Nancy I'm sure Hailey will be more than happy to have a KK for you while lounging in the jacuzzi. Two of her therapists are going with us, as well as my parents, so she will have no shortage of people willing to feed them to her. ;)


Mermaid I hope your son is doing better today. My DD has autism, so when I have a doctor tell me I have to keep her still and quiet, I know how you feel. I've actually progressed to the point where I will ask them if they are serious and if they think it is remotely possible to keep her still and quiet (or whatever other ridiculous thing they tell me to do with her). I've found if I turn the tables and put them on the spot they are less judgmental about my parenting skills. Don't let that woman make you feel bad. She is his doctor, she hasn't had to be his mother and has no idea what that job entails and probably couldn't handle it on her best day.


Becky I love the picture of Caili making the gourmet jello. She looks like she is having a wonderful time.


Kathy I'm sorry you are depressed about not having any Christmas shopping to do. I'm almost finished with mine, but since I'm such a good friend, I'll let you do the rest for me. ;) :laughing: I need three more gifts for therapists. Young, fashionable girls 19-20. Lauren the pork chops weren't as good as yours. Kenny pronounced them "ok". He had no trouble eating two of them, he just didn't like them as much as your recipe.


Sorry I didn't post yesterday (and I really should get off my fat rear and get busy this morning), but I had a full day yesterday. I washed 6 loads of laundry, made a chocolate cake, made a pan of blondies, and made two batches of seven layer cookie bars. I also made a tray of Kathy's mexican stuffed shells for the freezer to reheat the night we return from our trip to Disney and made our dinner - ground beef with scalloped potatoes.

Today I need to prepare the sales tax reports for Kenny's business and my Dad's business. I also promised to make M&M cookies with Amanda. I need to pack the box I'm shipping tomorrow to our resort. And I need to wrap the birthday present for my SisIL since her birthday is while we are on our trip. If I get the energy, I'm going to try and wrap some of the other Christmas presents while I have all of the stuff out.

I think dinner tonight will be a chicken and wild rice, but I'm not really sure.

Recipe, please! That sounds soooooo yummy!

This is the easiest chowdah recipe and soooo goooooood!! :goodvibes

Fish ChowdAH

2lbs of fresh haddock cut into chunks
5-6 medium potatoes cut into chunks
1 can of cream style corn
1 cup of frozen corn
2 onions diced
2 cups of cut up carrot
1 box of chicken stock (4 cups)
1 stick of butter
2 cans of evaporated milk
salt/pepper

Put all but the evap. milk into the crock pot on low for 5-6 hours adding the milk for the last hour.

I am not putting up a single decoration, as it is bad enough to come home from vacation to the unpacking, I do not want to have to face holiday decoration take down as well! Right now my formal living room has suitcases in it instead of holiday decorations...wish I could decorate it like that every christmas, lol.

I have no Christmas shopping to do, kinda sad, no family. Our vacation is our family gift. Of course Kyle will pick up quite a few items, on my tab ;), while we're in Disney.

Magic Shell Ice Cream Topping

1 (6 ounce) package chocolate chips
1/4 cup (1/2 stick) butter or margarine
1/4 cup vegetable oil

Melt chocolate chips and butter in a double boiler. Add oil and mix in well. When spooned over ice cream, it will create a hard chocolate shell.

Anyone know what to do with a pork picnic?!? I got one on sale and have no clue what to do with it- but I'm thawing it out for Rick and I for the long weekend. Just need some ideas.
 

Quickly checking in to say hi! We are cleaning the house and Tom is working on the bathroom...I think I may just have ravioli and jarred sauce tonight. We had bagels with taylor ham and cheese for breakfast and I'm not that hungry.

KAthy- I don't do much shopping anymore either. We are taking most of the family to NYC to see the Radio City Christmas Show, and making a weekend out of it. Buddy is taking us all to Del Frisco's for dinner and is getting train tickets as well. Honestly, it is turning out to be a very expensive gift :confused3. All I have to buy for is Donny and Daniel. I give money to my sisters kids, a grab bag on the IL's side and that is it for me. Kady does get gifts.

Gretchen- I'm exhausted and I only read about your day!

Wendie- We did leaves here as well. Well I didn't but the rest did. The oaks are still full of leaves so I hope the snow holds off.

Mermaid- you are not going to regret an artificial tree. There is less dust and there are no needles all over the house. You are really going to appreciate it when it is time to take it down.

