The What's For Dinner Thread - Feb '09(recipe index in OP)

I know I'm a pain in the patootie,:headache: but could y'all also add some more prayers for Bob & I. We did contact an agency for a home health aide. They think they have someone (woman in her 50's works in a nursing home)who might be able to work with our hours. It might start this week. We decided to have them come out twice a wk to help him bath & get dressed. That way they know how to take care of him & could hopefully handle it during & after my surgery. This is going to be soo uncomfortable for him! I know I feel weird about it, I can't even imagine how he feels.

:hug: Prayers for both of you. I'm sure it feels weird and probably will for a while. Not that it is the same thing at all, but when I started Hailey's therapy, the hardest adjustment I had to make was the lack of privacy we experienced. We had those girls coming most of the day, seven days a week. Gone were the lazy Saturday mornings where you could sleep in and walk around in your robe. We knew someone was coming and we had to be up and dressed to meet them. Like I said, I know it isn't the same thing, but I guess my point is you do adjust to whatever you need to. I'll be praying for both of you that the adjustment is quick and as "pain free" as possible.

Wendie - I don't have any words of wisdom for the cleaning process, but I'll be thinking of you. :hug: And congrats to Ross for his report card. Do you want to take Patrick for a while? Maybe Ross could be a good role model. ;)

Kathy - I hope your sinus infection goes away quickly. I get those pretty often and for some reason they always drain me more than the other colds, etc.

Nancy - Kenny really liked the chicken. He said it was "a five all the way". I liked it, but I wasn't as crazy about it as he was. I thought it needed a little more red pepper. Anyway, you nanatize it as you see fit. I'm posting it as I did it tonight.

Maple Glazed Chicken
2 lbs boneless, skinless chicken thighs (can use bone in)
1/3 cup flour
1/4 cup oil
1/2 cup maple syrup
2 tablespoons cider vinegar
2 cloves garlic, minced
2 tablespoons soy sauce
2 tablespoons dry sherry
2 teaspoons ginger
1/2 teaspoon crushed red pepper flakes

Heat oven to 350 degrees.

Put flour in zip top bag and add chicken. Shake to coat. Brown chicken in oil on both sides and add to 9 x 13 baking pan. Combine remaining ingredients and pour over chicken. Bake uncovered for 40 minutes, turning once.

You may need more cook time if you use bone in chicken or larger pieces like breasts or leg quarters.

Sheryl -- Shh! But I don't think I would have been able to handle that much chocolate either. I love chocolate, but one spoonful of a rich chocolate dessert is enough for me. I also did attend one event where there was too much alcohol. It was a brewery dinner where they paired different beers with food. They served us five full pints of beer!

Oh, and I don't think I ever answered your question about Sancerre. The one I like has a white label with black cursive script that just says Sancerre. It costs anywhere from 18.99 - 22.99.

So are you and the kids able to talk with him until the next class starts then?

Not really. He was able to call yesterday from a pay phone, but I think calls will be infrequent. He is able to write.

I read about the whale. Very sad. Becky and her husband had a great dolphin encounter on their trip. I will let her tell you all about it when she gets back on here. I am not sure when that will be. She is swamped at work and is trying to sort through a thousand photos at home.

Laura - I'm so sorry about Greg being recycled. Is this Ranger school?

Yes. I think he is a little relieved, actually. He was worried about going into the course after being on vacation at home, so now he has a couple of weeks to really gear up for the course and get some tips on how to succeed. He isn't frustrated. If things go well, he will be home for a couple of weeks in May.

Marilyn -- Of course, I had to go back to read your gorilla story. I have to say, I have seen gorillas do much worse. We used to live pretty close to a zoo, so we visited a lot. Some days, the gorillas would get tired of all the attention, so they would purposely do things to get people to leave. Their methods were pretty effective. :scared:
 
Wendie - My heart goes out to you as you go through your Gram's things. It was tough to go through mom's things. However, it was not as tough as I thought it would be. I had my dad, sister and 2 SIL's to help. Dad had a general idea of what he wanted taken to Good Will, and he had lots of things he wanted the grandchildren to go through. He wanted each one of them to have something special of Grandma's to remind them of her. He had stories about each item of jewelry that we went through. About halfway through the jewelry, my sister and I took turns writing the stories down so we have them. The hardest thing was going through her cedar chest. There was so much there.

I think the main thing is to not let it become too sad. Use the time to remember the good things. By the time we had gone through all of mom's stuff, we had the entire family gathered and we were playing "Remember when..." with each item. It was kind of a fun (don't know if that's the appropriate word) way to say good bye. Does that make any sense at all?

DH is a conservative (who would guess he grew up in MA?) and I am not. If he has an opinion on something, it is almost guaranteed that mine is the polar opposite. Our official house policy regarding political views is, "Don't Ask, Don't Tell." ;)

I'm just trying to keep the peace. :flower3:
 
Wendie- Before I forget, have a good trip. I really think you and your family need to get away. I will be thinking of you as you go through your Mom's things, it was hard for me. WE all had gotten together to start cleaning in her house but never thought we would go through her room. Gail and I were floored when my Sis IL and sister went in there. I know that it was bettter that we did though, we had waited a few months. It was easier taht we did this together, wel Gail Susan and me. My sister Pat was clueless but that is another story.

I would just say that your Mom left good memories for you in her room and when you begin please remember that those memories are always close. I am here if you need me, just call.

An update from today: Bean is measuring 6lbs 6oz. 65th percentile and is measuring at 36w5d. Big Boy.

Thanks, it will get better when the ecomony gets back on track and some of the guys go back to work. They are getting very antsy and scared. This is worse than back in the 70's. Hopefully the senate gets how desperate things are for the regular joe.

I wish more money would be channeled to the Governors. I know our State has a lot of projects on hold and it would be nice if that money put more people here back to work. The man down the street works for an electrical company that had 19 guys in the field last year at this time. He is one of two left :sad2:. My DH partner has his own construction company and he told me tonight he is down by 85%. This year is the first year in years that Buddy is laid off more than two weeks in the winter, he has been home since before Christmas. His brother is not sure he will be called back.

DD goes to the neuro. doc tomorrow. I won't be going with, her DH took the day off. Ooops because it's also his b-day! Yikes I don't have a gift, I hope I remember this tomorrow morning! But he will be going with her to the dr. Say some prayers that the dr can help her pain.

I also cannot imagine how you and Bob are feeling. I doubt that anyone likes their privacy invaded and personal privacy is even more difficult to imagine. Both of you are used to taking care of each other, this must feel like an intrusion and I will keep both of you in my heart and prayers.

I wish I was having chips and beer with Bob.....I hope he liked the casserole. Buddy would not even touch it....he was chopping tomatoes, looking for onions and trying how to heat kielbasa without dirtying a plate :confused3. I had seeds and red juice and crumbs all over the place.

Just got back from the Dr. with two prescriptions, one for a pretty bad sinus infection I didn't even know I had:confused3 and the other is a medication that will help with the dizziness should that happen again. Thank God it was an infection. I was afraid it might be something else that meds would not fix quickly!

Afternoon all--not sure what was wrong with me yesterday, but feeling much better today. Dinner tonight is going to be a mexican chicken casserole.

Thanks for asking about Buddy. He is kind of depressed and wants to go back to the hospital tomorrow night. Chris is the last one besides his Mom from that generation. All from his Dad's side are gone, and now Chris is the last, even through marraige on his Moms. He was in the woods today helping put the taps in for sugaring. Usually his firend has his wife so this but it is hard work in teh snow and ice so Buddy is doing it. It is better that he is busy though.

Nancy, I think I would use the bone-in thighs for the chicken dish I made tonight. And I do think the curried sweets would go well. I would have made them myself but my family has a very serious anti curry position. :confused3

Laura - As long as Greg is ok with it, I'd be ok too. And he's probably right, after the holidays we are all moving a little slower, and in my case, heavier. ;)

Kathy - My Dad loves watching the dog shows. He started years ago when there was nothing else on and he was recovering from surgery and was sort of trapped in front of the TV. In typical male fashion, after a few hours of watching, he was arguing with the judges and being critical of their decisions. :lmao: Just like when he watches football. I can't watch a dog show without thinking of him yelling for my sister and I to "look at the gait on that dog!" :lmao: :lmao:

Marilyn - I haven't read your gorilla story but I hope it isn't similar to mine. We took Hailey to the zoo and she found a spot right up next to the glass so she could see. Well, a rather large male gorilla started entertaining a female gorilla no more than a foot from where we were standing. :eek: I grabbed her by the shoulders and spun her around. The entire room was cleared of all the school groups in record time. :rolleyes1 The therapists who went with us thought it was too funny until I told all of them I was ordering gorilla cakes for their bridal showers. ;)

No. :rotfl: We were fortunate enough to get a private Safari ride, it was three of us and two couples. Right as you get off of the ride there is a viewing area for the gorilla's. When we got off there were three gorilla's having breakfast, have to say it was probably one of the most beautiful things I have seen in a while, at least at first. As I said on Facebook, "it's all good until the gorilla throws up!" :scared: :rotfl:

More docs today...what fun! The perinatalogist called yesterday...my sugars have been a bit high. I think they will put me on some meds (I missed her call). I have been watching but I guess I am not doing to great a job. I am always hungry and sick of cheese!

