The What's for Dinner Thread - August 2014 (recipe index in OP)

Last day of work Friday :yay:

Alison ~ I agree!! When Matthew left his last apartment, we worked for a whole day cleaning. I know we left it cleaner than when he moved in. But he did get his deposit back.
How did they like the apartment? I am sure they were just thrilled. Bless you for doing this for them.

We had a ball last night. Those little ones - Liam and Lilly were SO excited. Oh how I wish I could bottle that excitement. I know this will sound so sappy but I am going to say it - Last night was one of the best nights of my life. One I know I will never forget. The weather was beautiful. The kids had so much fun and even us Big girls did a few games. Every one (it's a town owned fair, so lots of friends helped) was in such a good mood. We didn't see one child throwing a fit or being mean. Truly it was a picture perfect night at the County Fair.

Jay and Elizabeth are going to a Golf Benefit this weekend so the boys are coming to stay with us. I can't wait!! We are planning on going to go to the movies tomorrow night - Minions - is playing.

Today is my last day of work for 10 days. I am so excited. I love my job, but I am SO ready to be out of here for awhile. I have 3 great ladies that are coming in to answer the phone. I will try to pop in during the week, but if I don't please play nice and I will for sure be back here on Monday.

WFDT ~ Pizza and pop (the boys choice - they don't get pop very often. But hey that is what Grandma and Grandpa are for)

Make it a great day!!

Ellen I'm so glad you had such a wonderful time last night. It sounds so much like where you come from things are much simpler and there is much more community and pleasantness than where I live. Not that there is anything wrong with where I live, it is pleasant. It's just a little distant, we don't know our neighbors, or really much of anyone in town for that matter. Our county fairs rival giant theme parks and there is no homespun charm.,

I'm pretty sure they were happy with it. It's hard to return a place cleaner than Darcy and I get it, but we aren't as picky when we get the apartment back, just as long as we don't have to spend three days cleaning it to put it back up on the market.

What a busy weekend! :faint:

Our exchange student is fun....but boy....fun is hard work! We spent the weekend pretty much showing her around Melbourne. I managed to amuse myself with some shots.

Street art around Melbourne.

Hidden details.

Exploring the Melbourne laneways and arcades.

The (Anglican) St Paul's Cathedral.

The (Catholic) St Patrick's Cathedral.

We've eaten soooo much this weekend. I seriously am going to explode!

Hi everyone.... Happy Monday

I had an appt with the GYN Thursday after work, she did an exam and reviewed all my charts but did not do anything else. She gave me orders for the ultrasound.
Friday I called and got the first opening they had which is Tuesday at noon. So tomorrow I will have the ultrasound.

The Dr said she could see the spot on the MRI, but wanted to see what it looked like on the Ultrasound before she gave me any information. She did tell me that it was small, but I have no idea what small means?

So hopefully within 48 hours of the test I will know something.

David and I are doing ok, we just dont talk about this much. It gets him too worked up.

Ellen, we had a good time at the game, and it did finally stop raining, and we got the whole game in. The O's won....

I will try to be better about coming online, I just find that my mind is wondering too much lately. When I had my physical back in feb my bp was 117/60, Thursday my bp was 140/90, the Dr said I should try and relax, I am so not sure I can do that until I know something.

Well I had the ultrasound.

Did you know there was "inside" ultrasound? I did not and therefor I was not prepared for my appt.

Other than it being very uncomfortable and invading, all she would tell me was it was still there. The dr. has 48 hours to review and get back with me. So I am hoping to hear something soon.

I didn't know that!

I hope you get some news soon.

Morning everyone,

I am back after a very busy week. We got so much done on our bedroom, but in the process made a LOT more work also. We decided on Wednesday to take the carpet out and put in a new sub floor. So that will put us back quite a bit, but will be so nice also. Then we got to the closet and found a real mess there. That's what happens in a 120 year old farm house. Once you start something it's hard to know when to stop. But all in all we worked our fannies off and when we left this morning felt that we really did make a difference. We are almost ready for sheetrock. We are so excited, but now we will be restricted to evening and weekends. But it is progress!!

We did take Tuesday off to take Doug's Dad shopping. Our nephew is getting married in September and he needed a new suit. What an experience that was, but we did have some fun also.

Since it was "vacation" I didn't cook but one breakfast and 2 lunches. We ate out most of the time. Usually we grabbed a sandwich on the way to or from the dump. Evenings we were so tired that we grabbed fast food. I don't want to see another chicken wrap or hamburger for awhile.

We both were glad to get back to work this morning. We did have fun and laughed a LOT. But dang we are bruised and sore.

Brandi ~ Any word yet sweetie? I would have been so shocked also about the "inside" ultra sound. I will be so glad when you find out what is going on. This hanging is hard!!! Prayers will continue!! Please let us know.

