The What's for Dinner Thread - August 2014 (recipe index in OP)

It has been a while since I checked in here! Last night was the first night that I cooked dinner in over a week! We have been eating take out, going out or feasting on the leftovers from either of those options. We had szechuan chicken and rice. I made it a little too spicy for Fran, but it filled us up.

Tonight we are leaving super early for band and having dinner at a Sizzler near our rehearsal site. I love the salad bar there!

Ellen, I'm glad you like windows 10. We have a windows 8 computer that we need to upgrade and see if we like it cause we hate windows 8. I'm glad you enjoyed your family time for your birthday!

PIO, don't worry about a little stumble in your diet, if you keep up the good habits for the most part, it will all even out. That said, I still can't get ahead!
 
Ellen - Happy Birthday, my friend. I hope you have a wonderful day with loved ones! Are you doing anything special?

Alison - I turned over a new page this week. Day 2....and my portion sizes have been reasonable plus I've minimised carbs. Still need to totally eliminate the extra sugar in the diet but I've been pretty good this week.



It's Wednesday night and it was dinner at mum's. Still a long way to go until the weekend, but I'll be glad when this week is over!

Alison~ The more I work with windows 10 the more I like it. Makes things very easy. I really didn't like Windows 7 and then 8, as it was not user friendly. I could get where I needed to go, but it took longer. Windows 10 is very quick. And now that we are on fiber it is even better.
I hope you had fun at Band and I agree I love Sizzler. We don't have one close anymore though.

Pio ~ Thanks for the Birthday wishes!! We got together on Saturday with all of the kids and grands. Last week was Doug's Birthday, and Matthew was home, so we celebrated on Saturday. We had a ball!!

We are in a cold spell right now. We aren't to get up to 75 today. I was reaching for the comforter this morning. Burrrr But we are to be back up to the high 80's tomorrow, so it was just a fast mover. We have gotten over 3" of rain this week also. We really need to dry out a bit. Plus this morning we had an earthquake. :scared: :crazy: :scared1: Yea, can you believe it? It is all I am hearing on the news this morning. It was only a 3.9, but in Nebraska - Weird!! People thought it was thunder. Just crazy!!

Good afternoon everyone,

Sorry I have been away.

I got the news, it is a hemorrhagic cyst on my left ovary - this means it is filled with blood, and can burst, this one flares during your cycle. It is painful and according to the Dr it will get more and more painful. I have multiple mature cystic teratoma's on the cervix. Which again can be painful and it flares during ovulation.

The Dr wants to take a wait and see approach, and monitor every month with a "inside" ultrasound. Then do an ablation, and after those steps my Insurance will let me have a hysterectomy.

I am going to go get another opinion.

I have a Dr. appt on Friday to see the Hip specialist.

I have having a grand time!

Hope everyone else is doing great and know that I think of each of you often.

Thanks for the Birthday wishes on Facebook. I really felt special!!

Since we celebrated on Saturday, I was just expecting a quiet night. Doug got home a bit late and then grilled the steaks. He suggested we go for a ride (our favorite thing to do after dinner). We ended up talking to friends in the middle of the street (we were going one way and they were going the other). I bet we had talked for 10 minutes when another couple pulled up beside me and the 3 cars had windows down and we all chatted. Finally after about 15 minutes a car came and wanted through - How dare them. So we all decided ice cream sounds good and met back up at Dairy Queen. We sat there and had a great time till almost 9. What a wonderful evening with good friends.

Doug is golfing tonight so I am scrubbing and waxing the kitchen floor. Yea me!!

WFDT ~ For me, an egg sandwich and a cucumber & tomato salad. Probably a steak for Doug at the Country Club.

Hello Ladies!

Back to fixing dinner again. I made Meaballs and Mushroom sauce last night and I was very yummy! I'm not sure if I'm going to be making dinner tonight. I have some Nurenberger Bratwurst in the fridge, but Fran went into the bedroom about an hour ago to lay down. I'm not sure if she is going to be getting back up tonight. If she doesn't, I'm putting the brats in the freezer and making beef ravioli with Alfredo sauce for myself.

So this morning was my hip specialist appointment.

I have a tear in my glut medial muscle, a tear in my tendon, and another cyst on my hip bone.

It just keeps getting better.

I told him that I am going to the Grand Canyon next month for 12 days of hiking. He recommended a course of action involving PT, sound waves, and an injection... It is not covered by my insurance.

Ughhh
 
WOW, this week just flew by. I can't believe it's Friday already.

Alison ~ You made me remember a favorite of ours. Meatballs in mushroom sauce. I used to make those all of the time and we really like them. I haven't made them in a long time. Hummmm, that will be what I fix for dinner on Sunday. We like ours over rice. Thanks for the reminder.

Brandi ~ Bless your heart, but at least now you know why you were hurting so bad and that it can/will be fixed. Just remember it's just money - your health and pain are top priority. {{hugs}}

I am trying really hard to be a good wife today. Doug came in and asked if he could golf in a tournament tomorrow. It was a little funny, as he really never HAS to ask me (or me him) permission to do something. But I think he felt guilty for playing all day and not working on the bedroom. I wanted SO bad to say, "NO, are you crazy??!!". But I didn't, I told him yes. He was like a little kid who got to go to the fair or stay up late. :yay: So I think I will also take the day and go to Kearney to do a bit of shopping. I have asked the girls if they want to go and the only taker I got was Lilly. So her and I have a date.

WFDT ~ Pulled BBQ brisket (in the crock pot), sweet potato fries and fresh strawberries.