We are having roast chicken, stuffing, baked potato and probably green beans...gotta go to the store for some veggies.

Quick morning check in.....

I finished all the ironing last night so suitcases are packed. I just have the last minute bathroom bag to pack. I have a few more notes to jot down and get the plug in cooler loaded up for drinks and sandwiches. We will eat lunch on the road on Friday to get max time in driving.

Lauren--It is almost time for Bean to arrive!!! I hope you get a date today.....that is such a nice feeling when you know when the day will be!!

Kathy--Ross thinks that is a riot on the Derek Jeter strike out.

Bethany--I hope your Dr finds answers soon to this! Keep us posted!

Nancy--I guess what is getting to me the most on cleaning out my mom's room etc, is dealing with my father. He has already thrown so much out, and has started using her room for storage. (since I was 5 they had their own rooms) I am not sure what my emotions will be so I guess I will just have to wait and see. I do know that I am glad I am doing my Grams while she is in the nursing home, and I can go visit her, then if I had to do it after she was gone.

I have been trying to get this out all morning, but the phone keeps ringing, so I have lost all thought to what I was going to post next....................I will check back in later this afternoon. Have a great day ladies:)

This isn't much in the house so I think supper will be tuna casserole.
 
Nancy--wasn't much of a recipe--used one of those seasoning packets from McCormicks--but it was really bland(which is odd b/c they are normally super salty), wouldn't use it again.

Not sure WFD tonight. I have chicken and potatoes that my mom can fix tonight. Hope everyone has a good Tuesday--time to get the kids to preschool

It's so bad that if he gets up to get a soda or a snack, Hailey will run over and change the channel. :laughing: And I didn't even have to train her to do it. Tell me that child isn't smart. ;)

Honestly, my ironing method is to put on whatever it is wrinkled and say in front of Kenny, "this isn't too wrinkled, is it?" Works every time. And let me say that man is fab with an iron.

Tonight's dinner is cube steak parmesan. I've never made it that way, so this will be another experiment.

Lauren- With all your doctor visits you have now, I think you'll have more free time after the little guy's born.

Kathy- My husband hates dog shows, they always end with me listing the pros if we got another dog. It's the only argument he ever wins! I still think we should have 2 dogs though. I don't know why he thinks and Irish wolfhound wouldn't fit in the house? They just don't live long enough (no dogs do though) so I'd be very happy with another pound puppy.

Sheryl- My aunt had MS and was by herself so she needed a full-time, live-in aid. Her MS was very advanced and needed help with everything. Her aid became a family member. I know the situation is a bit different, but I'm sure you'll all will do great and have a new friend at the end of all this.

Bethany- Hope all goes well at the doctor's and your able to enjoy your trip.

Who knew he would have an opinion on everything (that's my job) and it would be everything I disagree with! Since he is laid off we cannot even agree to disagree...I have tried that....and he knows when I agree just to get him to stop talking.... Couple that with his colorful use of the English language and I am :scared:

I think I would have handled it better if it were beer or wine, but all that vodka & other liquors, there was just no way! That combined with all the rich chocolate & sugar! I heads were spinning & our tummies were starting to do the same.

Thanks Nancy, I know I shouldn't feel as strange as I do about this. If he can deal, so should I. I just like my privacy & teaching someone else how to take care of him, just is going to feel so weird.

He did like your stuffed cabbage casserole! He ate 2 bowls full after he ate half a bag of chips! Although, He did skip the beer & had wine with dinner. ;) He said he couldn't tell it was turkey, it tasted like beef. I did nanatize it just a bit. I used the soup but with beef broth instead of water, diced tomatoes with chilis, threw some dried basil & oregano in there too. Thank goodness I didn't double it, because it was so filling & it made enough for both of us to have for lunch today.

I'm sorry Buddy is going through this. It's especially hard when we see a whole generation of family disappearing. :hug:

:lmao: It is amazing what you see at the zoo. The same thing happened to us, but with ostriches. I'm sure if I took Caili to the zoo today, she would still ask, "Mommy, why did that ostrich sit on the other ostrich?" :laughing:

Wendie -- You are way more organized than I am. My idea of ironing is to throw something in the dryer for a couple of minutes, or hang it in the shower.

Nancy -- I forgot to say that my thoughts are with Buddy. It must be so hard for him to be going through this, and I'm sure not having regular work makes it even more difficult.

I haven't decided what is for dinner, but I am leaning toward pot roast. Caili is insisting on hand-making all of her valentines, so I am going to have to help her with that this afternoon. That means I need a dinner that is already pretty pulled together before school dismissal.
