The What's for Dinner Thread - August 2014 (recipe index in OP)

Good morning! It's Saturday here and the sun is shining. Spring is truly here and whilst I'm not looking forward to hayfever season, I am pleased to have the warmer temperatures back. Sadly, the weather forecasters think it might be a long hot summer. I don't mind the warmth; I don't like it when it gets too hot here.

Brandi - thanks for that link. I'm sitting here enjoying it right now pretending I was hanging out with you and David last night. Hope the concert was great.

Ellen - Hope it warms up a little for you. It is way too early to get too cold or too hot. Did you get some of your to-do list done? Sounds like a busy weekend without Doug.

We have the standard cleaning to do this weekend. And we are changing the bed sheets as well; so there will be a ton of washing to get done as well.
DS has a music concert to go to tomorrow; so we've got to get everything done today.

Make it a great weekend!

PIO- we had a great time and he sang our song so it made us both very happy.

glad you liked the song.

We have a Bourbon and brew festival today at the horse track, so we get to watch the ponies run and have a few drinks.

I am looking forward to the food trucks... http://www.brewandbourbonclassic.com/home/

then tonight we are going to celebrate the 200th anniversary of the National Anthem, in front of Ft. McHerny (where it was written) on a fireworks dinner cruise. It will be televised on public television I believe.

we will be on the fireworks dinner cruise , I am super excited.

Brandi - Mobile food trucks are not big in Australia. I'm envious. They are getting more popular so I'm hoping that we will have more variety to choose from. We tend to have stall/tents; so I guess it all works out in the end. Have a great weekend.

....sorry that I never posted MY crockpot dinner, but my friend (whom we are going to WDW with) texted me a link to a blog that features at least 30 different GF crockpot chicken recipes! I used one of them last night, called Vietnamese Chicken....it came out really good! :thumbsup2

Tomorrow my parents arrive and no we're not ready. There are just too many things to do before they get here so we'll concentrate on clean sheets. Darcy cleaned all the bathrooms (except the Master) yesterday.

I really want to wash the many massive windows but we're having excessive heat warnings and its just so bloody hot! There are monsoons off the coast of Mexico and they have been creating humidity like folks on the east coast experience.

I used the BBQ grill at the new house for the first time. I made Rib Eye steaks and they came out just great! I think I'm going to love entertaining at this house, we just need to get settled enough to have people over.

what time are you putting on those steaks? :hyper:

Alison - Have a great visit with your folks. Is this the first time they are seeing the house? I hope it cools down a little in a month or so.

Kimmar - Those steaks could be going on from 16 - 17 October. Feel like hopping on a plane to go to Long Beach? I'll be there visiting Alison on those dates. :)

Monday madness,

Alison ~ Have a wonderful time with your parents. I know they will love the house!

Brandi ~ I was so glad you and David had such a great night.
Your festival sounds amazing. You are so lucky to be able to take advantage of things like that.

PIO ~ You are coming to the states again? :cool1: I am hoping you get your trip report finished before you get here. I have so enjoyed every single minute of it. Will you be doing another one?

Kim ~ I - being the crockpot queen - :rotfl2: would love to see those recipes. GF or not I would love me a good new way to fix chicken. Please share!!

Well I don't care if I see another apple for awhile. :rolleyes1 :dance3: I got 24 quarts of applesauce done, 10 pints of pie filling and 12 jars of apple butter. I am so glad that, that is finished. I love doing it and my house will smell good for days but man it is hard work. I will love it in January when the snow is blowing for sure.

Doug got his Dad's furnace in and running. He came home Saturday night at 9, took a shower and went to bed. We went to church yesterday and he went right back. He got home last night around 8. He took a quick shower. He didn't go to bed but he fell asleep immediately in his chair. He was pooped, but at least he is finished and his Dad is happy. That is all that matters.

WFDT ~ Chicken, mashed potatoes, corn and peach salad.

Make it a great day!

I think I had a little too much fun this weekend. I got a fever blister... It has been years since I had one. Ughh.

The food trucks were great, David had a hotdog, wrapped in Bacon, deep fried, with Nacho Cheeses sauce all over it.

It looked wonderful but I only smelled it... Wink Wink... Ok I had a bite and it was fabulous.

One of these days.... I will invite myself over to your house! Haha

Hope you have a wonderful time with the parents. and everything will be fine, no worries that everything is not finished yet, just another reason for a return visit.

Oh apples will be starting for me very soon.
I know what you mean, I love having it all and how fresh and wonderful they taste during the winter and waiting for spring to come, but man it is hard work.

Ellen - Yes, another trip for me. I have a family wedding celebration to attend in San Diego on the 11th October. I'll be flying in on the 10th. And yes, I will be finished my Anyone Game TR before I leave. There really isn't that much more to share. Just 2 days chill-ax in Hollywood before heading home. And not a lot of pictures; so it'll be done before month end.
My SoCal trips are documented here. http://www.disboards.com/showthread.php?t=2614243

I'll be adding to the other two Mad Dashes that are there already. Second post will have links to the Save the Date Mad Dash trip.

