The What's For Dinner Thread - Feb '09(recipe index in OP)

My mag subscriptions are cooking light, and readers digest. My DM sent them to me as gifts.

Rogue, I will have to take DS to Roger Williams in the spring. I have not been there in years. It is only about 10 minutes away.

Alan told me I had to cancel my subscriptions to the cooking magazines that I love, until I have tried all the recipes I've torn out of the magazines. Once I've done that, I can have my subscriptions back. Guess I'll just have to rely on y'all.

The only magazine I'm subscribed to now is Family Fun. It's where I get a lot of my ideas for stuff to do with my kids.

Alan can never ever speak to Bob!! I'd be in big trouble! :scared: I probably only try maybe 3 recipes out of the magazines in a month's time. I'm also having trouble throwing them out. I look through them prepared to tear out the pages & then think there are too many in this one, so I'll have to keep it! It's bad.

Tonight we are going to have po-boys with the leftover roastbeef. I forgot to mention the awesome cupcakes DD brought over yesterday. She was given them at work, from a pastry chef that used to work at NOLA (one of Emeril's rest.) He is starting his own catering business. She brought Raspberry Chocolate Cupcakes & Red Hot Red Velvet ones. Sooo good. Amazingly I didn't eat any today & we still have 4 cupcakes left. So that will be dessert tonight!
 

OK...have not caught up but wanted to tell you gals that Sandra Lee has a new mag out too! Cocktails anyone?
 
Yeah I think I've become a magazineaholic! I have 5 subscriptions for myself. I have a really hard time not buying more while standing in line at the grocery.

Does your local library let you check them out? I go weekly and get another 4-5 magazines to supplement the few (:rolleyes1 ) that I subscribe to.

I get Cooking Light, Rachael Ray, Hallmark, Good Housekeeping, Woman's Day, Food Network, House Beautiful... I think that's all :confused3 Then I pick up another batch every week or so at the library.

I'm chowing down on the zucchini sausage rice right now and it's :thumbsup2 so I will post the recipe when I finish. It's in the March Rachael Ray mag but not online so I have to type it myself, darnit. :laughing:

Sausage and Zucchini Rice

Serves 4
Prep 15 min
Cook 30 min

4 tablespoons butter
1 onion, finely chopped
salt and pepper
1.5 cup rice
32 ounce chicken broth (4 cups)
1/2 pound hot Italian sausage, casings discarded (I used a pound)
2 zucchini, cut into small cubes
3/4 grated parmesan
1/3 cup chopped flat leaf parsley
1/4 cup pine nuts, toasted

1. In medium saucepan, melt 2 tablespoon butter over med heat. Add onion and 1/4 teaspoon s&p and cook, stirring, until golden, about 5 minutes. Stir in rice and 3 cups chicken broth and bring to boil. Lower heat, cover, cook until tender, about 20 minutes. (I did not bother with the onion)

2. Meanwhile in large skillet cook the sausage, breaking it up, over medium heat until no longer pink, about 7 minutes. Using slotted spoon, remove to plate. Add zucchini to the skillet and cook until tender, about 4 minutes. Return sausage to skillet, add the remaining 1 cup chicken broth and 1/2 cup water and cook, stirring, until heated through, about 2 minutes. (I threw in some leftover sliced mushrooms I had along with the zucchini)

3. Stir in the rice along with 1/2 cup parmesan, the parsley, and the remaining 2 tablespoon butter. Top with remaining 1/4 cup parmesan and the pine nuts. (I did not bother toasting the pine nuts because I wasn't sure how to do is so I just used them as is)

Very easy and tasty!

Me too! Most of the subscriptions I've gotten for free through Cokerewards or from expiring airline miles. But I can't get enough. I seriously need a 12 step program--I just got a new one today (that I can't for the life of me remember where I signed up for it) Diet and Nutrition--looks like some good recipes. Besides that we get Everyday Food, Fitness, Self, RAchel Ray, FAmily Fun, Wondertime, Cookie, Business Week, Time, Car and Driver, Cooking Light (a gift)--no money paid for any! I need the Food Network one--I'm sure I'll pick up a load at the airport before our flight on Friday

Glynis--do you get the companion to Family Fun--It's called Wondertime--some really good stuff for kids in there too.

Lauren--glad to hear you have a date--Prop your feet up, indulge in some girly-girl TV and leave the cleaning to the men. You deserve all the pampering you can get!

Stephanie, Cokerewards? I'll have to go check that out, but we don't drink a lot of softdrinks. I know you're a "health nut" too, so how do you rack up enough points for free mags?

Aimee, I never even thought of checking out magazines at the library. But for me, with my magazine hoarding late fees could get very very expensive!

My mom also hands over her Southern Living when she's finished with them.

Kat, Would it be too much to ask to have food porn links on the 1st page? I always find myself looking for pics of Becky or Laura's food, trying to figure out just what they did? If it's too hard don't worry about it.

Oh! I had missed the pics of that awesome looking shrimp you did!!! Wow looked delicious! :worship:
 
Nan, I LOVE those pics! You didn't tell us how hot you & Buddy are!! You both look so young! Kady looked absolutely gorgeous, Marisa & Gail too! Everybody sure looked like they had a fun time. (Try to hold on to the good times, while dealing with the sad times this week.:hug: )
 
Dinner last night was the Home Version of a "Nola Style" Roast Beef Po-boy.

We've talked about them & I've posted the purchased sandwich shop version. I don't think I've ever taken a pic of one I made at home. :confused3

This was not one of my low fat evenings for sure. Here's dessert, the pastry chef made Raspberry Chocolate Cupcakes mmmnn-mmm! and the cocktail I made to go with them.

Here I go again with the cocktail recipe! I saw Bobby Flay do this one on tv yesterday. I still had champagne open from Saturday, so I thought I'd try it. (The champagne saver really works!)
Grand Champagne Cocktail

Recipe courtesy Bobby Flay, 2007
Serves:
4 drinks Ingredients
4 shots orange-flavored liqueur (recommended: Grand Marnier)
4 teaspoons honey
4 fresh strawberries, tops trimmed
1 bottle Champagne, well chilled
Special equipment: 4 chilled Champagne flutes
Directions
Add the orange-flavored liqueur, honey and strawberries to a food processor and process until smooth. Fill the chilled glasses halfway with the strawberry mixture and then fill the rest of the glass with Champagne.

note: I used Cointreau and used more strawberries than the recipe called for.

Well, it's another horrible, snowy day here. At least it's supposed to clear up this afternoon. We should be much warmer throughout the weekend. Here's hoping!

Dinner tonight will be leftover cabbage roll casserole, and leftover chicken tetrazzini. Katie and I have to go to a mother/daughter thing at our church tonight, so the others will have to eat up the leftovers.

My brother, his wife and one of my nephews are coming to visit tonight. SIL and my nephew both have eye surgeries tomorrow. So, we get to have them tonight and tomorrow. Should be fun! Well, except for the eye surgeries.
