I made chili. I've been wanting to try Texas style chili forever (where you dice steak really fine instead of using ground beef) and I finally had an evening w/o a second job to try it! I used a few recipes from foodtv.com and played around with them - using some things from one, some from another, wine instead of beer, making one spice mix instead of two, etc. It ended up coming out really great.
Midnight Kiss Chili
DBF and I decided to call it this, because it surprised him that it was sweet and fiery at the same time. Also, the ingredients come together slowly and leave a little tingle on your lips.
First blend together your spice mix:
4 tsp. onion powder
1 T cumin
1 tsp. garlic powder
1 tsp. cocoa powder
1 tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. cardamom
¼ tsp. cloves
1 T ancho chile powder
1 T chipotle chile powder
½ tsp. salt
4 tsp. black pepper
Then, dice 3 lbs. of steak into ¼ inch cubes.
Dice 1 large Vidalia onion into very small dice.
Dice 1 large or 1 ½ medium green peppers into very small dice.
Heat 1 T olive oil in a Dutch oven. Add onion and peppers. Stir and cook 2-3 minutes or until slightly wilted. Add steak and cook, stirring as needed just until most of the pink is gone from the meat.
Add 2 cans diced green chiles, 1 lg can plum tomatoes, crushed by hand, 1 lg can plain tomato sauce, 1 cup red wine, 1 can beef broth and 1 can chicken broth (14 oz. each)
Add spice mix, stir and bring to a boil.
Lower heat and simmer for at least 1 hour on low.
Mix together 1 tsp. Hula Girl hot sauce, 2 T maple syrup, 2 T brown sugar, 1 T ancho chile powder, 2 T chipotle chile powder and 1 T cumin.
After chili has cooked, add the sauce mixture above. Simmer ½ hour longer. Taste and add salt or hot sauce as needed.
In addition, I bought ingredients for Glynis' pot roast - we'll have it on Saturday. I have to try it. I can't be left out.
