner will be something very easy. If Big Y still has their grinders on sale I'll pick one up for Buddy. I will probably have eggs.
 
Morning everyone, happy spring! It's cold here.

Sheryl- The oats are "Earth born products." I've never heard of them, but up until this week our oats only said quaker. We now have 3 types of oats in our house. Old fashioned for granola, minute for granola bars, and now the steel cut. I have a very exciting life, don't I.

Aimee- The only thing I'm making for easter is a boursin creamed spinach. Our families are small and we all live near each other, except my brother. Instead of picking which set of parents house to go to, we all go to the same house. My house for thanksgiving, my outlaws for christmas, and my parents for easter.

Bethany- We had conferences this week too, but I just had to go and listen how wonderful my child is. Not a bad day. My mom taught elementary school, conferences were not here favorite time of year.

Merle- My shephards pie is different everytime. It's basically some type of ground meat with potatoes on top. I have to ask, what's beef in a can?

Lucas- I'm sorry about your dog, I hope you are soon able to have happy tears remembering the good times together.

Laura- I was dreading the colonial fair the 3rd grade does, it involves full costumes. I guess there was enough complaining about it because this year they didn't need them. I'd rather make a donation to the school for field trips or something then spend the money on a costume for a few hours.

I think it's leftovers for dinner again tonight, we had more than I thought.

We're getting take-out seafood of some kind tonight.:goodvibes

I heard from Wendie and she asked that I ask y'all for prayers, here's a bit of what's going on:

"My father is going in for surgery around 3:30 this afternoon, it will take between 2-4 hours depending on what they find once they get in there. It is cancer of the colon for sure. The cat scan shows that his liver and other organs are ok. It might be into his lymph nodes, but his oncologist feels like radiation will take care of that if need be.
The surgeon will be removing between 2-4 feet of his colon, he will have at least a temporary bag, possibly permanent.
We will have more answers and know where things are at after they get in there.
I guess the tumor is at the site he had radiation from his prostate cancer.
This is all quite new and confusing to us as my father is the only person in our family to ever have cancer."

She's is really torn between not liking her father very much and loving him because he is her father. She and her brother feel this ordeal has humbled him a bit. I told her to not question her love for him right now and support him with her love to get him through this, then she can sort her feelings out.

Please keep Wendie and her family in your thoughts and prayers. If I don't hear from her by around 9 tonight I'll call her.
 
Wendie, that is certainly alot to deal with. :grouphug: You are in my prayers. Kathy gave you very wise advice focus on the present and get him through this. Hugs.

Aimee, my family does a brunch. Menu is usually- belgium waffles, corned beef hash, asparagus strata, monkey bread, eggs, bacon, sausage, ham, home fries, assorted toasts/ muffins/ bagels, and french toast casserole. One or two items may change but usually we have everything. Dessert traditions are fruit/ pound cake/ marshmellows with a grand marnier chocolate fondue, and no bake cheesecake. The kids love the fondue and have a ball.

WFD- going to my parents. Sure we will have seafood, maybe takeout.

I have never worn a bikini in my life, and I never will!

Here is a photo of dinner last night. I made a flank steak recipe from the weight watchers cookbook--John said it was good, some braised peppers and onions, and a brown rice pilaf with dried apricots in it:

I am not sure what is for dinner tonight. I took some ground turkey out of the freezer. I had been considering making meatloaf, but now I am leaning towards spaghetti and meatballs. I have some sauce already made in the fridge, plus I have things in for salad.

I have electricians here running an electrical load test to see how large of a generator we would need.

Mom, DD & I worked our patooties off on pies yesterday & only ended up with three pies! Three old cajun ladies we are not! :laughing: I messed up one whole batch of custard forgetting the eggs & had to throw it out. We had a lot of trouble rolling out the dough. But here's a pic of the pie. The french name is Tartes a la Bouillie or Sweet Dough Pies. My family called them the french name or Pap Pies. I was surprised at the ingredients, I was expecting heavy cream & real butter. The custard was canned evaporated milk, eggs, sugar & corn starch! The dough was made with Crisco. But they tasted just as good as I remembered. I will try them again on my own, I think 3 cooks in the kitchen wasn't working well.

I was seriously pooped last night. I made another Irish Soda Bread for my Mom, then worked on a nice lunch. Then we worked on those pies for hours. Dinner last night was take out roast beef poboy.

