The What's for Dinner Thread - August 2014 (recipe index in OP)

Good Saturday morning girls! I apologize for being away but Holy Busy!!! I work in a small accounting office that is wicked busy, and this is a crazy time of year. I love it, but no time free, which I am use to.

Brandi- I do indeed rememer Insanity! I remember that I was in awe! Do not do that right now, Missy!

Ellen- I think that Lent is a double edged sword for you. Blessed Season in which God calls some of His very special . BOth Buddy and I lost our Dads on Palm Sunday. I think that for those who work for the Church, Lent is both uplifting and sad.

Kimmar- how is the renovation going?

Allison- all I can say is that I am jealous!

WE have been doing pretty well on the healthy living thing. Buddy is trying what I cook, and it makes things easier. REmember when the girls were here and we all were on CORE? He ate whatever I cooked for us, and hated it silently. LOL! He is doing that for me now, and for himself. I wont make him food that is not good for him, so knowing that he should add the whole grains reinforces meals.

WE have had some interesting meals, and the only thing he will not touch is whole grain couscous.
This week's starches were bulgar wheat pilaf, roasted sweet potatoes, and brown rice.
AND veggies galore.

I am going to make a coconut milk dole whip this weekend, wish me luck! I also have cookies, poor guy asked if there were any low fat donuts! LOL!

I plan to make oatmeal muffins and some of teh WW cupcakes with pumpkin this week as well.

Today is Kady's last day at Mystic Aquarium, so Buddy is going with Marisa and Jeff. HE cannot spend the whole day...he would follow the poor child from exhibit to exhibit if he could! LOL. I wish I could go, btu it is off to work for me!

It's been a little busy here. I've finished up one contract and started another. As always, there was mild panic with the old team in the lead-up to me finishing up there. If anything, it reinforced my decision for not wanting to stay there. So...the new one. There's mild panic there too....from me! It's going to be a big learning curve for me for a while. But the change will do me good. I needed to be shaken off the comfort tree.

DS has headed off to Japan on a study tour for 2 weeks. The trip will take him to Hiroshima, Kyoto, Ogaki and Tokyo. They are going to Disney Sea for a day. I'm green with envy! He got into Hiroshima today and was treated like a minor celebrity. You may remember that we have hosted Japanese girls from Hiroshima over the last 4 years. Well.....3 of the 4 girl's parents that we have hosted were there to greet him!!! I was very touched that they came.

He had to take photos with all of the parents and I'm guessing that he was the one with the largest contingent of people to welcome him to town. LOL. Again, I'm green with envy!

WFDT?

Well....DH cooked. It was vegan/raw food. We had raw cauliflower rice, pulsed with some pine nuts; and nut falafel balls. He even made a ****aki mushroom sauce to go over the falafel balls! We added salad to go with the meal. It was amazingly delicious.


And for dessert, DH made a coconut icecream. Coconut flesh, coconut juice, coconut milk, maple sugar and vanilla essence. We had some star fruit in the house so we teamed it with that. It was sooooooo good.

PI- awe for your son!!!! I am always in awe with the young people who travel who are so talented and adventurous. Bravo for him!
 
WFDT? Reservations! DH's sister is up this weekend from N. C. so we are meeting somewhere for dinner......where? NO. CLUE. :tilt:
 

Kimmar - hope you get your kitchen back soon. It seems to have taken quite a bit of time for this room.


Nancy - It's actually not such a big step for him. He's going with 10 other students and 2 teachers. By all accounts, he's having a great time so far.






It's definitely turned cold here today. We went from 27 C yesterday to 15 C today!

WFDT? I've got a batch of cauliflower soup on the go. It'll be perfect for a cold day. :)

WFDT? I came home to find a chickpea and pumpkin curry and amaranth waiting for me. DH even had vegan feta cheese (made from nuts) to go with the meal. It was really good! If DH keeps cooking like these, he'll definitely convert me over to veganism.

