The What's for Dinner Thread - August 2014 (recipe index in OP)

Hi everyone. It's Friday night here and I am so glad the weekend is here.

Ellen - I'm sitting here in the house by myself. It's just me for a couple of hours and I do enjoy the alone time. As long as it's not too long...right? :rotfl:

Have a great weekend!

Well the folks left today. We had a whole week of eating fest! Im at the grocery store picking up ingredients for stroganoff. We ended up with a ton of extra rib eye steak! So that'll be dinner tonight with some green beans. No dessert thank goodness! I'm surprised I didn't gain five pounds while they were here!

I hope everyone has a great weekend!

Sounds like you had a great time with the folks, Alison. Dinner sounds yum!

WFDT? I've taken some sea bream out of the freezer. I hope it thaws in time for dinner.

Fish Parcel Curry

I have been growing cabbage in my garden.

Today, I decided to try something a bit different with the cabbage. I blanched about 7 whole cabbage leaves for 2 minutes in boiling water.

Remove the cabbage leaves and plunge into cold water.

I had about 500 g of sea bream.

Cut up into chunks and wrap in the cabbage leaves. Use toothpicks to secure the parcels.

For the curry, these were my starting ingredients:

  • Ginger, ½ teaspoon
  • Garlic, 1 teaspoon
  • Tomato, 1 - sliced into segments
  • Onion, 1 - sliced into segments
  • Coconut milk, 200 ml
  • Curry powder, 2 tablespoons mixed with ¾ cup water
  • Oil, 2 - 3 tablespoon

Place the oil in a pot and add the ginger and garlic. Fry for about 1 minute until fragrant.

Add the onion and fry until translucent.

Pour the curry powder and water into the pot.

Stir constantly and cook until the mixture has reduced to a wet paste.

Add the coconut milk and stir to combine.

Add the tomato slices and allow to simmer for about 5 minutes.

Place the fish parcels into the curry and simmer for another 5 - 7 minutes with the lid on.

Turn off the heat and wait 5 minutes before serving.

My dinner!

September is FLYING past.

Just a reminder that it's Not Easy Being Green Vegetarian/Vegan weekend next weekend.

Ellen - Yes, another trip for me. I have a family wedding celebration to attend in San Diego on the 11th October. I'll be flying in on the 10th. And yes, I will be finished my Anyone Game TR before I leave. There really isn't that much more to share. Just 2 days chill-ax in Hollywood before heading home. And not a lot of pictures; so it'll be done before month end.
My SoCal trips are documented here. http://www.disboards.com/showthread.php?t=2614243

I'll be adding to the other two Mad Dashes that are there already. Second post will have links to the Save the Date Mad Dash trip.

Brandi - Fever Blister? I don't think I know what that means.

And I'll do strawberry jam or any jam. I've stayed away from apple sauce. It's not something we eat a lot here. What do you do with it?

Tuesday night. Potatoes on the menu. It was nice to come home to food on the table.
Hope you're all well.

Yes, fever blister = Cold Sore. I used to get them as a teenager quite often then as I got older they were fewer and fewer.

So I have not had one in a couple of years, and this one really surprised me.

For apple sauce - I use it in place of oil in baking cakes, and cookies, and then I eat as a fruit in the winter time, easy to carry in my lunch. David and I eat it all winter long.

Morning Girlies,

Brandi ~ Oh how I hate fever blisters/cold sores. I use to get them all of the time but now I only get one or two in the winter. My Daddy use to get them all of the time and them me, the girls never get them but Matthew does. I do get a prescription - Zovirox for them and it is a miracle (albeit very expensive) cream. Knocks them out in 4 days. I find when I have had a fever or my lips get chapped is when they hit me.
I can't believe your first bite of meat was that hotdog. Good grief girl, you really go full speed. :rotfl2:

PIO ~ I love applesauce in the morning with a piece of toast, on the dinner table with pork chops - Pork Chops'n applesause - said in my best Bobby Brady voice ;). We kind of use it as a side to any meal. The apple butter is used like jelly.
I have REALLY enjoyed your SW mega trip report. Thanks for the link to your new one.

Alison ~ I hope you are enjoying your parents.

Kim ~ I must have missed it, but what did you do for your birthday? I know it was a good one.

We had a quiet night last night. Just what we both needed. I did get my bounty all stocked last night. And I will tell you this, even though it is hard work there is nothing better than to stand back and look at your full shelves. They are really predicting a hard winter for the Plains this year. With us living in the country there are times when we can't get to town so at least now I am prepared. We won't starve.

WFDT ~ meatloaf (in the crockpot) baked potatoes, green beans and biscuits.

Make it a great day!

I hate them blister's too, such a pain, and you really can't do anything, i mean it is right there were you talk, eat, drink, and kiss.... :)

We have not started our apples yet.. I have not found good ones yet. I wish I had my own trees! No I don't too much work.

But with all this football I have so little free time. But I agree, when you look back at all your hard work it looks wonderful.