I cooked a spiral ham with gravy, pineapple bake, mashed potatoes, green beans and onions( like a green bean casserole but different) broccoli and sweet potatoes. Steamers and garlic bread for th guys to start. Chocolate mayonnaise cake for dessert.

The girls made a nice non alcoholic cocktail, sparkling cider and orange juice. It was like a virgin mimosa and very refreshing.
 
Today we are having sole and julienned vegetables in parchment and hasselback fingerling potatoes.

But instead we had fried oysters with two sauces (traditional tartar and a mustard sauce) as an appetizer, and sole, littleneck clams and scallops in parchment with vegetables cooked in olive oil and topped with truffle butter, an asparagus risotto, and breadsticks. Becky is posting pics.

(there are lots of veggies underneath the fish--carrots, leeks, zucchini, summer squash... I poached them in olive oil before adding to the packet. I guess I should have put something green on top too!

Today there was an open skate at the arena of the university I work at. Laura and I took Caili, along with Greg, to the rink, to skate. It was a lot of fun. I managed to skate around the rink without falling down, and also got to enjoy Caili and Greg skating together. Greg is an excellent skater on his own (he spins! he jumps!) and Caili rose to his challenge. I've never seen her skate faster than today when she was chasing Daddy.

Tonight I made myself crescent dogs and fries. See my other thread on my glass filled crescent rolls... =( DH is at the Cowboy game, who knows when he'll be in.
 
What a lineup! What great kids, making their own contributions for pie night.

I made your pecan pie last year and Erica declared it the best pecan pie she has ever had, so of course it is on our dessert menu for this year. Would you share the recipes for the eggnog pie and the hello dolly pie. Maybe Kady would like to make the Hello Dolly and I would love to try another twist on Pumpkin.

Sorry I didn't see this until now. Here are the recipes:

Hello Dolly Pie

1 (14 oz) can sweetened condensed milk
1 (12 oz) pkg. chocolate chips
1 C. coconut
1 C. chopped pecans
1/2 C. butter, melted
1 (9 inch) graham cracker crust

Preheat oven to 350 degrees. Mix milk, chocolate chips, coconut, pecans and butter. Put in graham cracker crust. Bake 25-30 minutes. Serve warm or at rom temperature.

Eggnog Pumpkin Pie

1 can (15 oz) solid pack pumpkin
1 1/4 C. eggnog
2/3 C. sugar
3 eggs
1 1/2 tsp. pumpkin pie spice
1/4 tsp. salt
1 unbaked 9 inch pie shell

In a large bowl, combine the pumpkin, eggng, sugar, eggs, spice and salt. Pour into pastry shell.
Bake at 375 degrrees for 60-65 minutes or until a knife inserted near center comes out clean. Cool on rack. Refrigerate until serving.

Hey ya'll. I've been working alot and have been lurking some. No cooking for the most part.

Rick and I lost Wanna B Monday night. The vet says it looked like a stroke. We're devastated. So things here are a little crazy. We had him cremated and the gals dropped off his little wooden urn today- so I'm weepy and Rick's just a mess. Not sure how Rick's gonna react when I bring the little guy home tonight.

I'll be working with Rick every week till our Christmas trip- it's good therapy- but I'll be lurking, if not posting.

Wendie- tell Ross I found the Harry Potter candy- We're good to go for Christmas!:laughing:

WFD tonight? Lots of cocktails.:sad2:

What a nice afternoon you all must have had. I get a charge out of seeing her in her outfits, she is so darn cute! Catching Daddy is a huge incentive to speed!

Consider it Please! I have tried watching "The Gourmet Next Door" and she is a boring as watching paint dry. Her food is nowhere as appetizing as yours and most is something I could think about on my own. Now for the kicker: She names some of her food "Freaky Good Apple Pie" for instance, and I cringe. You name your cocktails and I want them...and I am not really into cocktails.

Well, we'll end up having the pork cutlets tonight because we ended up going to my Aunt's house yesterday and having a boiled dinner at about 1pm. I love it when that happens, stretches my food budget out!!:thumbsup2
 
Hey all! Sorry I've been MIA again. It's crazy, I'm supposed to be a SAHM, but somehow I ended up working over 40hrs. last week--17 of them this weekend. Needless to say, I did NO cooking since Thursday. Tonight, I am going to attempt a "mini Thanksgiving" dinner for the family. It all depends on if the Turkey breast roast defrosts in time--if not we'll be having spaghetti. I've never cooked thanksgiving before, b/c we're alwasy with my parents or the IL's, so I thought we'd have a small family dinner tonight, before the big shabang in Houston on Thursday. We'll see.....
