The What's for Dinner Thread - August 2014 (recipe index in OP)

Happy Friday all,

Alison ~ We are still in the 20's for an overnight temp. But during the days we do warm up.
I loved your schnitzel looked amazing. My grandmother made the best ever, but that looked pretty good.
Glad the electricity was back on before you got back home. It would have been hard packing in the dark. ;)

Tomorrow I (Doug is on call and can't go) am going to Kearney to a "Bunny Breakfast" with Lilly and Harper. There is also an Easter Egg hunt after. I am so excited. Then we are going antiquing for some chairs for Stephanie's kitchen table. She wants them all different. She got a beautiful old Oak pedestal table with 4 leaves, but it came with no chairs. So we are on the hunt tomorrow.

WFDT ~ The Catholic's are having their annual fish fry tonight. It is the best!!

Make it a great day and a wonderful weekend.

Hi everyone.

Sorry I have been away, my life has been so busy that I can barley keep up, I have been under huge amounts of stress, and just could not take looking at the computer.
If I missed something I am sorry, and know that you were all in my thoughts.

Holy Week Monday,

And so it begins!! I can't believe Easter and Holy Week are upon us!

Brandi ~ Happy Birthday to you!! I hope your day is as special as you are!!

Alison ~ Have a wonderful trip. I just can't wait for the report on this one.

The Bunny breakfast was a blast and Lilly loved the Bunny. Harper kept waving to her. We both remarked that they would love Disney. I haven't said anything but we are planning to go back to Disney next February. Stephanie wants to run the Princess. We haven't done a lot of planning yet but we will gear up here soon. These babies will love the characters. I can't wait!!

WFDT ~ White chicken chili (in the crockpot) with homemade rye bread.

Make it a great day!

Morning Ladies,

Oh my!! We are forecasted to get upwards of 8" of snow starting tonight and into tomorrow. The really bad part is we are to have winds of 25+ mph. That will cause all sorts of problems. This is to be a wet heavy snow and that wrecks havoc on the electricity lines. Last time we were set up for a storm like this (April 15) we didn't have electricity for 3 1/2 weeks. Please say a prayer for us. This could be a wild ride. There are baby calves everywhere also. I am SO over winter!!

Brandi ~ I have no doubt David treated you like a princess. You so deserve it!

Alison ~ I have loved following your adventures on FB. Have a great time!!

Hi to everyone else.

WFDT ~ We have a LOT to do to get ready for this storm so we might just eat a PB&J on the run.

Make it a great day!

The wind here was crazy yesterday and that is what made it so cold, I think if the wind had died down in would have been tolerable.
I had a last minute friend come into town from Florida, so we all went to dinner and it was so much fun being out with her and David.

To food was great but the company made the night!

Hopefully your weather will back off some before it starts, sending positive thoughts your way.

Good luck on Dinner!

Dinner tonight is Squash, cucumber, bell pepper and David has grilled chicken with his.

Kimmar ~ Sorry, I didn't check in for awhile. I seemed to be the only one here for a few days. Sorry. The Mongolian Beef was, as Doug says, "A KEEPER!" We loved it. Thanks so much for the recipe.....
....I'm so glad that you enjoyed it....and it was pretty easy, right? :thumbsup2

/
WFD?

Beef Carpaccio
White Bean and Andouille Soup
Some kind of Prime Rib of Pork with some kind of yummy sauce!

I found where they post the menus on the boat in advance!

Wet and Wild Wednesday!

Kimmar ~ Yes!! It was very easy. I was always leary of making it and now we have had it twice. Thanks so much!

Brandi ~ Sometimes it's about the conversation and friends, WAY more than the food. So glad you had fun.
How are you feeling? I think about you ofen.

Alison ~ I can't believe you are checking in. Bless your heart. The menu sounds amazing! I know you are having a great time - Good for you and Fran, you both SO deserve it.

PIO ~ I am again, loving your pictures on FB. You really have an amazing eye for things. I pray everything is going good in your part of the world.

It is getting progressively darker and nastier out. When I came to work it was light and just breeze, but now it is getting awful. It is starting to spit and it's forecasted to be full on by 10am. Oh joy!! But it is suppose to be in the 60's by Friday, so it won't stick around long. We just need to get through the next 24 hours. I am SO over winter. My apricot tree is in full bloom. I am so sad as my tree only produces every 5 years and this year was the one. With the wind and cold temperatures I am sure we won't get a thing.

WFDT ~ Beef stew and stone ground wheat rolls.

Make it a great day!

Ellen,

I think of you often also dear.