Alison ~ You are right!! I sometimes am really jealous of all the things you can do and go to, but I do love the small town life also. We moved here to Lexington from St. Louis. So I grew up in a large city. But now that we live in small town America and then on a farm. You get me to the city and I love it, but can't wait to get back home. ;)

PIO ~ Loved your pictures. The ones of the Cathedral are stunning. When we visited, I swear I have 100 pictures of that stained glass window. Wow truly amazing!! That was probably one of my highlights. Thanks so much for sharing. So glad you are enjoying your student.

Doug has to golf league tonight. They are in the playoffs, so I am going to be home alone tonight. I have some wash to do and the kitchen floor is a mess. So yea me!!

WFDT ~ Goulash, sweet corn and cucumber and tomato salad. I love summer!!

Make it a great day!!

Morning everyone.

Tomorrow will be a week since my MRI and I still have not heard from the Dr. I am making a call this morning to see what is going on.

I have been eating a lot of fresh veggies, tomatoes, cucumbers, bell peppers, and such, David has been adding chicken, fish, and pork chops to his. But mostly no cooking, just fresh raw veggies, and he grills something.

Easy clean up too. For that I love Summer too.

Ellen,

thanks so much for the continued prayers. Hopefully I will know something soon. Fingers crossed.

Hello everyone!

Ellen - You live in a 120 year old farmhouse?? I REALLY need to come and visit you one of these trips and invite myself over!! Your shopping sounds fun.

Brandi - Thinking of you lots. I hope you get some news from the Dr and soon.

Tuesday and it was back to work for me today after 10 days of time off. I don't know if I feel rested.....the time off was busy and it just felt like I was running after a million things at home; rather than running after a million things at work. Still, it was nice not to have to think about work for a bit and recharge the brain.

I have to say it was nice to walk back into work this morning and find that I was missed. Always nice to have a ego-boost first thing in the morning.

Keep well everyone.

WFDT? It was roasted sweet potato with a spicy lentil dish and salad.

Last night for Dinner - I think with all the changes David has made of the past months it is best to describe him as a flexatarian and I am plant based.

Last night I cooked falafel with Collard Greens mixed in and without oil. I also made a non diary yogurt sauce, I substituted non diary greek yogurt . The falafel, was a little dry and I will try again, but the sauce was soo bright and made the dish. David is still talking about it this morning, telling me that it was such a nice addition to our menu, he wants it again. I forgot to take photos :( . The inspiration for the falafel was http://minimalistbaker.com/better-than-restaurant-falafel-vegan-gluten-free/ and inspiration for the sauce washttp://www.myrecipes.com/recipe/cucumber-yogurt-dressing-0

Good morning all,

Brandi ~ Sweetie, you need answers. It has been too long!! This is the one thing I hate about the medical field. They scare you to death and then never tell you anything. I would make it my mission today to get someone to talk to you. Whatever the results are you need to know!!!
Your dinner sounds amazing and the recipes are easy enough even for me. :rolleyes1

PIO ~ Actually our house is 124 years old. You will love this story - Every time the wind blows just right we find old checks in the yard. We have found these for years - I swear there is a stash of money somewhere. These checks are from, Dawson County Bank and Farmers State Bank (these banks are from the turn of the century), dated in the 1915's, written in pencil and for cattle and hogs for amounts not over $2. We have been collecting them and protecting them for years now. When we took up the floor in the bedroom we found a newspaper of comics dated 1925. Elizabeth is going to take them all and shadowbox them. So cool!!

Doug ended up not golfing last night and we worked till almost 9 pm on the bedroom. The sub floor is almost down. Once all of this piddle work is done, putting it back together will be so much fun and should go fast. I am going to have to get some paint colors and furnishings picked out. I have changed my mind so many times, but I really need to get it figured out.

Beautiful weather here that last few days. Low humidity and in the 80's. Too bad it wasn't like this last week. It was SO hot and we got over 3" of rain in 4 days. But the farmers are loving it!!

Today is Doug's birthday!! I sang to him this morning, teehee! Matthew is coming home this weekend so we are having a Birthday weekend - my birthday is next week. So nothing planned today but we will party on Saturday with everyone. I can't wait!!

WFDT ~ Stuffed tomatoes w/ tuna salad, crackers and brewed tea. Have I mentioned lately how much I LOVE summer. :D

Make it a great day!

Ellen - Happy Birthday to Doug! Party on Saturday? You'll have to tell us all about it!
Your house sounds great! How awesome to find the old cheques.....but can you cash them in?????

Wednesday evening and all's well down under. Dinner was at mum's tonight and it was also the start of a new resolution for me. I need to lose some weight and have started to reduce the carbs, sugars and portion sizes. So whilst it was nice to be at mum's, I completely cut down the rice to 1/4 of what I would normally eat.

Good morning everyone (It's still morning here)

Brandi ~ Any news yet?

