Morning Y'all, I'll try to catch up on all that I've missed the past few days. So I apologize for this being so long!
The van is repaired, Thank the Good Lord for that! If that man stayed home one more day, I would have had to borrow someone's freezer!!

I wanted to cook Nan's lentil soup & make naan or pita bread to go with it. BUT NOOO he couldn't stop work long enough for me to look up recipes! Then when he finally realizes I'm really ticked off, he wants to give me the computer at 2:30 and expects me to bake bread!!

For dinner he got storebought frozen crab bisque & bread that I baked days ago.
I went to A's class orientation last night! Gosh did we luck out with a wonderful teacher this year! She is not only kind & caring, but also super organized with a real knack for keeping parents in the know. I liked her so much I actually agreed to help out this year! Something I had been avoiding like the plague.
Bethany, Your school sure does sound fantastic! You didn't happen to tell them you have a little girl named Alexis? I wish Chris had the oppurtunity to get her in such a wonderful public school!
To say he is a longshot to make the team is an understatement, but at least he's giving it his best shot. They start practice/try-outs sometime next month I believe.
Sheryl - where do you get your scallops from? I buy them at Rouse's and they're the "wet" ones that I can't get as good sear on.

Those scallops came frozen from WF's. I've bought fresh ones from Rouse's too. I put them between paper towels & keep changing the paper (about 10 mins) until they are very dry. Then get your pan & oil really smoking hot before putting the scallops in.
Did Maria check in yesterday? I have to give her a ring...

I don't think I'll need a scooter for the Oct trip. The past few years during our F&W trip, we have pretty much stayed in Epcot. So I shouldn't need it, but
Buena Vista scooters had plenty available with just a days notice so if I need it, I'll get one. Of course my low back pain is not going to improve with the neck surgery and neither will my foot problems. So we'll see. We will have that little step thing on the back of Bob's chair, so I can jump on for a ride!
Sheryl- I saw that recipe and thought they looked great, your picture looks just as good as the magazines. I think we'll try it with baby spinach.
It was good with the arugula, Bob loved it. I think I would have preferred it with spinach or a mix of both. I will fix that one again. Alexis inhaled 2 scallops yesterday evening! The child is usually a picky eater but LOVES scallops.

Sheryl ~ I am so glad you got a good report at the Doctors. How are you feeling though? Really?? You do so much that I really wonder how you are doing.
Wow, getting back into the hang of just cooking for two is tough. But I am trying to package all of the leftovers to send back to school with Matthew on the weekend. Because we all know Doug DOESN'T DO leftovers. Heaven forbid!!

We are getting the best and most huge tomatoes out of the garden. One slice will cover the whole piece of bread. So with that being said. . .

Well I'll tell you what I told the dr.... My arm & fingers are less numb but I'm having a lot of pain in my hand when I lift or grip. He says that's somewhat normal for the carpal t. surgery. I'm still having trouble gripping jars or small bottles thus the need for occupational therapy. My neck pain during the day has improved but I still hurt when I lay down at night. Dr. also said that's normal & may take up to a year to improve. He felt that the lack of numbness in my arm & hand was exceptionally good & something he did not even expect or hope for! He was quite pleased with that! I have to wait until the bone starts to grow & fuse to start physical therapy but overall he was very happy with my result thus far!
I'm jealous of your tomatoes right now. Our tomato season is at it's end, so sad.
I really developed my love of cooking after my DD went to college! I was able to try new & different things that she never would have eaten. Of course I still cooked & froze her favorites. But now I actually get nervous cooking for a crowd!
That looks delicious! I get cooking light and don't remember this recipe. I am going to have to go back and look at it again.
Quick and easy! I have one more piece of the chicken left, and am tentatively planning a salad with it, with more greens, bacon, tomatoes, sweet peppers, etc. for our dinner this evening.
I am not sure how Liam is feeling today, but he must have gotten his new computer because I got my first ever email from him this morning. It is so cute!

UN of Ne at Curtis is a satellite school of the University and is in a small town. They don't even have a McDonalds. So every weekend he comes home or goes to Lincoln, or Kearney. ect.

Oh the life of a college student.
