The What's For Dinner Thread - Feb '09(recipe index in OP)

My mom normally would be in charge of dinner on Thursday but my sister's final divorce hearing is tomorrow and my mom is a witness to xbil's crazy behaviour. Praying for discernment for the judge. And that her hearing actually takes place--it's been rescheduled 4 times now, my sis is at the end of her rope.

Well, I get the magazines if they make it through my mother first. I am kind of like Nancy, though...I see a recipe in a magazine, think it looks good, and then figure out how to improve it. :rolleyes1 I have never added cherries to gravy though. ;)

I'll join you in the online shoppers anonymous. It sounds like you really do need those bowls though. ;)

Nancy -- I am sorry it was such a stressful day. Your family has been through a lot lately. The wedding pictures were beautiful. You and Buddy are such an attractive couple, and of course, Kady looked darling.

I just checked it again and it was OK so maybe its just from rushing around or what they call White Coat Syndrome (when your BP goes up because of a dr visit).

Becky and I both get that. Take it easy and let your guys take care of you.

I am in the running for crazy cookbook queen also.

I was going to mention this if she didn't! I don't usually comment on Beck's pictures here, but the Boston Globe holds an amateur photography contest each week. The theme this week was food. The picture that won (a cheese plate with olives) had nothing on that summer roll picture!

So I decided against takeout and we had kielbasa and pierogies (regular noodles for the kids.) I almost died of shock when they both pronounced their enjoyment of the kielbasa and asked me to make it again.
 
Tonight I'm trying out a chicken broccoli and brown rice skillet dinner. I'll let you all know how it is. I've never successfully cooked brown rice before.

I am trying to feed Alex and I more healthy grains. And also keep this body within the perimiters of my mirror.

I'm up in Baton Rouge now.

For lunch we had alligator and cheeseburgers and for dinner we might have MREs. Seriously. The MREs are leftovers from Gustav. :laughing:

If not, then we'll have leftovers from lunch. (more likely)

Hey Shovan and Kat - she has that Cooking up a Storm book that you were talking about earlier. I was flipping through it just now. It's interesting.

I don't have any magazine subscriptions, but I drove on a Magazine Street yesterday, does that count for anything? And I only have a few cookbooks, and I rarely look through them. Perhaps I should start? I want to make the lasagna like my friend did the other day. She put in ground beef and some sausage and some seasoning that's all over the place down here - Tony Something-I-Can't-Spell and she put in I think mozzarella cheese and not that chunky white cheese (ricotta?) and those lasagna noodles and baked it and it was so good but she doesn't USE a recipe she just MAKES it. :headache

Hi gals!!!

Just a quick post, I have a tired little guy who wants to snuggle.
We went to my parents for dinner. Lamb chops with mint jelly, mashed, sweet & sour brussel sprouts, stewed tomatoes, and leftover stringbean casserole. Tasted great because I did not have to cook.;)

We are getting more snow here and the roads were messier than I expected on the drive home. My poor DH is out making deliveries in this mess.

Stephanie, best wishes to your sister tomorrow.

Lauren, let those men take care of you and follow Dr.'s orders.

Janice - I've been using brown rice for about 7 months now. I buy the Uncle Ben's and it's not difficult to make, just use more water and cook a bit longer than the white rice.

I have not been able to keep up lately but just wanted to check in. I went to the perinatalogist today and it turns out I do have preclampsia but not a severe case so that is good. I have to closely monitor my BP twice a day and if I continue to have high #s, they may have to induce sooner...I just checked it again and it was OK so maybe its just from rushing around or what they call White Coat Syndrome (when your BP goes up because of a dr visit).

So, now I am on what she called partial bed rest...basically the same thing as my OB said...no vacuuming, no heavy lifting or exertion...

I am really looking forward to relaxing a bit tomorrow...I have no where to be. I will do a few things and then rest the remainder of the day.

