The What's For Dinner Thread - August '09(recipe index in OP)

Didn't get to finish my post, stupid computer is still having problems although it appears that my virus has finally been killed.

Dinner tonight was scrambled eggs, I can't wait for things to get back to normal and I can get home at a reasonable enough time to cook something better. What with all of the fast food and catered stuff I have had for the last week this morning I woke up with a, thankfully mild, IBS attack.

Was going to go to the Virginia Beach for the weekend but Danny is making a swipe at the coast here and we are in for rain the entire weekend. :headache: Will have my DN's for the weekend again. I had promised them I would take them to see Ponyo but my sister has been hearing some not so good things about it.

Evening Y'all,

Sorry I didn't check in today. DH was home working, then tonight I went to Parent/teacher Or. with Chris. I haven't read back because either my computer or the Dis is running at a snail's pace. I'll catch up with everyone tomorrow.

I do see "The Boy" and his excitement over x-box! Too cute!

and that Liam is still sick.:sad1: Hope he gets well soon. :flower3:

Good morning everyone sorry I haven't posted lately.

Vicki Love the picture of the excited boy glad he is having fun with it.

 What a great picture!

Good luck at the dentist.

tonight I went to Parent/teacher Or. with Chris.

How did the meeting go? Did you get any suggestions to help Alexis with friends?

We are going out for my husband Bryans B-day it also is my MIL B-day.

Happy Birthday to them! Have fun tonight.

Laura - Hoping Liam is feeling better today.

Thanks, he seems to be fine today. I am crossing my fingers as I say that because I've said it the past two days, and then he comes downstairs looking ill again.

I'm not sure about dinner yet...BBL.

Ellen, as requested beer can chicken. This is how I do it.

Take whole chicken and rub with either butter or EVOO. Season with spices of your choice. (Pepper, Paprika, Onion powder, garlic powder, and celery salt) These are generally what I use. Open a can of beer or soda depending on what you have in the house. Place chicken cavity over the can of beer, standing upright. Place in a pan standing upright, and bake 45-60 minutes at 375 depending on the size of the chicken. If you have fresh herbs place a few sprigs in the can of beer for extra flavor..

Chicken comes out very moist. Hope these directions were clear enough.

Thank you so much. I can't wait to try this.

We are back from the doctor's, and the quick strep test came back negative, so they're calling Liam's bug a virus. They'll call tomorrow if anything develops in the strep culture.

Liam's throat is too sore for regular food, so he just wants cereal for dinner. I think Caili and I will have fish.

Poor baby, I sure hope the meds kick in really fast and he feels better quick!!

You take care of you my friend. Don't worry about us we will always be here when you can pop in. Happy birthdy to Bryan and MIL.

Kat ~ I've been meaning to ask about your M & D's house. I am so thankfull to see all is going to happen. Woohoo!!

Marilyn ~ wow you are busy girlfriend. Hopefully it will settle down here soon for you.

Aimee ~ How are you feeling now that you have your medicine? Any better?

Janice ~ I hope Minnie is okay. Maybe she has a bit of a tummy ache with all the tomatoes she has been eating. :rolleyes1

Vickie ~ Love the picture. Excited - YES!! It is so good to see you again.

I have to have a Brag moment if you all will let me. Matthew was voted Vice President of his Faternity yesterday. We are so proud of him!! He is pretty stoked about it. It is so good to see him happy and getting along so well. No matter how much I miss him, it does my heart good to know he is happy. And this comes from the kid who was worried about going to college. ;)
I couldn't be happier!! Way to go son!!

Thank Goodness it is Friday. This has been the LONGEST week. Matthew will be home in time for dinner tonight, so in his honor we are having ---
Grilled T bones, baked sweet potatoes and bakers, kitchen sink salad and a big pitcher of Sweet tea. That should fill him up! :lmao:

Have a great day my friends. I have something else to tell you but I need to get some work done. So I will BBL.

Morning Y'all, I'll try to catch up on all that I've missed the past few days. So I apologize for this being so long!

The van is repaired, Thank the Good Lord for that! If that man stayed home one more day, I would have had to borrow someone's freezer!!:rolleyes1 I wanted to cook Nan's lentil soup & make naan or pita bread to go with it. BUT NOOO he couldn't stop work long enough for me to look up recipes! Then when he finally realizes I'm really ticked off, he wants to give me the computer at 2:30 and expects me to bake bread!! For dinner he got storebought frozen crab bisque & bread that I baked days ago.

I went to A's class orientation last night! Gosh did we luck out with a wonderful teacher this year! She is not only kind & caring, but also super organized with a real knack for keeping parents in the know. I liked her so much I actually agreed to help out this year! Something I had been avoiding like the plague.