Robin, Thanks I will look for those oats, sounds like something I'll find at Whole Foods.

I don't know if I'm going to cook tonight or go out, I've been craving sushi. Or maybe just pickup some fried seafood, our church has been having a Fried seafood on Fridays & we haven't had any yet. Fried oysters sounds good right now too!

Oh, here's a pic of the salad I made for our lunch yesterday. I had frozen a stuffed chicken florentine. I heated that up & topped a salad with it. Following Becky's lead I even made the croutons! 1st time for that! I made them from the Irish brown bread I had made and they were very good. I made a creamy parmesan dressing for the salads too. Mom & DD were impressed.

For Easter we usually go to my Aunt's for crawfish Then we head over to DH's brother's house for ham, gumbo, etc. lots & lots of food! I'll make whatever my SisIL wants me to.

Tonight I think we'll have fajitas. At least that is what we're thawing. I have a haircut at 445 and some errands to run after so if it gets too late, I may just bring home something.
 
Hi Sheryl, no, not joining the program, I've just been poking around in some cookbooks that I have not used in a while. I bought that cookbook, along with some Mayo Clinic ones, when my Dad got a poor health report--he had high blood pressure, high cholesterol, high blood sugar, and needed to lose weight. So I bought a bunch of "diet" books to try and come up with some new eating habits for him. They eventually ended up doing the "trilogy diet" that Laura and I used to complain about all of the time. He is much better now--has meds for the blood pressure and cholesterol, and he has lost some weight. Not as much as my Mom though--I think she dropped about 20 pounds and has kept it all off.

The chicken and asparagus stir fry I posted earlier in the week was another recipe from the Weight Watchers cookbook. I thought it had too much chicken and not enough asparagus.

Edited to say that your pie looks great! Good job on the lattice weaving.

No idea yet. :confused: Not sure if we are staying home, going to my sisters or my aunts house. Guess I should start thinking about that.

It's canned beef chunks, like stew meat, in beef broth. We don't eat beef very often and my mother can't really eat it very well, other then ground, so I got this to try and really like it. It's low in fat too. Most times I just add more broth and mushrooms then thicken it with cornstarch and serve it over potatoes or bread. All this talk of Sheperd's Pie made me want to make some.

Hey Ya'll, I don't know if mentioned it here, I know I did on the NOLA thread. DD is hosting a Twilight DVD Party tomorrow night. Friends & family that are all into the book ( all girls of course ). We're doing themed food, I'm in charge of Bloody Mary's, Sangria & a salad that I'll try to make as red as possible. We are having pizza (because DD said Edward ate pizza in the movie?) and she is making all kinds of kooky vampire desserts. I'm excited it should be fun.

Maria- I have had enough with being home too. I can't wait until June and I go back to work.

Sheryl- Even if the pies didn't come out perfect, I'm sure you had alot of laughs making them. Just what your family needs. I sure you could find the oats in the regular grocery store. Our grocery store has them AND tomato paste in a tube. If ours does, I can almost gurantee yours does.

Merle- That sounds so much better than the image I had in my head. I was thinking it was compressed like tuna.
 
Gosh - I just clicked on and saw all the well wishes and kind thoughts about our doggie, Chewie. Thank you guys so much, you're the best. :grouphug: I'm sorry for everyone else who recently went thru this, too. It's very very hard.

The calendar may say spring, but it sure didn't feel like it here today. Brr. There are encouraging signs though...yesterday the clam shack in town reopened and I got a flyer saying that my favorite seafood place is reopening April 1.

Dinner tonight should be seafood, but I'm making the roast chicken I didn't make last night. I figure my mom will forgive me. She would rather have me eat chicken on a Friday than throw the chicken out.

I agreed to dog sit for my sister this weekend. I'm now thinking it wasn't such a good idea. My sis's dog isn't yet 6 months old and my 11 year old poochie doesn't care for his "childish" antics. Lots of barking and snarling going around. Not sure WFD tonight. We have soccer and then church small group right afterward. Probably nachos from the concession stand :rolleyes:

So today is the first day of spring....it SNOWED. They were not even predicting it. It said "cloudy" for today's forecast. NOTHING about snow. See if I believe The Weather Channel anymore...:laughing:
