The What's for Dinner Thread - August 2014 (recipe index in OP)

Welcome back! Are you just visiting or back for a longer stint?
I've missed seeing your posts around.
Hopefully I'm back for good!!!
Work is INSANELY busy & my kids never stop... but I'm going to find DIS time! It keeps me sane!!!

I almost forgot...
WFDT, BBQ pork chops, mashed potatoes and kale salad!!! :smooth:

Ellen - Congrats. I don't follow the American football; but I'm glad you were happy with the outcome. I hope summer comes soon for you.

TruBlu - Glad you're back for good.

It's Thursday morning here and I have a massage/chiro appointment in half an hour. I can't wait. My back feels all crooked and I'm looking forward to getting it straightened a little.
Works been busy in a good way. At least the days go quick. I've also been enjoying the photography that I've been doing. So life's good.

WFDT? We're back in the school routine and have piano class to get to. So, we will head for some Japanese Ramen tonight.

Have a great day all.

:wave2: out there!

I'm going to the grocery store today and noticed on the flyer that they have fresh caught cod on sale so that will be our dinner tonight. Most of the fish they sell here is previously frozen so fresh is a treat. I'm going to try to fix it like they served me halibut on the Dream. Nicely seared with a crispy crust. I'll be serving it with roasted asparagus.

Good morning everyone,

TruBlue ~ So glad to have you back. I know you are busy, but we love to have you just pop in once in awhile. Your kids are the age that you are going to be busy for awhile. But really try to enjoy it as this time will go SO fast!
How did you fix your Kale salad? I would love to know.

PIO ~ I am so glad to hear that work is going so good. I worry about you at times. The stress can really get you down.
How was the massage? Mine was wonderful, but she worked on my shoulder and I have some bruising. It has really been bothering me, and I think it is time to go see what is going on. Damn!!

Alison ~ Your dinner sounds amazing. I am poaching ours tonight but might change my mind as your way sounds really nice.
How is the cleaning, sorting and storing of the old house going?
Hey, I haven't posted, but I want you to know how much I am enjoying your trip reports. Your dresses are just darling!!

We had a "lock in" here last night and when I got here this morning the parking lot was full and the front door was unlocked and I saw lights. I panicked and almost called the police. But I got my BIG girls panties on and forged in. I went into the kitchen and remembered the kids were here. They are just now starting to stir. I wonder what time they went to sleep last night - and WHERE?

I got an invitation in the mail yesterday for a Bridal Shower for Katlin. She is from Tucson, so we are waiting for word that Doug can get off then we will get flights. I am so excited! We have to fly into Phoenix then we will rent a car. It will be a fast trip (Friday - Monday) but one I really want to do.

WFDT ~ Sea Bass, boiled parsley potatoes and roasted beets.

Make it a great day!

Ellen, we ended up having Dungeness Crab instead of Cod because they were out by the time I got there, but the crab was fresh and not from the part of CS where they had the problem with algae. We haven't worked at the house since Sunday. Saturday we took two loads of Disney boxes to new storage and a guy from the band took a steel rack off our hands. Sunday we took a load of boxes to old storage. All the Christmas boxes are now in storage and I have decided that we should sell all of our Christopher Radko ornaments on eBay. Even if we are ever able to put up a Christmas tree there is no way we can put glass ornaments on them. If Tesla and Bagel ever grow up and mellow out, we will still get new ones who will be just as rambunctious.

Sunday we also took about 9 pictures from old storage to make room for the rest of the boxes in the storage unit. Some of the pictures we will sell and others we will put up in the house. We also cleared off another steel rack that the same guy will take on this next Saturday. The biggest hurdle is that Fran wants to go through those Disney boxes before we take them away. She got so worn out with just two and a half hours of working last Saturday that she slept until 5PM on Sunday and she hasn't had the strength to go back since. Well see what happens today.

WFD? Balsamic Chicken and vegetable stir fry.

Oh yeah and Ellen, please comment on my TR! I love to hear comments on the TR! It totally makes my day when I see that someone has left a comment!

WFDT? I'm not sure - I'm guessing salmon with sautéed spinach.....I REALLY was in the mood for a bacon and egg sammich this morning.....came awfully close to 'committing a sin', but goodness prevailed.....I cannot lie, thoug.....I really still am in the mood for a bacon and egg sammich.....

Burrrrrrr..........baby, it's cold outside.

Alison ~ It sounds like you are making progress. Even if it is slow it is going forward and not backwards. I agree you really do need to go through the boxes but not if it is too hard on Fran. Bless your hearts.
I will go over today and comment. I really do enjoy reading about your travels. You travel like I wish I could. Lucky you!!

Kimmar ~ Oh the temptations. You are being a good girl, even though it is hard. We are having a bunch of dinners, lunches and get-togethers here in the Church right now with Lent starting, and my biggest temptation is all of the cookies. I LOVE any and all cookies and someone is always offering one to me.

We are headed to Kearney again this weekend. Turn about is fair play. Marty helped us and now Doug needs to help Marty. I really would like to stay home but I am not going to pass up the opportunity to "spoil" those girls.

What are your plans for Valentines day? Doug has made reservations at our favorite place. Shrimp and Grits are on the menu for this girl, and nice bottle of Chardonnay. Love the ones you are with!!

WFDT ~ Chicken and rice bake, green salad and peach cobbler.

Make it a great day and a wonderful weekend.

......soooooo, I'm guessing that you gave up COOKIES for Lent....WHAT WERE YOU THINKING??!??!?!?!

We have no big plans for Valentines day. We generally don't go out that night as its amateur night around here. Places are over crowded and they have limited menus but call it "special". I'm making stuffed peppers that night.

WFD tonight? Lamb tips in Naan bread with tzatziki and cucumber.

It's Sunday afternoon here. Where does the time go?

Ellen - the massage was great. It was nice to just lie and do nothing for an hour or so. Have you had your shoulder looked at yet?
You forgot your kids where there??? LOL.

Alison - Have you managed to get back to more clearing yet?

Kimmar - I had bacon and eggs for breakfast this other morning. Of course...it was kangaroo bacon ;) .....but it was still super tasty!

WFDT? It'll be lebanese food tonight.

....I made that on Monday and stuffed it with ground turkey, brown rice, and cheese...

Fran would kill me if I did that! Beef and regular rice are all she will stand for. We actually had them tonight, I was too tired to grill the tri tip we had on schedule for tonight, so I'll do that tomorrow when we aren't moving boxes and stuff.

Monday morning and it's a beautiful day here.

Not much to report other than to say that we're have spag bol for dinner tonight.
Hope everyone is well.

I just got the tri tip out of the fridge to warm up a little. It will be going on the grill in a couple hours and served up with some green beans. I get my Valentine's dinner tomorrow night at the shabu shabu place!

....why not try mixing the two meats together? That way, you could 'ease' her into a more healthy choice....plus, do you think , what, with the red sauce, she's going to really know that the rice is brown rice and not white?

....honestly, I have been making stuffed peppers this way for a few years now, and it really doesn't taste different.....of course, I use skim-milk mozzarella too....and PLENTY of it!

I might be able to mix the meats, but whenever I've changed something in a recipe like that she picks up on it. She would totally know if I used brown rice as it is much chewier than white rice.

I put cheddar on my peppers, but she has hers without cheese as a "way of cutting down".

I got an invitation in the mail for Katlin's Bridal shower in Tucson last week. Doug's Co. has been bought out and the take over was on Monday. We had been told to have all vacation in by that day. We didn't think it would be approved but put it in anyway. Well at 4:41 on Friday afternoon, Doug's vacation was finally approved so we immediately got our flights. We are so excited. We have never been to Arizona. We talked to Katlin's parents yesterday and they are making all sort of plans for us. It is going to be a fast trip but a real fun one. I am so glad we are going.

We were into the 40's yesterday, the 50's today and tomorrow and through the weekend we are to get to 60. Wow, I can take it. The snow cover will be just a memory by Sunday.

All of this talk about stuffed peppers is making me hungry. Those are going in the rotation this week. Sometimes I get in such a rut. I don't mind cooking, even cleaning up isn't so bad. The worst part for me is thinking what to have. Thanks for the suggestion. See, that's why I love you gals SO much!!

WFDT ~ Husker chops, kale salad and roasted turnips.

Make it a great day all!