My personal life is amazing, so much love, happiness and friendship, I am truly blessed.
My work life is crazy, just overall busy, and demanding, and stressful and political, I think it is time for me to move on, I have even reached back out to old company to see if they have anything?

My hip hurts occasionally and I break out the PT exercises, and they help, I need to do them before i hurt but it hard to remember to do them
The cysts are only painful about 5 days out of the month..
I am still cancer free, so I can't really complain.

How are you?

This is a very laid back cruise. Fran and I may well be among the 10 youngest passengers on the ship. There are no kids, but at these prices no one would want to bring kids. Besides there is zero for them to do. The stops are in really small towns and there isn't a ton to do. We did the "hop on/hop off" bus tour this morning and came back in time for lunch. We ate way too much. Both ordered the same thing and should have split the entree. We both ate exactly half. Now we need to take a break in the room. She is taking a nap, so I got the computer out.

Sorry the cysts are painful sometimes, but that's terrific that you are cancer free!

I didn't go up to the cafe where they display the dinner menu today so I'll have to be surprised as to what's for dinner. The food has been great thus far. They even have a self dispensing Espresso/Cappucino machine on our deck!

So glad to hear you are having fun and enjoying life.

Mad March is behind me! Aside from having JediJill come visit and stay with me for a week, it really was a crazy month.
Onwards to April (I hope it's kinder on me than March has been).

Jumping right back in and hoping that everyone is well. I did try and back-read a bit and I don't think I missed out on too much.

Brandi - So glad you're cancer free. Now to deal with the cysts!!!!

Ellen - Hope you had a great time away. Sorry I haven't been around much but that's how life's been.

Kimmar -

Alison - YAY for a new computer and glad that the cruise is laid-back. Say hi to Fran for me.

It's Good Friday here. WFDT? Fish and Chips.

Happy Good Friday all,

We ended up with upwards of +60 mph gusts with sustained winds of 45 mph. But the electricity stayed. You have NO idea how great that was. We got around 6" of snow and there were huge drifts and then patches that there was no snow. The wind just blew it away. I didn't make it to work yesterday till in the afternoon as I had to get the bulletins ready for tonight and Easter Sunday. Then Doug and I went grocery shopping.

Brandi ~ Praise the Lord!! Cancer free is AWESOME!!! I wish you were pain free, but I know you can deal with that. Bless you!
We are good, thanks for asking. Busy with Church and family - I wouldn't have it any other way. :)

Alison ~ I am so glad you are relaxing. You have worked so hard these last couple of months that being a bit laid back is just what you needed. Sounds like you are eating real good too.

PIO ~ I was wondering who your visitor was. I know you had a great time. I followed your antics and beautiful pictures. Loved them.

Tonight is one of my favorite services. Very poignant and soul searching.
Matthew and Katlin aren't coming in till tomorrow morning as they want to go to Good Friday Services at their Church in Lincoln. But they are getting up early and hope to be here by 9ish. There is an Easter Egg hunt here and then we are all going for breakfast. Tomorrow night we will all dye Easter Eggs - 4 dozen - one for each kid. Then I have some baking to do. We all pitch, in so neither of us have to do it all. Dinner will be at Marty & Stephanie's in their new kitchen.

Here is our Easter menu:
Spiral honey glazed ham
Lamb
cheesy potatoes
corn pudding
roasted brussel spouts
strawberry pretzel salad
Edemame and quinoa salad
deviled eggs
veggie tray/fruit tray with dips
Homemade angelfood cake (my first attempt at this) w/ strawberries and cream
Rice crispie eggs
Chocolate ganache triffle
carrot cake whoopee pies (again my first attempt)

There will be 17 of us and I don't think we will starve.

WFDT ~ We are going over to Jay & Elizabeth's for Sushi tonight after services.

Have a very blessed and happy Easter my dear dear friends

Hi Everyone!
Today we are in St. Francisville and it seems to be a pretty ho hum city. My plan was to do laundry, but that was foiled as everyone else seemed to have the same idea. Fran surprised me out of the blue by wanting to sign up for the paid excursion this afternoon. It's 9:30 and both machines have 20 minutes left. If I start laundry at 10AM we will have a hard time making our 12:15 excursion gathering. I plan on grabbing sandwiches from the QS place on board to bring with us around 11:30AM and we'll be back just in time for the boat get underway to Baton Rouge tomorrow.

Glad to hear everyone is well! Now I wonder if they will be doing a special Easter menu on Sunday. The post the menus for the day and I forgot which starter I liked, but I think I'm going to have the Tomato and Crawfish Bisque and the Seared Sea Scallops for soup and main tonight. I'm hoping to get some photos uploaded while everyone is on the Hop On / Hop Off bus tour this morning.