PIO- Kady is an Ag student and watched a documentary about how animals raised fro food commercially are treated. She has not touched any meat since. She is a animal lover to begin with so the graphic info was very disturbing to her. My DD has told her that she needs to do some research so she gets enough protein, not just salads for the 30 days she has committed to.
 
There are a few tasty vegan dishes I've had but there's no way I could go meatless. I don't want to see any of those videos. I'd rather remain ignorant!

Dinner has been iffy for us. We had a great dinner out Friday night. Saturday was at a F&W demo, but it was way too healthy, so not real satisfying. Sunday I ended up having a nuclear meal. I wasn't hungry when we got home from the park. But we had to meet folks at the old house to get rid of a dining room set at 8:30 and I figured I better eat something. Last night was the steakhouse leftovers from Friday.

So that gets us to tonight. Tuesday = band = drive through. It's not so bad. I haven't had a burger in weeks so i think I'll go with that.

Howdy ladies...

David and I just got back from Louisville. We had a great fun filled 4 days. It was very quick.

Dinner tonight is a salad, meatless for sure, and vegan.

PIO - if DH is following recipes I would love to see them.
 
Brandi - Glad you had a great time in Louisville. It looks like a lot of fun.
DH signed up for a cooking course online. I think the recipes he's getting are password protected but I'll ask him if he has downloaded versions. When he started to cook the recipes, I thought of you. His first recipe was a zucchini spaghetti alfredo style and he used nutritional yeast. I remember you using nutritional yeast in one of the recipes and telling us about it.
A lot of what he does involves dehydrating. He's 'rented' one for the moment but I think we may be on the hunt for our own gadget soon.
Thanks for the sour cream recipe. I'll pass it on to him.





:wave: Good morning. It's Thursday morning here and the weather has definitely turned cold. After 18 months, finally.....all 3 of our cats are now co-sharing the bed with us. Our oldest cat, the white one, had his nose put out of joint when we got the Siamese cat. He has been avoiding the bed, and the Siamese, for the last 18 months. This year, when the cold weather hit, he jumped on the bed at night and started to settle back down to his old 'normal' spot. It's been a readjustment for the Siamese, who had muscled into that spot, but he's found a new spot to settle down at night. It seems to be working for the cats but it does mean less space for our feet at the bottom of the bed. :rotfl2:
 
PIO - we have an Excalibur dehydrator it has 5 trays, and we love it, you can make so many things in it.

I love the yeast it makes everything have a cheesey and nutty flavor. I buy it in bulk, DH even likes it sprinkled on his roasted veggies

I'm almost sure that DH rented the 9-tray version of the Excalibur. I think he's talking about getting the 5 tray version, which would mean we'll have the same one. :)




WFDT? We had a family birthday celebration and we went to an Italian restaurant. I ordered the lasagne and it was such a big serve that I only managed to finish a little over half. I normally hate leaving food behind but there really was no way I was going to finish it. Oh well.
 
Last night was the first time in about a week that I cooked dinner. We had meatballs and mushroom sauce over rice and creamed spinach on the side.

Tonight is dinner out at DCA, it's called the Disney Family of Wines, and Wineries featured are Gogi, Lasseter, Mac Murray ranch and Silverado. I think. Who knows what we'll be eating, but I know we'll be drinking well!
 
Alison - Sounds like a great day of wines. Have a fab time. I'm just living vicariously through you.



WFDT? DH has been dehydrating a pizza base of some sorts for the last couple of days. Guess I'll be doing vegan pizza for dinner tonight. And it's Good Friday here; so I'm being a good Christian as well.

Hope everyone is doing well, I just wanted to say that my body is still not happy with me, I tried to do some yoga and it yelled loudly at me.
I went to see a therapist and they explained that I was experiencing atrophy in the muscles from my recovery, and that I need to go slow and steady and I will improve. Uggghhhh.
