The What's for Dinner Thread - August 2014 (recipe index in OP)

Good morning all,

Alison ~ I am totally loving your pictures. So excited for you at the Poly. WOW!! Lucky you, I would have stayed in and enjoyed the room and the view also. I absolutely love that you cook while on vacation. We are never able to stay in a Villa so we have to eat out every meal. Have a great time - I know you are!!

Brandi ~ Not long now!! Are you getting excited for the new job? I agree - time spent with family always trumps food. But in this family not so much. We love to eat and after the program we still went for ice cream. I see NOTHING at all wrong with ice cream for dinner. Lilly loved it!!

Oh ladies the program was just too cute last night, (but aren't they always)! Lilly's group sang 2 songs and danced to the last one. They had the 5 year olds (pre kindergarten) in caps and they came in to Pomp and Circumstance, I about lost it, and told Lilly that next year Nanny would probably cry. She asked my why and I just told her that, that song always gets to me and that she is growing up WAY to fast. She gave me a hug! We went for ice cream after. She was thrilled.

We are having perfect weather this week. Today the sun is shining, no wind and we are to be in the mid 70's - perfect weather. By Friday we are to be mid 80's but then on Mother's Day we are to get rain. Which won't be to bad as the Farmers are back in the fields and planting like crazy. The rain on Sunday and Monday would be perfect.

WFDT ~ I'm actually cooking - Meatloaf, baked potatoes and Brussel sprouts. If I get home in time I will even bake a Peach cobbler for after Choir practice.

Make it a great day!

Good morning all!

We had a quiet night at home last night which we both needed. I got a couple loads of wash done, dinner made, floors cleaned and I even got to sit for awhile. Tonight we have Ethan's Band Concert. It has been so much fun to watch these kids from when they started in 4th grade and how they have improved. Should be fun.

WFDT ~ Hamburgers, sweet potato fries and cucumber salad.

Make it a great day!

WFDT - Lentil tacos

Hope everyone is having a great day, it is raining here for the up-tenth day in a row, tomorrow is my last day at this current job, and now I am getting excited about the new job.

:wave2:

I'm glad everyone is enjoying their home lives. We have one more night here, we check out of the Bungalow and into a studio. We are also splitting up with Jim and Alberto, they go to AKL Kidani and we are staying here at the Poly. I'll be ready to head home tomorrow and see my kitties, sleep in my own bed.

Tonight dinner is at the Boathouse. That should be great!

I have no idea what is for dinner, I think it is pizza, LOL

Thank goodness it's Friday

We are having quite a bit of drama here at the Church. I can't go into it but surfise to say it isn't pretty and is going to get worse - much worse - before it gets better. Let's just say that I will be glad when Sunday is over. I HATE drama!!

Brandi ~ Congratulations on being unemployed today. I am so excited for you!! I hope it is everything you want. You deserve it.
How are you feeling?

Alison ~ You are heading home tomorrow? I guess I though it was longer. I know you, like me, miss your babies. That is usually the best part of a vacation being over.
Will you post a link to your trip report here? If not where can I find it. I am very excited for this one.

Ethan's band concert was great last night. He was even in an ensemble and they were terrific. He is playing Matthew's trumpet and he is very good. We really enjoyed it. And of we went for ice cream afterwards. Hey, it's tradition!

I am so excited! Our new Pastor, Pastor Anne, is coming to the office. I can't wait to meet her. We have talked but face to face will be nice.

WFDT ~ Salmon with a mango and avocado relish, steamed green beans, and baked potatoes.

Make it a great day and a wonderful weekend.

I'm surprised you didn't realize it's almost over, we've been gone 10 nights! Have you been keeping up with the Mississippi part? I just posted the update of leaving the boat today. I want to finish posting this one before I start the next, but I'm already well into writing it!

I will be sure to put you on the list for the bat signal when I start the TR. I have about four more updates on the other TR and I'll probably post them in the next week. There isnt a lot to them, but it wraps up our time in New Orleans.

Ellen - I am doing great.
It is like this heavy weight has been lifted off my shoulders. The stress at the other job was really getting to me. it was just not the right place for me, I am sure others are having a grand time there, but that is why they make different jobs for different people.

I have gained a lot of weight over the last year, from the hip problems and not being able to exercise and then the stress and just over all ******* with the job.

So, I have an appointment with an endocrinologist next week, and a physical and another appt with the Dr about the cysts. So hopefully they can all figure out what is going on.

But I made these appt months and even a year ago for the physical, but it does not look great, to be out of the office on three days the second week of the new job.

my fingers are crossed for good news.

I have to apologize, I am so far behind with everything, but I am hoping this new jobs offers me some time to DIS and get caught up.

Hey no worries! Its just a trip report and then its a lot about food with some history thrown in.

I'm glad to hear that the new job should be a better fit for you. Sometimes I miss having a workplace and all that comes with it, but most of the time, no. We may not have a lot of interaction going on in our lives, but at least we can control most of what goes on.

That sounds like bliss.

After what I have been doing for the past 2 years, I would love to not have to go to a workplace.