Lauren- you need to be resting whether you have things to do or not!!!!!!!!!!!!!! I am using my stern voice............... Please do not overdo or this is going to go from partial to complete and that means only 15 minutes a day out of bed. That includes your trips to the bathroom so please be careful.

I cannot cook brown rice and have it taste good. I buy it from the Chinese restaurant and it is good. Best two bucks I ever spend :thumbsup2

Afternoon ladies. WFD tonight is gonna be lasagna. Pretty much only b/c I know there will be leftovers, and DH is in charge of dinner tomorrow night. Got to make it as easy as possible or the kids might starve (or gasp, eat more fast food!) Here is the pizza crust recipe I used the other night

Quick and Easy Pizza crust

1 (25oz) pkg of active dry yeast
1tsp white sugar
1c warm water (110 degrees)
2 1/2 bread flour (I used White flour)
2 tblsp olive oil
1 tsp salt

Preheat oven to 450 degrees. In a medium bowl dissolve yeast and sugar in the warm water. Let stand til creamy about 10 minutes.

Stir in flour salt and oil. Beat until smooth. Let rest for 5 minutes.

Turn dough out onto a lightly floured surface and pat or roll in to a round. Transfer crust to a lightly greased pizza pan or bakers peel dusted with cornmeal. Add your favorite toppings and bake in a preheated oven 15 to 20 minutes or until golden brown.

This dough turns out thick and puffy not like a cracker. I also put the empty crust in the oven for a few minutes so not to get soggy when I add my toppings, just prick the crust lightly with a fork first since it will rise a little.

I'll post the chicken from last night later we got a little more ice with the snow then I thought.

I slept in a bit today...I am taking Nancy's orders since she was so stern! ;) I have a few things to do but nothing strenuous and I will relax more.

Dinner will be a beef/tater tot casserole. I have never made one before. I hope its good.

Stephanie, I hope your sister gets divorced today. My divorce took 2 years with lots of postpones so I know how frustrating it is. What a relief when it is finally done though.

WFD- boneless shortribs braised in marinara over pasta, and garlic bread.
 
Morning all. WFD tonight is up to DH--hoping he uses the leftover lasagna, but after Emma's soccer practice they might swing through McD's. As for me, I'll be having whatever I can scrounge up at Walgreen's (another candy and chip dinner for me!)

I really need to get packing. We are leaving for St. Pete Beach tomorrow for a long weekend, and I am so not ready yet. I guess I should start laundry first and then pack. Ugh, I hate this part of vacations. What I want to know is who gave the maid the day off?:rotfl2:

I have chicken for dinner and will figure out what to do with it as the day goes by. Marisa and family are in NYC for the day. Kady was all packed up and dressed warmly at the crack of dawn this morning. Buddy and I have Nola for that day and I should be cleaning but he keeps telling me to put it all away and sit. It does not take much to convince me lately ;)

Black Bean Soup

1 tbsp. oil
1 ½ cups chopped onion
4 cloves garlic, minced
1 tbsp. ground cumin
¼ tsp. cayenne, or to taste (I used about tsp.)
10 sun dried tomatoes, chopped
1 28. oz can tomatoes, minced with their juices (I like the muir glen fire roasted tomatoes for this)
2 cans black beans, well rinsed
2 cups chicken stock, vegetable stock, or water, plus more as needed
½ cup chopped cilantro
Hot sauce to taste
Salt to taste
Limes, cilantro, and sour cream for garnish.

Heat the oil and sauté the onions, garlic, cumin, and cayenne until the onions are translucent. Add the sun dried tomatoes, canned tomatoes. Bring to a simmer and cook for 10 minutes. Add the stock and the black beans, bring to a boil, then lower the heat and simmer for an additional 15 minutes. Stir in the cilantro, salt, and hot sauce (if using). Puree about half the soup, then stir back into the pot. If the soup is too thick, thin with extra stock. Ladle into bowls and garnish with the extra cilantro, sour cream, and lime slices.