Bethany, Your school sure does sound fantastic! You didn't happen to tell them you have a little girl named Alexis? I wish Chris had the oppurtunity to get her in such a wonderful public school!

To say he is a longshot to make the team is an understatement, but at least he's giving it his best shot. They start practice/try-outs sometime next month I believe.

Sheryl - where do you get your scallops from? I buy them at Rouse's and they're the "wet" ones that I can't get as good sear on.:headache:

It looks like the sale of M&D's house is going to happen, we close in one week!:yay:

Kat, I pm'ed you our itinerary. Let me know if you received it. Prayers that try-outs go well for Kyle & that he can find a job. :flower3: Yeah and prayers on the sale of the house!

Those scallops came frozen from WF's. I've bought fresh ones from Rouse's too. I put them between paper towels & keep changing the paper (about 10 mins) until they are very dry. Then get your pan & oil really smoking hot before putting the scallops in.

Did Maria check in yesterday? I have to give her a ring...

Thomas cut his first tooth yesterday! My baby is growing too fast!.

Sheryl, So glad that you can drive without the collar now. Are you thinking of doing the scooter again in WDW?

Has anyone heard from Maria? Did I miss a post from her? Worrying now.

NOO he can't have cut a tooth already. Oh growing up so fast!

I don't think I'll need a scooter for the Oct trip. The past few years during our F&W trip, we have pretty much stayed in Epcot. So I shouldn't need it, but Buena Vista scooters had plenty available with just a days notice so if I need it, I'll get one. Of course my low back pain is not going to improve with the neck surgery and neither will my foot problems. So we'll see. We will have that little step thing on the back of Bob's chair, so I can jump on for a ride! ;)

Sheryl- I saw that recipe and thought they looked great, your picture looks just as good as the magazines. I think we'll try it with baby spinach.
It was good with the arugula, Bob loved it. I think I would have preferred it with spinach or a mix of both. I will fix that one again. Alexis inhaled 2 scallops yesterday evening! The child is usually a picky eater but LOVES scallops.
I'm glad you grabbed some bargains!

We are leaving for my dad's house as soon as Alan gets home from work tonight. .

I know I missed you but I hope y'all have a great weekend!

Morning all! Well the first day of carpool didn't go as planned.

Oh I hope that gets better. :wizard:

Sheryl ~ I am so glad you got a good report at the Doctors. How are you feeling though? Really?? You do so much that I really wonder how you are doing.

Wow, getting back into the hang of just cooking for two is tough. But I am trying to package all of the leftovers to send back to school with Matthew on the weekend. Because we all know Doug DOESN'T DO leftovers. Heaven forbid!! :confused3
We are getting the best and most huge tomatoes out of the garden. One slice will cover the whole piece of bread. So with that being said. . .

Ellen, You really have to stop worrying about me! But I do love you for it! Well I'll tell you what I told the dr.... My arm & fingers are less numb but I'm having a lot of pain in my hand when I lift or grip. He says that's somewhat normal for the carpal t. surgery. I'm still having trouble gripping jars or small bottles thus the need for occupational therapy. My neck pain during the day has improved but I still hurt when I lay down at night. Dr. also said that's normal & may take up to a year to improve. He felt that the lack of numbness in my arm & hand was exceptionally good & something he did not even expect or hope for! He was quite pleased with that! I have to wait until the bone starts to grow & fuse to start physical therapy but overall he was very happy with my result thus far!

I'm jealous of your tomatoes right now. Our tomato season is at it's end, so sad.

I really developed my love of cooking after my DD went to college! I was able to try new & different things that she never would have eaten. Of course I still cooked & froze her favorites. But now I actually get nervous cooking for a crowd!

That looks delicious! I get cooking light and don't remember this recipe. I am going to have to go back and look at it again.

Quick and easy! I have one more piece of the chicken left, and am tentatively planning a salad with it, with more greens, bacon, tomatoes, sweet peppers, etc. for our dinner this evening.

I am not sure how Liam is feeling today, but he must have gotten his new computer because I got my first ever email from him this morning. It is so cute!

hi auntiebecky,
Me and Caili love wii sports resort. The island flyover and swordplay the most .Be sure to tell unclejohn that he got the best game in the history of wii.
love you,
Liam

Come on, how cute is that??

Becky, That looks wonderful! Do you have a recipe for that?

