Quiet, but busy weekend. Ethan placed 5th on Friday at his tournament. He wasn't very happy about it, but we all thought he did a great job. Saturday we worked around the house and went to dinner with Jay and Elizabeth. Sunday was Church and nothing much more. I guess we needed to recharge. Was kind of nice.

It's called eating Vegan. Same thing that Brandi is doing. Since she dropped so much weight when she went "plant based" I thought that was probably my only hope. It's by no means a "lifestyle change". No way I could do that. 15 more pounds and meat and dairy are back on the menu.

Essentially I cut the coffee in the morning (can't have milk in it). I'm drinking Black Tea instead. I usually start the day off with an apple and glass of juice. Usually V8. I made a batch of Lentil soup last week and I just finished the last bowl as my lunch. I started a pot of vegetable soup last night, and I'll finish it tonight and that will be my dinner, along with roasted asparagus. I cooked carrot, celery and onion in olive oil, added vegetable broth, a can of tomatoes and their liquid, a can of kidney beans and their liquid, a couple bay leaves and some peppercorns. Tonight I will add chopped zucchini, green beans, chopped potato, cabbage and then salt it to taste while heating it up. Fran is having a steak in addition to the soup and asparagus.

Last night I had Potato Latkes (I cheated and had some egg), stewed mushrooms in red wine, and green beans. Fran had a baked chicken breast. I'm pretty much just eating fruit, vegetables, and trail mix. I'm also going to the gym every other day as well.
 

.....WFDT? I got a lb of cheese and garlic Italian sausage and 2 lbs of [pork] bracciole. I'm going to slice all of these into thick 1-to-1/-1/2 slices, saute` them in a deep skillet, reduce heat, put quartered red potatoes into the skillet, add 2 big onions, sliced, s&p to taste, a generous sprinkle of garlic powder, and simmer for about an hour, covered.

Alison ~ I love fruits and vegetables, but like you, there is NO way this cattle farmer could ever not eat beef. But for awhile it does sound good. And I am so proud of you!!

Kimmar ~ I am trying your Mongolian beef for dinner tonight. I can't wait.

I have worked ALL day on a new Wedding Policy (6 pages) and an Information/Fee sheet (4 pages). Uggg. We wanted to put them on our website and the one we use was Pastor Tess' and was on her computer and she took it when she left. It was time to update it anyway but it was NOT on my schedule to do it today. :furious:

I am going for a massage as soon as I get off of work, so all is good. :-)

Morning girls,

Today is the day and the excitement level is skyrocketing. I only have to work till noon (Doug also) and then vacation begins. I know it's a really fast trip but we are really looking forward to getting away for awhile. I talked to Shirley (Katlin's Mom) yesterday and she said the temps in Tucson are 85 -90. I'll take it as it is 32 here this morning.

I have no idea what dinner will be, but I can tell you this - I won't be cooking it and I don't have to clean up. Win, win for me.

Good morning ladies,

We are home and we had a really great time. It was a fast trip but one that we were busy the whole time. We went to Sabino Canyon on Saturday. The weather was hot hot hot, even got a bit of a sunburn. The Saguaro cactus were breathtaking. Just beautiful. We hiked for about 2 hours. The canyon is about a 10 minute drive from their house. Saturday night we went to a local restaurant for Mexican. YUM! Sunday we went to church then to breakfast. The shower was at 2. What a lovely time we all had. Katlin got some very nice things. It was worth every penny to be able to be there. We had a great time. Monday came too fast and we were back home around 9. Tired from a whirlwind trip but one I am so glad I didn't miss.

WFDT ~ SPPRC is serving dinner tonight and we are having salad and pizza. Not my favorite but at least I don't have to cook.

Tired Thursday,

I don't know what's wrong with me but I am so tired today. I didn't want to get up and stayed in bed an extra 10 minutes. I could have rolled over and still be asleep. I guess our busy weekend is catching up with me.

It rained all night long and this morning the sun is shining. These kind of days make you realize that spring is just around the corner.

