The What's For Dinner Thread - Feb '09(recipe index in OP)

Hey dr came in, surgery went very well. She is still in recovery, haven't seen her yet. I'll check in later. I'm on iPhone so typing is slow.


Great news! Please keep us posted...glad the I Phone is coming in handy. I got my replacement Vu phone...replaced the one I drowned (kind of like the I phone) and it's addicting. Next you'll be on Facebook with it! ;)
 
Just checking in. Jan is doing very well. She started her last round of chemo last night and should be done this morning. So far, so good!

If this wasn't enough for the family to be going through, Kevin lost his job the other day. I cannot imagine going through all of this with their mom and then getting laid off.

We wound up having Chinese food last night so I will make the pot pie tonight. I saw Charles yesterday. He is doing a bit better pain wise since the accupuncture eased the pain some and he was able to sleep the night before. He has lost so much weight...it is really sad. I am going to try and get there again soon. There are some things that I can help out with. My SIL is doing a great job but I can tell she is tired and trying to do a million things and continue to work at the same time.

I'm glad you saw him and found some things you can send to him.

It's hard to feel like you're doing enough when someone you love is in the hospital or enduring painful treatments. Just some personal insight I have learned: I was in the hospital a couple of years ago and of course it wasn't the same as chemo/radiation/cancer sick but I didn't realize how bad I was and I couldn't tell you who visited me. Between the morphine and other meds, I slept almost the entire time and when I wasn't sleeping, I was crying in pain. But what DH can tell you is who asked him what he needed... he was the one who really needed the attention of friends/family when I was at that point. Continue to let your SIL know how much you care and make quick contacts with your brother and I promise that is all they expect of you :hug:

Greg has always had a big welcome home whenever he has returned from deployment or come back on leave. There are people who organize greetings in Atlanta and Maine. I really give those people a lot of credit. There is one guy in Atlanta who is always there. Greg is usually the only soldier on the flight home to Boston, and the last time, the captain announced that Greg was returning home from Iraq and everyone on the plane clapped and cheered.

And I'm the sap who bursts into tears when I see that at the airport. I think it's great we do that for our troops.

At this point, I won't be cooking for another week. :confused3 Tonight we are meeting friends for italian food at this fantastic BYOB spot near their house. I'm excited! They are the ones who are "grandparents" to our pups and dogsit for us when we go to Disney so we want to take them out on occasion. Their daughter works at Disney as an animal trainer!
 

Nancy, Feel better. Glad Dan and Erica are having a good time. We went to Niagara Falls when we were first dating and stayed at the Embassy Suites...they had floor to ceiling windows and the view was just breath taking. We were just reminsicing (sp) since Tom is still organizing and came across those pics. Andrew was so cute then...he was 5!

Thank you for sharing this. I am having a rough time today and being there for my brother, SIL and neice is what is going to get me through. I put together a nice order of fruits and veggies to arrive next week and plan on getting there again. He needs a haircut so I offered to do that if they do not get it cut in the meantime. The girl that cuts my hair gave me some pointers...

Yes same as filets. You can roast it and serve an espagnoel sauce with it. http://www.emerils.com/recipe/847/Espagnole-Sauce. the sauce is very much worth the effort it has a wonderful taste. You can freeze any remaining in small batches for any time you need a great gravy.

Okay, I need help with this recipe.

Is brown stock the same as beef stock?
Do I get bacon fat by just frying up bacon and saving the leftover?
What is brown roux?
What is tomato puree? Same thing as tomato paste?
What is a bouquet of garni?

Sounds delicious, and I'd love to try it with my Easter meal, I just am not that fancy in my cooking :laughing:

Sheryl- Great news, I hope that's just the beginning of good news for your family.

Laura- I will never forget what my daughter's preschool teacher wrote on her last report card- "Always embrace her unique way of looking at the world." We were so lucky she had a teacher that appreciated her imagination.

Aimee- Sounds like a good reason to cook up some bacon, but maybe you should wait until tomorrow. Everyone here has me feeling guilty about eating meat today, my mom would be so mad at me. I don't want to sound selfish, but when my husband was in the hospital, I really could have used some help. Everyone was bringing him food and coffee, and boy was I hungry. We really didn't have any food in the house when I got home, and I didn't want to waste my time grocery shopping.

Bouquet garni-fresh herbs tied together, easy to get out when your done
brown roux- roux cooked longer than you would for macaroni and cheese, gets toasty looking and smells yummy. it can burn, be careful. I think you can also do it in the oven with less risk of burning

Robin - Sorry about your daughter and the stomach bug. I hope it is the 24 hour kind and she's back to normal by tomorrow.

Becky - That cold sure has lingered for a long time. Are you sure it hasn't morphed into something that might require an antibiotic? If I keep a cold too long I ususally end up with a sinus infection or bronchitis.

They have it scheduled for the 14th, but I knew if I pushed a little (ok, maybe more than a little) I could get it sooner. We are having to travel to a different hospital, but I don't care. They are doing it Monday morning so we should be able to make a good decision by the middle of next week. I won't be checking in this weekend because I'll be staying at my parent's house and they don't own a computer, so I may not check back until Monday.

Luckily I had some meds on hand from the last go round that I was able to start on, my Dr. is out of town today but will be calling in some refills today.
I wish my guys liked curry as much as I do, that chicken would be in my rotation as well. I'm lucky to get the curried sweet potatoes occasionally.

My Dr was not in but they got the other Dr to call a script in. I am glad, I am starting to get pretty uncomfortable.

The chicken is not a heavy curry taste, it reminds me of the potatoes, a hint of something but not an overdose. Last night Buddy had the choice of that one or some leftover roasted chicken and he took Glynis's :thumbsup2

You are so right :thumbsup2 When my first husband was in the hospital everyone worried about him and I understood that. I even thought that that was how it should be. I was exhausted, I was working and was caring for the kids the first time and the last time I was there day and night. I never ate and lived on coffee. The social worker said that someone needs to care for the caregiver so that is who I generally concentrate on.

I absolutely do not think it's selfish to wish people were there helping you, too. Sorta like when a family welcomes a new baby, people want to bring meals for the entire family - not just mom - so everyone can enjoy the new baby and establish a routine. Same thing should happen with longterm illnesses. The family needs help doing basic routine stuff so they can spend as much time with their loved one. The family is paying big bucks for their loved one to be cared for in the hospital but the family is left out of the equation.

Pixie dust and prayers for all who need them! This has been a crazy day, so I promise I read, but can't remember a whole lot.

I'm not sure what we'll be having for dinner. Alan and I had planned to go to a Peruvian restaurant, but he's not feeling well. He's got some kind of sinus thing, and can't really taste anything. I guess we'll put that off until he's feeling better.

Anyway, I just don't feel like cooking, so I think I'll pick us up something for dinner and we'll watch a movie.

Gretchen -- I am glad you were able to move up the scan. It is amazing what a little persistence can do.

Aimee -- I am so sorry about your granddad.

I probably won't be on again until Sunday evening. Tomorrow is my birthday, and after the kids' gymnastics lessons, we are going to spend the weekend with my parents and Beck. Have a good weekend!