PIO ~ You will be surprised what a difference that will make. I am down about 25 pounds and at my goal weight. Small changes really do make a huge difference. Good luck!
No we can't cash the checks. They are over 100 years old. :)

Alison ~ Hi my friend. I hope you and Fran are doing ok!!

I took Ethan to his first day of Middle School this morning. He was SO nervous, that by the time I got him there I was almost sick. Bless his heart. We were almost to where I was to drop him off and he saw a friend and he was out of the car in a nano second. I do know tomorrow will be better. The Church is only a block from the MS so he will just walk down and we will go home together. I sure have thought of him all morning.

WFDT ~ Chef salads, with steak, crackers and sweet tea.

Make it a great day!

Happy Thursday everyone,

I guess I am the only one eating and here. :) Oh well, I hope you all are having GREAT and GLORIOUS days.

Ethan did just fine yesterday - we all knew he would. Jay happened to be home yesterday afternoon (he is an engineer on the Union Pacific Rails) so he called and told he was going to go pick him up. I was a bit disappointed as I really wanted to hear how his day went. But about 20 minutes later I get a frazzled phone call from Jay, asking where I let him out, as it is a total Cluster/MESS at the Middle school. I told him he jumped out before I got him to the drop off, so I had no idea where he would be. About 10 minutes after - in my office walks Ethan. I called Jay and we waited outside for him. I got to hear all about his day. He got along just fine and he couldn't wait till he could go again. :D Jay and Ethan made plans for a pick up point, so there won't be any more confusion when he is being picked up, otherwise he will just walk to the Church.

I am heading to Kearney as soon as I get off of work. Doug is golfing and I am going to go play with my girls. I can't wait!! Stephanie is going for a run and the girls and I will go for a nice long walk. Harper loves her walks and Lilly will ride her bike.

WFDT ~ I have no idea, but it will be a fun night.

Make it a great day!!

I've been reading along but have been so busy with going out to the park and meeting up with a DISer who is in town that I haven't had time for anything! Yesterday and today Darcy and I are working to get #4 ready to rent. This is a record! We will have the place up within a month of the old tenant moving out!

Then tomorrow is more Disney fun and another DISmeet for dinner!

Last night we had take away Chinese food. We might just eat those leftovers tonight!

Wow...........late for me being here today. But I am here ;)

Brandi ~ I sound like a broken record.............any news?

Alison ~ Good for you!! I think it is great that you are meeting friends at the parks with Dismeets. Lucky you!!

I had a blast with the girls last night. We went to a beautiful park and Stephanie got her run in while we played. Then we went and got dinner and brought it back to the park to eat it. Lilly thought that was the neatest thing ever.

We are working on the bedroom tomorrow. Then tomorrow night we are all meeting for dinner. Matthew will be home, so it will be great to have everyone around a table. The kids keep asking me what I want for my Birthday and I keep telling them - just being together is all I need.

WFDT ~ BBQ chicken, scalloped cheese potatoes and roasted asparagus.

Make it a great day and a wonderful weekend.

Ellen - Congrats on getting to your goal weight. Will we see pictures of the bedroom? It sounds like you're being kept busy.

Alison - Enjoy the DisMeets. I am so envious!

Brandi -

Well.....I was good with portion sizes and food until today. I ended up with an impulse visit to get some photography done and ended up having a roast beef roll for lunch....the roll is NOT on the carb-free meal plan. :( And then I walked past a coffee cart and couldn't resist the coffee and churro special. Now I wish I hadn't gone. :(
Oh well.....back to being good for dinner.

WFDT? I have no idea. I may well just have vegies or a salad for dinner. DH just asked me the same question....and I don't think we have come to any decisions yet.
Have a good weekend all.

Good morning my Dis friends,

I come to you this morning on a brand new computer with windows 10 and a fancy schmancy new high speed internet. We went fiber instead of cable with the phone company. I was down all of yesterday as all of this was installed and everything was tested this morning. You all know how I just "love change" so this is a challenge for me, but so far I am really loving it. I have no choice so we shall see. The biggest challenge so far was to remember my password for the site. I hadn't had to log in for years, but today I did and for the life of me couldn't remember it. Now I have my new log in written down.

PIO ~ Don't let one slip derail your diet. I heard the neatest thing the other day.........One bad choice or bad day will not make you gain weight, just like eating one salad will not make you thin. Good advice!! You can do this!
My goal now is to maintain.

Brandi ~ Thinking of you my friend.

Alison ~ Are you still playing?? Good for you, I am SO jealous!!

We had a great time on Saturday and it was wonderful to have us all together. That in itself was the BEST Birthday present ever. We did NOTHING on Sunday. We got home from church and both of us took a nap, then went out for dinner. It was a nice day.

WFDT ~ Thanksgiving dinner!! I had froze them and there is nothing better than a turkey dinner in August. Love it!!

Make it a great day!!