I was tired this morning too. We had a 10AM vet appt and we're 20 minutes late. It's 11AM and we're still waiting in the lobby. :headache:

For dinner last night we had lentil soup and zucchini boats. Fran had me add some kelbasa to hers. Fran says I'm tired because I'm not getting enough protein so we're going to have steak and spinach for dinner tonight.
 
Finally Friday,

I only worked 4 days this week, but gee it was a long one. Today is the last of our nice days for awhile. We are to hit 70, but the wind is suppose to howl. YUCK!! I don't like the wind. Tomorrow and Sunday we are to get rain and then cool off next week. They are ever talking/whispering snow for the latter part of next week. :o

Alison ~ Fran could be right. I bet you feel better after dinner tonight. I hope your Vet visit is just routine and there isn't anything wrong. I hate waiting.

I am Courtesy Chair for this month and we already have 2 funeral. One tomorrow and one on Tuesday. Please pray that this is it for this month.

Ethan was pushed during recess - they were playing football - last week. He hurt his elbow and they say an Ortho. dr. last Friday. It was so swollen that they couldn't tell if it was broke or not so they put him in a soft cast. He went and saw the Dr. again today and he has fractured it, right on the growth plate. This is not going to be an easy fix. Bless his heart!! This means no wrestling for this season and probably no baseball. He did get a pretty orange cast though. I will post it on FB.

Today is our last really warm and nice day for awhile. We are to be in the high 70's today. But tomorrow the bottom falls out. We will be in the 50's, which is the normal temps. for this time of year. We are also to get some rain most days. We will see, I don't think it will amount to anything.

Hi everyone, I hope you all are well.

After work I have to man the Colon Rectal Cancer booth at the Y. My time is form 4 -8. My Momma had Conon cancer - didn't die from it, she caught it early and was pretty much cured - so this is something near and dear to me. The Hospital Auxiliary are handing out test packets. As I am not retired and have to work, my volunteer time is limited so this is something I can do.

WFDT ~ Doug is on his own and I am going to grab a Subway sandwich to eat at the booth.

OK, so I've been MIA. I got a new computer and I've been spending a ton of time transferring all my files to the new one. Plus we started a new "season" in band and with Fran and I being the Librarians, we had to prep a whole bunch of new music for last night's rehearsal. Since we are leaving this Sunday, we miss the next two rehearsals. We still have a bunch more to prepare for the next two weeks so that our Cat Sitter Jim can bring it to next rehearsal.

Last night I ate McDonald's. It was the first cheeseburger that I've had in several weeks, and I have to say that all this vegan eating sure makes even the simplest thing taste fabulous! Monday night it was Summer Salad and Lentil Soup. Tonight will be Balsamic Chicken Thighs, Green Beans and more of the Summer Salad.

I hope I get back here to check in before we leave at 2AM Sunday morning!
 
Happy St. Patrick's Day

Do you all have your green on? I got up and went and pinched Doug. He said, "What's that for?" I told him he didn't have any green on. :D I did, as my house coat has flowers on it and the stems are green. I also have green on today for work.

Kimmar ~ Sorry, I didn't check in for awhile. I seemed to be the only one here for a few days. Sorry. The Mongolian Beef was, as Doug says, "A KEEPER!" We loved it. Thanks so much for the recipe.

Alison ~ Have a great time on your river trip. That is so on my bucket list. How exciting. I can't wait for the trip report.

We are cold and windy this morning and only in the 50's. Our warm weather will be scarce until the latter part of next week. But for Nebraska, 50 is still above average. We just got use to the nice warm days. I went for a soak last night and it was cool enough that it felt really good.

Thanks Ellen! I have all my clothes for the trip picked out and hanging in a spare closet. I just with I could get Fran on board with this.

We might be going out for German food tonight. Since everyone else will be having corned beef and cabbage, I wanted some schnitzel before we left and tonight seems like the best night as Friday and Saturday will be pretty crazy.

50's sounds very cold. I'm happy that the highs will be mostly in the 70s and 80s on our trip. The nights will be colder than that, but I have some long sleeved shirts now so I hope I'm covered.