Where does the time go? :faint:

I thought I would find time to spend on the Dis this weekend....just never happened!

Ellen - thank you for the feedback on my photos as well!

Brandi - I've swapped out my regular pasta for quinoa and brown rice pasta. I actually love it better!

Alison - Welcome home! Looking forward to your TR.

It's Monday night here. I did reasonably well with last week's dinners and we definitely had a lot more meals at home rather than take-out. I've started this week on a good note as well. We had some frozen bolognaise sauce from when DS and I cooked it. So, it was quinoa/brown rice pasta bolognaise for dinner tonight. We even found a tomato based sauce in the freezer for DH!

Melbourne is definitely much colder here this week. And it's getting wetter too. I suspect I may be house-bound more often.
At least....until mid June. We've booked a week away at Uluru! Can't wait.

Good morning everyone, well it is my first day in the office, and I am getting set up.

Everyone has come by to see me and say hi and welcome back.

It was nice to have David drive this morning and get me here safe and sound. I am really going to enjoy having a "driver".

WFDT? I have no idea, I know I have something on the menu at home, but for the life of me, I have no idea what it is. I am sure it is meatless, for meatless Monday. It might be Cauliflower Shawarma.

David really likes this one, I use this recipe for the spice mix http://www.veganricha.com/2015/04/cauliflower-shawarma-spice-roasted-cauliflower-wrap.html
and I use this recipe for the Cucumber Yogurt sauce, but I use the coconut milk version of yogurt - http://www.myrecipes.com/recipe/cucumber-yogurt-dressing-0

Happy Monday all,

I hope you all had a happy Mother's Day. I sure did! Elizabeth took me for a pedicure on Saturday. We then went to Liam's dance recital. He is the only little boy and they did the cutest thing. They had him come out on a John Deer Tractor with the little girls following him to the song, "They Think My Tractor's Sexy" Then they did their tap show - it was precious and many said it was the highlight of the show. Sunday after Church Elizabeth, Jay and the boys took us out for breakfast. Doug and I then worked my flower beds. They look so pretty!! Stephanie and Marty asked us to dinner so we headed to Kearney about 4. Steaks, bacon wrapped asparagus, garlic shrimp and a salad. It was delicious. They had worked outside all day and the girls were pooped. Baths and in bed by 7:30, so we had a nice quiet visit. Home in horrible wind, lightening, rain and even a tornado warning. Oh yea, Matthew called in the afternoon. They were moving Katlin (her lease is up May 15) into "their" new apartment. Matthew's lease isn't up till June 30 so they are setting it all up for "them", but Katlin is sleeping on the couch. So neat I think!! I was actually surprised with all they have going on that they remembered to even call.

Brandi ~ Congratulations on your first day. How exciting. I hope it all goes well for you.
I saw over the weekend on Guy's Big Bite where he made cauliflower steaks. They looked so good. Have you ever had them? I am going to make them. YUM!!

Alison ~ Welcome home. Yes, I am loving your River Boat report. I am loving it. I am also glad that I haven't missed your WDW trip report. I even went back to see if I had missed the link. Were the kitties glad to see you? Whenever I leave Sophie, pretty ignores me for 1/2 day. I think, she thinks, she is punishing me.

PIO ~ I really do think you need to quit your day job and become a photographer. Your pictures are breath taking!!

It is cloudy again and they are calling for rain. My new flower beds are loving it and also the yard. The farmers - not so much!!

WFDT ~ Chicken fajitas, home made tamales, and guac.

Make it a great day!

yummy tamales, I have not made them in forever, I should do that again soon. Thanks for the reminder.

Yes, I have tried the cauliflower steaks, they are good, I even do Kung Pao Cauliflower that is really REALLY good.

Brandi - I'm going to find time to try that cauliflower shawarma recipe. I think DH will love it. Sounds like you're going to have a great time at your new workplace.

Ellen - Your Mother's Day sounds perfect! I bet Liam was the stand-out at that show! Please let us know how you're doing. I heard about the tornadoes today and thought about you. Hope everything is well at your end.

Tuesday night and DH made the standard meal tonight. I just had the spicy lentil dish and a bit of sweet potato. Whilst I would prefer some variety for Tuesday night, it really is nice to come home and have dinner waiting for me.
Tomorrow night is dinner at mum's and I'm really looking forward to it.

PIO so far so good.Lots of training for me to catch up on, and just overall, getting back into the swing of stuff.

WFDT - Grilled asparagus, cucumbers, and bell peppers for me, and David will add grilled chicken to his. Our CSA should be starting the end of this month, so I am hoping to get some great greens in our first couple of baskets. I love Kale and Spinach.

Our old kitties were like that. But the ones we have now are fairly young (all under 7 years old) and seem thrilled when we get home. My little Tesla is the youngest and he is so happy when I get home. He follows me everywhere for the first couple days. He's calmed down now, but he was so cute when we first got home.

Dinner last night was zucchini boats and pan seared Mahi Mahi. Tonight dinner will be something on the way as we have band tonight.

Ours was good.

Tonight is a repeat of the same, except we will have asparagus instead of broccoli.
