The What's for Dinner Thread - August 2014 (recipe index in OP)

ok I have to share.... I just got an email from the bride. she has changed the venue for the Wedding and the reception, of Saturday's wedding. We booked the same hotel so we would not have walk far (hip issues) or drive (since we will be drinking). Ughhhhhh

Happy Tuesday all,

Brandi ~ Bess your heart!! I so understand how David is feeling. He is just waiting for the other shoe to fall. You have to keep talking to him and you are right - you need to listen to him also. My heart just hurts for both of you. I do know that you will get through this, but it's really funny how the brain will play games with our minds. Yes, I agree, maybe it's time to find a new PT. Have the injections worked yet?
I thought of you last night - for Ethan's Birthday they got him tickets to the KC Royals/Orioles baseball game. The kid loves the Orioles. They posted a picture of them at the game. One of the Orioles players threw Ethan a ball - during practice - and he caught it. To say the kid was pumped was an understatement. He called us and I have NEVER heard the excitement in his voice before. What a thrill for an 11 year old. A memory that he will never forget. He has always loved the Orioles, but now he is their BEST fan. Just had to share with you!

Alison ~ I am so proud of you. You have done an amazing job in getting your numbers better. Good for you!! And knowing you can cheat every now and again is even better.
Thanks for the zucchini boats. I have always thought they looked good, but had no idea how to make them. Thanks!

PIO ~ Is your Exchange student still with you?
I guess I missed that your Dad had been ill. Hopefully now that he doesn't have a gall bladder he is feeling better. Those pesky things can really make a person sick when they flair up.
Sounds like you are getting your carbs and sugar under control. I know I need to do this, but man, that's hard.

Bless Doug, he is on call this week. During dinner last night he got a gas leak call so he had to leave right away. He got home around 7:00 and got word that someone had hit a meter in a town about 35 miles away and it was blowing and had lost the town of about 500 homes. He left right away and I found out this morning didn't get home till 3:30 am. I was up at 6:30 and he was asleep in his recliner. Poor guy is going today on about 3 hours of sleep. I am hoping he can get to bed early tonight.

WFDT ~ Lemon and shrimp pasta, green salad and garlic bread sticks.

Make it a great day!

I have not started the injections yet, they cant get me in for another week. Still working on seeing a different PT.

Ellen it is so sweet to hear that they threw Ethan the ball, at the games we go to, they really look for the kids and always toss the ball to them. I have seen grown men and women fight off the kids for the balls, it is a real shame to see that. So I am glad he got the ball. He will remember that for a very long time.

David seems to be doing better today.

Dinner sounds goo too Ellen. Lemon pasta is always good.

We are having broccoli with "chez sauce" and couscous, David will add grilled chicken

Ellen - My exchange student has gone home. There were a few tears shed by us all when she left. It's funny....she was only here for 2 weeks but it felt like saying goodbye to 'family'. And yes, Dad seems better.

Brandi - I hope that you're getting what you need. :flower3: Hope you found a different PT.
And I'm sorry that the bride swapped locations on you. Can you change your hotel?

So life has been a little hectic here but it should be back on track now. My father is now home....minus a gallbladder.

I'm glad it's all solved. I wondered what the "medical issue" was. Glad it's solved.

My food plan is not too bad either. I've managed to keep the portion sizes down and have reduced the amount of carbs in my diet. Sugar? Well....some days I'm better than others. My goal for this week is to stay strong and stay away from carbs and sugar.

Good for you!

So glad to see your numbers are dropping and under control, that is AWESOME news Alison!

Well, I just found out that 4-6 is normal and I'm 6.7, so not quite there yet, but getting closer!

BTW, I have gotten so many compliments on my new bag, thank you again for arranging everything I truly appreciate it.

I'm glad you liked it. Bret was the one who actually got it, but I was the courier.

Well that's not nice, and to do it on such short notice. It does look like a lovely place to stay though.

Thursday night....and we ate out tonight. We had ramen noodles and it was yummy! I have to admit that I felt no guilt at all for eating carbs!

Last night was asparagus, bells, cucumbers, and tomatoes, David had grilled Chicken with his.
We will be leaving this evening and driving to CT. So I am not sure what we will have for dinner.

HI everyone,

I got the dreaded "BLUE" screen yesterday. I have been struggling lately with this computer. Lots of warnings and screens shutting down for no reason. I had called Dave (my IT guy) and he just kept putting me off. Well yesterday I was DONE!! He came right away and worked his magic and hopefully I am ok. Time will tell.

Brandi ~ safe travels my friend. And ENJOY!!!

PIO ~ Bless your heart. I bet you did miss your new friend. She sounded like she had a great time while she was with you.

Alison ~ You are doing great!!

Today was Liam's first day of Pre school. I walked over so I could see him. There were lots of parents there, so I played photographer for some. Then they would start crying and I am such a sympathize crier that I was right there blubbering like a crazed woman. I was a mess by the time I walked back to my office. But Liam was a trooper! He couldn't wait!! I went out at recess and got a Nana hug. Gee I love that boy!! He was having so much fun.

It is supposed to rain - even get some severe weather tonight, so I don't know if Doug is golfing or not. He will go out if at all possible. Ya know, it is Golf Night!!

WFDT ~ Stuffed peppers, cantaloupe, tomato salad and peach chrisp.

Make it a great day!!

Happy Friday all,

Hi everyone!! Hope life is treating you all good!!

We are down to 8 more days till Husker football - GO BIG RED!! We can't wait!! So this weekend we will be working furiously on the bedroom. Doug is on call so hopefully it is quiet for him and we can get some more done.

WFDT ~ Ham & scalloped potatoes, fresh green beans and beets, and watermelon.