Brandi - Fever Blister? I don't think I know what that means.

And I'll do strawberry jam or any jam. I've stayed away from apple sauce. It's not something we eat a lot here. What do you do with it?

Tuesday night. Potatoes on the menu. It was nice to come home to food on the table.
Hope you're all well.

Morning Girlies,

Brandi ~ Oh how I hate fever blisters/cold sores. I use to get them all of the time but now I only get one or two in the winter. My Daddy use to get them all of the time and them me, the girls never get them but Matthew does. I do get a prescription - Zovirox for them and it is a miracle (albeit very expensive) cream. Knocks them out in 4 days. I find when I have had a fever or my lips get chapped is when they hit me.
I can't believe your first bite of meat was that hotdog. Good grief girl, you really go full speed. :rotfl2:

PIO ~ I love applesauce in the morning with a piece of toast, on the dinner table with pork chops - Pork Chops'n applesause - said in my best Bobby Brady voice ;). We kind of use it as a side to any meal. The apple butter is used like jelly.
I have REALLY enjoyed your SW mega trip report. Thanks for the link to your new one.

Alison ~ I hope you are enjoying your parents.

Kim ~ I must have missed it, but what did you do for your birthday? I know it was a good one.

We had a quiet night last night. Just what we both needed. I did get my bounty all stocked last night. And I will tell you this, even though it is hard work there is nothing better than to stand back and look at your full shelves. They are really predicting a hard winter for the Plains this year. With us living in the country there are times when we can't get to town so at least now I am prepared. We won't starve.

WFDT ~ meatloaf (in the crockpot) baked potatoes, green beans and biscuits.

Make it a great day!

Evening all. The work part of hump day is over and I'm just sitting here chillin' for the moment. I decided that I was sticking with a non-working day philosophy for tomorrow. Been spending a few Mondays and Thursdays dialling into work meetings; and I didn't want to do that tomorrow. So I rejected a bunch of invites. I have to admit that I'm feeling a little bit guilty right now....but I'm sure it will pass. :rotfl2:

WFDT? Dinner at mum's. Rice, curry and stir fries.

Ellen - Applesauce on toast sounds great. Do you have a recipe to share? I might try it out!
Ahh. Fever Blisters = cold sores. Got it. :thumbsup2

Baby Wednesday,

I am late getting in here today but it was SO worth it. Stephanie called me last night and wanted to know if I would like to go with her to her Dr. Apt. this morning. They were doing a 3d ultra sound. So I got someone to open the church and off I went. She had also brought Lilly and even though it was hard for her to understand what was going on, she did get to see the baby's face. Girls, it was so cute - when they were showing the side of the face, the baby was sucking on something. It was precious!! Man things are sure a LOT different than when I had kids. :rolleyes1 Everything is perfect and she is on for a 7 lb. baby. They of course did not want to know the gender and a few times the Dr. would tell us to look away. We love surprises!!

PIO ~ Applesauce is easy peasy. Here is what I do:
I cut the apples in 1/4's and take the core out. Place them in a sink of cold salt water (so they don't brown) when you have a pot full place them on the stove on medium. I add around 2 -4 cups of water. Cook them down until they are soft. I then run them through a sieve. Place the pulp back in the pot and add sugar to taste. I then ladle the sauce in jars and water bathe them for 20 minutes. They will last forever!! Enjoy

 to everyone else!!

WFDT ~ Tonight is Faith Friends and I think we are having Tator tot casserole. Doug will have a grilled hamburger.

Make it a great day all!

We have been having a nice time with my parents, however, Monday Fran about killed me getting the house ready! I walked almost six miles that day and barely even left the house. Our dinner plans were changed when we arrived at the restaurant we had planned on eating at only to find that they closed at 9PM and it was 9:15. (My parents got a later start than expected).

We ended up at the Greek restaurant next door, which was fine, the food there is very good too!

Last night we grilled steaks, my mom had picked up some artichokes at a farm stand on the way to our house, so we had those too. She made fixins for a green salad, but everyone was too full for any salad. But not too full for the Lemon Lime tart. We ate outside by the pool and it was a nice evening.

Tonight we go to Steakhouse 55 at the Disneyland Hotel for a special dinner. Tomorrow is my parents 50th wedding anniversary.

Ellen - 3rd Ultrasound! Such a precious experience. Glad everything is progressing fine with mother and baby.
Thanks for the applesauce recipe.

Alison - Enjoy your dinner. I'm so envious. Wish your parents Happy 50th Anniversary for me.

Good morning Ladies,

Alison ~ Happy Anniversary to your parents. Good for them!!

PIO ~ you are very welcome.

It is cold and drizzily this morning. Just another reminder that fall is in the air. Yesterday was just beautiful and Doug made mention that he was going golfing today. But I don't see that happening unless it clears off and gets nicer out. I have so much to do tonight and I was kind of looking forward to having the house to myself for a few hours. Does that sound terrible?

WFDT ~ If I am home by myself and egg sandwich but if Doug stays home we are grilling pork chops.

Make it a great day all!!
