Grilled cheese at a fair? This was a little gourmet. It was a sweet version and had Brie, Mascarpone cheese, dark chocolate, and Raspberry preserves.

Aimee- I love CG, it is one of my favorite restaurants in Disney. I love to have our last dinner there and time it with Wishes. It is not that I need to see the fireworks but for me there is something so Disney watching the show over the castle from that vantage point. Also, Buddy took me there when it was the Top of the World when I was 25. I had never been away from home, had never been on a plane and goodness knows never been to Disney anything. We stayed at the CR and he insisted on a Lake view room. At that time there were no daily fireworks displays so he wanted me to be able to see the Electric Parade from our room. We had a wonderful romantic meal at the Top. There was nothing left to do after that....everything was closed and I remember remarking from teh observation deck that I thought that Disney had missed out on a huge market. Well one of the Pixies must have heard because hey started on Pleasure Island right after that
Aw, what a great memory!!! Maybe we should have Christmas dinner there

if I can even get a reservation! It'd be two credits, or we could just pay OOP.
I have to go get ready for church, so I'll try to be quick! DBob surprised me with a ressie at Emeril's tonight!! They're having summer specials at all of his rests. Cuisine's of the World. So I'll be going out this evening for Indian Food at Emeril's!

We're back from a great week!
Cruised back into NY this morning & now wishing I could call room service
The ship was by far not my favorite but the company, water & beaches certainly made up for it!
Wanted to share my new favorite drink (the official drink of Bermuda):
Dark & Stormy:
- 2 oz Gosling's Black Seal rum
- 3 oz Barrit's ginger beer
- lime wedge for garnish if desired
I purchased some of the Gosling's Black Seal Rum for drinks at home.

I made this for lunch today and it was really tasty!
Cuban Ropa Vieja
Serves 4
2 cubanelle peppers, seeded and sliced
1 cup sliced onion
1 can tomato sauce (8 oz)
1/4 cup tomato paste
1 tbsp each EVOO, cider vinegar, and minced garlic
1 tsp ground cumin
1 bay leaf
1/2 tsp salt
1 boneless chuck steak (1.5 lb)
1/3 cup coarsely chopped alcaparrado or 1/3 cup pimiento stuffed olives plus 2 tbsp chopped capers
1/3 cup chopped cilantro
1. Mix all ingredients except steak, alcaparrado and cilantro in a 3.5 qt or larger slow cooker. Top with steak, turn steak over to coat with mixture.
2. Cover and cook on low 8-10 hours until steak is very tender.
3. Remove and discard bay leaf. Shred steak with two forks, stir in alcaparrado and chopped cilantro.
I didn't really measure anything, and made a few substitutions, and it turned out really tasty. I also did it on high for 4 hours since we were at church. I served it over rice. It reminded me a little of swiss steak but with a kick.
Tonight is a SS party - I am making peach tea and lime/mint tea to take with us. They are serving fajitas. Yum!