Evening all. The work part of hump day is over and I'm just sitting here chillin' for the moment. I decided that I was sticking with a non-working day philosophy for tomorrow. Been spending a few Mondays and Thursdays dialling into work meetings; and I didn't want to do that tomorrow. So I rejected a bunch of invites. I have to admit that I'm feeling a little bit guilty right now....but I'm sure it will pass. :rotfl2:

WFDT? Dinner at mum's. Rice, curry and stir fries.

Ellen - Applesauce on toast sounds great. Do you have a recipe to share? I might try it out!
Ahh. Fever Blisters = cold sores. Got it. :thumbsup2

No quilt, don't even let that creep into your thoughts. Enjoy your days off, you don't get paid, they don't get work.

Yucky cold sore

Baby Wednesday,

I am late getting in here today but it was SO worth it. Stephanie called me last night and wanted to know if I would like to go with her to her Dr. Apt. this morning. They were doing a 3d ultra sound. So I got someone to open the church and off I went. She had also brought Lilly and even though it was hard for her to understand what was going on, she did get to see the baby's face. Girls, it was so cute - when they were showing the side of the face, the baby was sucking on something. It was precious!! Man things are sure a LOT different than when I had kids. :rolleyes1 Everything is perfect and she is on for a 7 lb. baby. They of course did not want to know the gender and a few times the Dr. would tell us to look away. We love surprises!!

PIO ~ Applesauce is easy peasy. Here is what I do:
I cut the apples in 1/4's and take the core out. Place them in a sink of cold salt water (so they don't brown) when you have a pot full place them on the stove on medium. I add around 2 -4 cups of water. Cook them down until they are soft. I then run them through a sieve. Place the pulp back in the pot and add sugar to taste. I then ladle the sauce in jars and water bathe them for 20 minutes. They will last forever!! Enjoy

 to everyone else!!

WFDT ~ Tonight is Faith Friends and I think we are having Tator tot casserole. Doug will have a grilled hamburger.

Make it a great day all!

Baby Wednesday! How wonderful and aren't those 3D ultra sounds amazing.

I have a apple, peeler, corer and slicer thing, that clamps to the table, and you put the apple on the center peg and turn a crank and it peels it, cores it and slices it into one of those spiral long slices. I just dump it all into a a pot, with a cinnamon stick, put about a cup of apple cider in there, and bring to a boil, it will all start to break down. I have a food mill, that I run it thru. After jars are sterilized, I add about a teaspoon of lemon juice to each jar, and then fill with apple sauce, and the do a water bath for approx 20-25 min. We do not add sugar to ours, we try to use a really sweet apple like envy or Gala that are already sweet.

We have been having a nice time with my parents, however, Monday Fran about killed me getting the house ready! I walked almost six miles that day and barely even left the house. Our dinner plans were changed when we arrived at the restaurant we had planned on eating at only to find that they closed at 9PM and it was 9:15. (My parents got a later start than expected).

We ended up at the Greek restaurant next door, which was fine, the food there is very good too!

Last night we grilled steaks, my mom had picked up some artichokes at a farm stand on the way to our house, so we had those too. She made fixins for a green salad, but everyone was too full for any salad. But not too full for the Lemon Lime tart. We ate outside by the pool and it was a nice evening.

Tonight we go to Steakhouse 55 at the Disneyland Hotel for a special dinner. Tomorrow is my parents 50th wedding anniversary.

Sounds like you are have a fun time, happy anniversary to your parents.

Have fun at the steakhouse!

Good morning Ladies,

Alison ~ Happy Anniversary to your parents. Good for them!!

PIO ~ you are very welcome.

It is cold and drizzily this morning. Just another reminder that fall is in the air. Yesterday was just beautiful and Doug made mention that he was going golfing today. But I don't see that happening unless it clears off and gets nicer out. I have so much to do tonight and I was kind of looking forward to having the house to myself for a few hours. Does that sound terrible?

WFDT ~ If I am home by myself and egg sandwich but if Doug stays home we are grilling pork chops.

Make it a great day all!!
Having apple sauce with those pork chops?

Fall is here too, it was 49 when I left for work yesterday.
I am ready for cooler weather but I would be happy with 60 degrees.

I hope everyone has a great weekend!

Maybe it was all that walking that Fran put you up to getting ready!

We are going to a football game watching party today!
Tomorrow is normal weekend chores.

Today is my oldest Granddaughter's Birthday she is 13. A teenage, I can so remember the day she was born. So tiny and now she is taller than me.

Yes, thanks. The fish parcels were great. Unfortunately, the curry sauce was a little bit too spicy for DS. But DH and I lapped it all up.

,,,,WFDT? GF [chicken]tacos in taco 'boats' with all the fixins'....

.....besides, we are going to a wedding at Fiddle Lake Farm in Pa. next weekend....:confused3

So PIO was that curry dish something similar to what you were proposing for lunch at my house? It looks interesting if there was another flavor besides the curry powder, everything else sounded good!