Brandi, I'm sorry about all the tears and that none of the fixes are covered by insurance. I hope that the PT and other stuff helps you for your trip to the Grand Canyon.

Ellen, I'm glad that I could jog your memory about an old favorite. It one of mine too, and we like it over rice as well. I now buy the little cups of ore cooked rice and I get brown and Fran gets white. It keeps peace in the family.

Tonight we will be having Raspberry sauced pork chops, zucchini boats and summer salad. I'm trying to cheer myself up this afternoon making bacon wrapped hot dogs on the grill.
 
So the injections that are not covered, I decided to just go ahead and pay for them. If it helps it is worth it!..

Went to a O's baseball game last night with friends, and had a great time.
Today is my company picnic, should be kind of painful...lol

plus we have errands to run afterwards. so it should be lots of fun today.

Well we made it thru the Company picnic....

Got all of our errands finished, which feels so good, when you get everything off your list.
I was able to fit into a dress I already own for the wedding this weekend, and we are almost finished in preparing for the grand canyon. Everything seems to be falling into place.

David had a minor breakdown this weekend, he does not like all these things wrong with me and I think his mind is wondering on him. He will come give me a big hug and tell me that he cant live with me... I keep telling him that I am not going anywhere, but he is scared. I cant seem to change his mind. I am hoping that getting away for a few days will help.

We leave Thursday evening for CT, then Friday we will finish the drive up Stowe Vt, where our friends are getting married. There is a party Friday evening, Married Saturday early evening, and then we drive home on Sunday morning it should take us about 9 hrs.... :(

Tonight for dinner is a summer squash and potato soup, that is fat free and vegan. I made it yesterday and David declared it a winner, so that will be tonight's dinner. I always make my soups the day before and reheat when ready to eat, for some reason I think they taste better the next day.

I had a nice weekend. I took Lilly shopping on Saturday and got her a new dress for preschool. She starts on September 1. Liam's preschool (here at the church) starts this Thursday. I can't believe these 2 are ready for preschool already. They are both SO excited.

Yesterday we worked on the bedroom. We are down to the little piddly stuff that has to be done and square to be ready to sheetrock. Once we get to that point it will go fast. I can't wait - only 13 days left till College Football starts. And once that hits, it will be very hit or miss when we can work on it.

Brandi, how sweet of David to tell you how much he values you, but worrying will do no good, but give him an ulcer or worse. I hope the injections give you some relief.

Ellen, the zucchini boats are filled with sautéed onions, the scooped out zucchini and parmesan cheese. They are a great side item or could evn make a meal for a vegetarian. I'm glad you had a fun weekend. I can't believe they are going to preschool, I remember when they were born!



Last night I roasted a turkey and we had stuffing and green beans with it. I thought it was really good. I also prepped tonight's dinner which is going to be roll ups. AKA bacon wrapped flank steak. I'm fixing it on the grill with some asparagus, and for dessert, I'm trying a new reciow for caramel filled apples on the grill.

I saw my blood sugar doctor this morning and I must be doing good because my A1c which was 8 something in January is down to 6.7. This means that as long as I am good most of the time I can occasionally cheat and have something I'm not supposed to!

So life has been a little hectic here but it should be back on track now. My father is now home....minus a gallbladder.

My food plan is not too bad either. I've managed to keep the portion sizes down and have reduced the amount of carbs in my diet. Sugar? Well....some days I'm better than others. My goal for this week is to stay strong and stay away from carbs and sugar.

Well now that I have the injections, I can't get in to see my PT, she is on vacation and booked up right after. Ughh. If it is not one thing it is another...

I have a waitlist option in but I think I might try another PT.

Preschool, and 1st days are amazing, please take a photo. :)


Sheetrock.. do you remember when you had to sand it and it took forever and got dust evereywhere. I am so glad they came up with sponge and water for getting flat and even now!

The zucchini boats, sound really really good, and cheese is the one thing I truly miss in my diet. I have found some good replacements, but there is NOTHING like the real stuff. Maybe I should go back to including some cheese :eek:

BTW, I have gotten so many compliments on my new bag, thank you again for arranging everything I truly appreciate it.

We are heading to Stowe Vt this weekend for a friends wedding. I have never been there before so it should be amazing.

Glad you Dad is feeling better and is home.

To catch you all up on things going here.

My Aunt Pat, that died last year, I had to run off to Texas last July to be with her, her husband, and my father. Her son did not make it. Well I got a call her husband, my uncle Ken, has Stage III lung cancer and is in Forth Worth, seeking treatment. He is staying with his Daughter and Son in Law.

Then David's uncle Bill who lives here in Va, died while eating breakfast his wife (Aunt Billie).

Then we found out that my Uncle Ken's Son in Law has Stage II brain cancer. I can't imagine how she (Uncle Daughter) is holding herself together.

As far as David, he is doing ok, I think part of it my problem, I just keep acting like nothing is wrong, and I think he does not know how to talk to me about the worries he has. I am trying to do better about letting him vent and talk to me about it, but I find my self telling him that it really is not a big deal, but I just dont think he is buying it... I mean it is a medium sized deal,(lol) but it just hurts and could be dangerous, but it is nothing like Lung Cancer or Brain Cancer, so to me it is a bump in the road, but nothing like others that are sick. So again I think I am part of the problem and I am trying to do better. I need to take better care of him.

Thanks so much for being here and letting me "talk". This is what he needs to do also. I realize that b/c of you guys, so thanks again.