No you are not biased! That is just too darn cute! :lovestruc I love it. :goodvibes

Yes he will. Well, at least he will not be at school, whether he is home or not will be decided later. ;) UN of Ne at Curtis is a satellite school of the University and is in a small town. They don't even have a McDonalds. So every weekend he comes home or goes to Lincoln, or Kearney. ect. :rotfl2: Oh the life of a college student.:woohoo:

I'm glad you'll get to see him, well while he's eating, picking up clothes, etc., etc.!!! Yeah college life is so hard.

Wow! That looks so delicious! Would you mind typing in the recipe? I can get it from Beck if it's too complicated.

Liam is sick again today. .

I'll post the recipe after I finish here. I'm sorry Liam's illness is a virus that he'll just have to get through. Poor kid. :sad1:

This running to the nursing home everyday and starting back to school (deciding if I want to take another route ect....) I'm getting old.

WFD-We are going out for my husband Bryans B-day it also is my MIL B-day.

 to all hope everyone has a GREAT DAY :flower3:

Lauri, I'm sorry you're having a hard time right now. Prayers that things get easier for you. :flower3:

Happy Birthday to Bryan! Enjoy dinner out! :goodvibes

Here's the Scallop recipe. I actually followed a recipe this time! Oh well almost I didn't have spinach & used the arugula, but that was about as close as I can get to not Nanatizing!

I did dry out the scallops as much as possible as I mention to Kathy.

Seared Scallops with Warm Tuscan Beans

Pair this one-dish meal with a side of garlic bread. It's perfect for sopping up every last drop of the delicious sauce.

2 tablespoons olive oil, divided
1 1/2 pounds sea scallops
1/4 teaspoon salt
1 cup prechopped onion
1/8 teaspoon crushed red pepper
2 garlic cloves, minced
1/4 cup dry white wine
1 cup fat-free, less-sodium chicken broth
1 (19-ounce) can cannellini beans or other white beans, rinsed and drained
1 (6-ounce) package fresh baby spinach
2 tablespoons chopped fresh basil

1. Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Sprinkle scallops evenly with salt. Add scallops to pan; cook 2 minutes on each side or until done. Remove scallops from pan; keep warm.

2. Add remaining 1 tablespoon oil and onion to pan; sauté 2 minutes. Add pepper and garlic; cook 20 seconds, stirring constantly. Stir in wine; cook 1 minute or until most of liquid evaporates. Stir in broth and beans; cook 2 minutes. Add spinach; cook 1 minute or until spinach wilts. Remove from heat; stir in basil.

Grilled garlic bread is great for dipping into the brothy beans. Heat a grill pan over medium heat. Brush 1 tablespoon olive oil evenly over 4 (1-ounce) slices French bread. Add bread to pan; cook 2 minutes on each side or until lightly browned. Rub one side of each bread slice with cut sides of a halved garlic clove.

Yield: 4 servings (serving size: about 4 ounces scallops and 3/4 cup bean mixture)

Yes I got it! Thanks for the scallop tips!

How did the meeting go? Did you get any suggestions to help Alexis with friends?
Thanks, he seems to be fine today. I am crossing my fingers as I say that because I've said it the past two days, and then he comes downstairs looking ill again.

I hope Liam is really better today! You know how Parents swarm around the teacher at the end of the meeting, we didn't have a chance to spend much time talking with her. We have learned that she has friends from last year that she plays with at recess. (all of 1st grade goes to recess together)
She just doesn't seem to have developed new friends yet in her class. She has started to mention a few girls names, so we're going to take a wait & see attitude. We're also waiting on info for Girl Scouts & I'm thinking of taking her out to the park next week to see if she's interested in Bounce Ball (pre-volleyball). There was a very nice Mom in the class who's the coach for that.

Thank you so much. I can't wait to try this.

Have a great day!

You poor girl. I'm really worrying about you.:sad1: I'm praying & sending you love. :flower3:

Call me if you have any questions. That was the quickest way to get all of the info to you. I know it might be kind of confusing.

I've already incorporated it into the OP, hope I got it right!:goodvibes

Did you know Brenda & Jay are going to be at The Wave demo too?

Wow you're quick & good! It sure does look like A LOT of wining & dining!! Oh so fun!

I don't think so, but I'll have to go check her thread again. I haven't chatted with her lately. I still haven't decided what I'm bringing to her party. Are you going to get her a b-day gift?

I just got some horrible news. Jonny's sister's husband who has been ill for a very long time passed away a short time ago. He was just released from the hospital a few days ago and seemed to be doing fairly well. SIL found him and called Johnny. Prayers for Shelly please.:sad1:

Ok I won't worry so much now. Oh, I will still worry but now I know you are ok. Just don't push it!! ;) Yes, I agree Doug and I are eating a lot different things when Matthew isn't there.