Make it a great day and a wonderful weekend.

Last night we had (I had) Mac and Cheese stuffed meatloaf and creamed spinach. I admit dinner was late as I didn't get home until 6:50 and then had to make dinner. Fran asked for a turkey sandwich to tide her over (since I had made a turkey a few days before). She fell asleep after I made her the sandwich and then I found a receipt on the floor for a double cheeseburger from McDonald's and Chicken Snack Wrap from 5:10PM. No wonder she didn't wake up when I tried to serve her the plate of dinner. I'm not mad, but I wish she wasn't "sneak eating" on me. She lost 50 lbs while her leg was broken and I'm sure that she is slowly putting it back on as every time she has time away from me, she goes through a drive through to get something forbidden.

I lost a few pounds today as Darcy and I moved so many boxes of music that I'm sore. Saturday we are having a "finish filing the band music" party at our old house. The music is in the garage and I'm going to put other people to work to finish up the part which is not as important to me as the part I finished with Darcy's help.

Tonight we're having leftovers. The meatloaf and bacon wrapped flank steaks.

Ellen - The dreaded BSOD? Yes, that is the official term for it - the Blue Screen of Death! Hope that it's okay now.

Brandi - Yay for heading to CT. I hope the wedding goes well and that you're having a great time.

Alison - Congrats on losing more weight!

WFDT? I wasn't feeling well today. I had a headache and was feeling a bit ache-y. So, I lay down and the next thing I know, a couple of hours had passed. I was still feeling ache-y but the headache was much less. DH went to get some comfort food....burgers and chips. Yes, I know. Not on the low carb diet plan but it was what DS wanted for dinner.

Tomorrow is another busy day with a few musical activities to chauffer DS to. It is pretty cold still here so I'm going to dress warm and hope for the best. Flu season is not over yet here.

On the plus side....I managed to get a few vegies in the garden. I've got some cos lettuce, beetroot, carrots, broccoli and onions in. It's not a lot of produce i.e., there aren't that many plants in all; but that's all the space I've got right now. It's still too early for tomatoes to go in. And I still want to get some beans and snow peas down as well. We'll see how it goes.

We had an organize the band library party today. We got a lot done but not finished. We ordered pizzas and ate around 4:00 so I'm still not hungry. We have the leftover meatloaf so I need to figure out when to fit that in.

Brandi, the wedding looked lovely.

Everyone else, I'm too tired to remember what we have talked about.

Back on the band wagon this weekend.

This morning, we had the standard croissant for breakfast. But I balanced it up with a plate of baby spinach, a punnet of strawberries, 3 button mushrooms and about 30 g of cheese for lunch. It was a lovely colour plate!
And then for dinner?

It was another plate of colour. I decided to cook some chicken fajitas and sauted 3 colours of bellpeppers to go with it. I did sneak in some carbs at dinner....it was one wholemeal wrap.

Otherwise, Sunday was a great day here. We did run out in the morning for a musical concert with DS. Afterthat, I took it very easy and relaxed for the rest of the day.

Happy Monday everyone,

Brandi ~ Loved all of your pictures of the wedding. Looks like you had SO much fun. Just what you and David both needed.

Alison ~ You have to feel so much better getting all of your music organized. I know how hard you have worked.
You are doing great on the numbers and weight loss. Now if we could just get Fran to see how much better she would feel if she would join you. But I do understand - I have Doug that somewhat does the same thing. I guess the old standard - "You can lead a horse to water, but you can't make them drink" hold true with both of them. We have to keep trying though.

PIO ~ Hope you are feeling better. I just love that you are planning your garden and we are almost through with ours.

I received a lug of Colorado peaches on Friday. So I spent the weekend canning them. I got 6 quarts of pie filling and 7 pints of fresh. Yum, those are going to taste so good when the snow is falling.

I will probably not be on tomorrow as we have a funeral. Last Friday we lost another wonderful man. This church is still hurting from losing Tom. Now we lost Bob to MS. What a dreadful disease, he was only 65. This man always had a smile on his face and a wonderful outlook. Never once complained! This will be another BIG one, plus the Freedom Riders will be a part of the ceremony. There will be approximately 75 riders. This will be a beautiful part of the ceremony. I will take pictures and post them on FB - you will just have to see this!!

I have a Dr. appointment tomorrow at 8:30 am that I tried to change, but would have had to wait another 6 weeks for, so I am keeping it. Then a hair appointment at 5. So a very busy day for sure, plus I have to work in the kitchen for the meal after the funeral. Oh boy!!

WFDT ~ Homemade tamales (a little lady from our Hispanic congregation gifted us with them yesterday after church) Spanish rice and fresh peaches.

Make it a great day!

Morning everyone.
It is a new day here, the sun is shinning, and life is good.

I have decided that I will no longer be down about this stuff happening, and that I will be my self again.

So David and I are doing great, and we are looking forward to our vacation and our anniversary.

We will be leaving in 17 days. Whoop

last night for dinner was soup again, it was easy and quick since we had not been shopping, since we were gone all weekend, it was something that just filled the empty spot.
Hope today is a great one for everyone.

PIO - glad you're back on the bandwagon!

Brandi - that's good you're turning things around. Sometimes it's all in the attitude.

Ellen - sounds like you've been very busy!

Sunday we were lazy I made a plate of brownies for lunch and we had leftover meatloaf for dinner. We watched TV and worked on plans for the end of our Mississippi River Cruise. We picked a hotel and booked our return airfare. Plus we discussed excursions and dining options.

Last night I was substantially better, we had grilled swordfish kebabs along with zucchini, mushrooms, onions and rice.

Tonight is band night so we'll have something from a drive through. Perhaps I'll get a grilled chicken salad with balsamic vinaigrette.
