We got a call last night about 7 from Doug's Dad telling us that Kathy (Doug's sister) had emergency gall bladder surgery that afternoon. Poor thing! She is getting home today so we are taking dinner to them tonight. It's just soup but I hope it hits the spot.

I hope Doug's sister is recovering well. :flower3:

Thanks so much for the good wishes for Kathy. I ran the soup over to her after work and she was tired but looking and feeling good. Bless her heart.

Brandi ~ I love my remote starter, itt is wonderful, I also have a heated steering wheel and seats. There is so many gadgets on this new car and I keep looking for the coffee maker. It has to have one somewhere, I just haven't found it yet. :dance3:
Your meal looks amazing. I fixed one awhile ago with butternut squash also and it was yummy. I think this is my new go to vegetable.

PIO ~ I love the idea of pot luck meals. Remember I work for a church - a Methodist Church - we love to eat and do A LOT of pot lucks. :rotfl2: The saying around here is, if you want them to come to a meeting etc. fix a meal. :thumbsup2

I am on hold at the moment with Nike plus. I hate being on hold!! I got a Nike fuleband while we were in Chicago and can't get the dern thing to charge. Well just got off and got the nicest representative and she got it all fixed up. I am so happy as I really like it. Do any of you have one?

Glad that Kathy is doing well, I will continue prayers for her recovery.

We really love butternut squash, we treat it like a baked sweet potato a lot.

I don't have a fuelband but I do have an up24. Similar kind of tracking device. I like it.

Thank goodness it's Friday night.
It's been a busy week at work this week and DH is in NorCal for work. He won't be home until the 16th; so I've got single parent duties as well.

Dinner tonight was leftover beef stew. It's the last of the batch I cooked at the start of the week. DS had packet noodles because he just didn't want to eat the stew anymore. I think I might have made way too much stew this time round. :rotfl2:

Last night for dinner was black bean burgers on butter lettuce with sliced cucumber, sliced bell peppers, sliced roasted poblano peppers, tomatoes, and onions.

 
Last night we did Bubble Up Enchilada Casserole. It was good, a great one to have for leftovers, but something I would probably get sick of after 2 servings. My fiance can eat leftovers until they're gone (woo hoo!) so he will like this for leftovers this weekend.

INGREDIENTS:
1 ¼ lbs extra lean ground turkey (I used Jennie-O)
1 (10 oz) can enchilada sauce
1 (8 oz) can tomato sauce
1 (15 oz) can black beans, drained and rinsed
1 (7.5 oz) can refrigerator biscuits, cut into quarters (I used my store brand Tops “Homestyle” biscuits)
1 cup shredded low fat Mexican Cheese (I used Weight Watchers brand)
DIRECTIONS:
Preheat oven to 350 degrees. Lightly mist a 9 x 13 baking dish with cooking spray and set aside.
Brown turkey in a large skillet or sauté pan.
Add the enchilada sauce, tomato sauce and black beans and stir to combine. Stir the biscuit pieces into the meat mixture.
Transfer the entire mixture to the prepared baking dish and spread out evenly. Bake for 25 minutes. Remove from the oven and sprinkle the cheese on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving.

7 per serving (P+ calculated using the recipe builder on weightwatchers.com)

NUTRITION INFORMATION:
307 calories, 34 g carbs, 6 g fat, 32 g protein, 4 g fiber (from myfitnesspal.com)

Yes the toe and hand warmers work wonderful. If my hands and toes get cold I am cold all over and just am miserable. But for the Northwestern game and last weekend for the Perdue game the temps were in the 30's and I was able to stay the whole game. They are inexpensive and really do work.

PIO ~ I hope your weekend is good. Sounds like the stew was good!! I love to make huge batches of soup/stew and them freeze them in single serving containers, then in the morning all I have to do is grab one and go. By lunchtime they are thawed.

I truly can't believe it is Friday already. My goodness where do the days go. Matthew is coming home this weekend and next week. He had 8 days of vacation still left and he can only roll over 5. Veterans day is Tuesday and the bank is closed so he just decided to use his vacation days and come home. I can't remember the last time he was home. I also have Tuesday off (Doug doesn't) so we are going to have fun. We have a bye week this week and next week we play Wisconsin there. So we have a few weeks at home - Thanks Goodness!!

I bought some hand warmers today at Sam's Club, I got 32 pairs for $13... I will try them this coming weekend in Cleveland. We were looking for the toe warmers but of course they do not have them in stock right now.

I am thinking we might need them for the trip.

So last night we went to a charity night for Wounded Warriors and it was a BBQ place, so of course I had to eat some Texas Brisket, with mac n Cheeses. So today my body has not been happy with me.. :(

DS and I have been doing a few take-out meals since DH has been gone. Last night, we had Japanese for dinner.

But tonight....I decided to make a spaghetti bolognaise. I figured we needed to have some home-cooking so that DH wouldn't think that all I did was eat out all week. This way, I can leave that to him!!

He's having a great time and I'm a little envious. Wish I were there.

In any event, I'm hoping to make it out to the garden store after I get my meat sauce done. I managed to prepare some of the garden beds yesterday and if I get to the garden store today, I can get some planting done. I am living in hope of having some flowers and vegetables ready by Christmas.

Brandi - I love the butterleaf lettuce. Having said that, I'm about to put in some red leafed lettuce in the garden. I wanted something red in time for Christmas; and I wasn't after flowers.

Well....all this talk of handwarmers. I'm actually knitting some fingerless gloves for someone on the Dis right now. She put out a request via FB and I think I might have been the only one that saw it who knits. I've been enjoying the project. But it is way too warm to be knitting. :lmao:
