I made chili. I've been wanting to try Texas style chili forever (where you dice steak really fine instead of using ground beef) and I finally had an evening w/o a second job to try it! I used a few recipes from foodtv.com and played around with them - using some things from one, some from another, wine instead of beer, making one spice mix instead of two, etc. It ended up coming out really great.

Midnight Kiss Chili

DBF and I decided to call it this, because it surprised him that it was sweet and fiery at the same time. Also, the ingredients come together slowly and leave a little tingle on your lips. :)

First blend together your spice mix:
4 tsp. onion powder
1 T cumin
1 tsp. garlic powder
1 tsp. cocoa powder
1 tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. cardamom
¼ tsp. cloves
1 T ancho chile powder
1 T chipotle chile powder
½ tsp. salt
4 tsp. black pepper

Then, dice 3 lbs. of steak into ¼ inch cubes.
Dice 1 large Vidalia onion into very small dice.
Dice 1 large or 1 ½ medium green peppers into very small dice.

Heat 1 T olive oil in a Dutch oven. Add onion and peppers. Stir and cook 2-3 minutes or until slightly wilted. Add steak and cook, stirring as needed just until most of the pink is gone from the meat.

Add 2 cans diced green chiles, 1 lg can plum tomatoes, crushed by hand, 1 lg can plain tomato sauce, 1 cup red wine, 1 can beef broth and 1 can chicken broth (14 oz. each)

Add spice mix, stir and bring to a boil.

Lower heat and simmer for at least 1 hour on low.

Mix together 1 tsp. Hula Girl hot sauce, 2 T maple syrup, 2 T brown sugar, 1 T ancho chile powder, 2 T chipotle chile powder and 1 T cumin.

After chili has cooked, add the sauce mixture above. Simmer ½ hour longer. Taste and add salt or hot sauce as needed.

In addition, I bought ingredients for Glynis' pot roast - we'll have it on Saturday. I have to try it. I can't be left out. :)

Whoa Nellie! That looks good!

Last night I roasted chicken thighs and served with farfalle pasta in a light garlic and cream sauce. I also reheated the leftover pot roast which was even better the second day. I'm glad because I did not pay attention to the chicken and it was a little dry.

So...tonite will be chicken salad sandwiches and what ever else I feel like making to go with them.
 
Spaghetti. I usually take my jarred sauce and add to it (sort of a store bought/homemade). I recently got 10 jars of prego for .80 each so it's a good thing my family LOVES spaghetti.
 

Tonight is leftover Cowboy Speghetti. One of our favorite meals. Bacon flavored sauce and meat with pasta.

I want to do something homemade for dessert but haven't decided what yet ~ the Derby Pie posted here sounds very good to me though so that is a top contender. ;)

Spicy Italian Chicken
Rice
Green Bean casserole
Crescent rolls

Crab Dip as requested

1 cup Velveeta cheese, cubed
1 cup swiss cheese, cubed (I use the shredded kind)
1 can Campbell's condensed cream of shrimp soup
1 cup milk
1/2 tsp cayenne (I use a bit more as we like ours spicy)
1/2 tsp paprika
crab legs chopped into small bite size pieces (what I do is freeze whatever is left after we have a crab leg meal. A few small packages give me enough--we prefer more cheesy dip than crab chunks) You can also use imitation (we don't like this) or lobster.

Combine everything except for the crab in a pot and heat over low heat until melted, stirring to as needed to prevent scorching. When melted stir in crab. Add crushed red pepper if desired and serve with crusty french bread.
 
Well I didn't get to do Paula Deen's "Lady & Sons" fried pork chops the other day, so that will be tonite, with mashed potatoes and gravy and lemon/parmesan roasted broccoli!!
 
Tonight ~ Grilled tilapia, rice pilaf, and steamed baby carrots.

Last night's Apricot Chicken was really good. I will be making it again, but I'm going to tweak the recipe a little next time.

TigerKat, can you post the pork chop recipe and broccoli? If its already posted, just let me know and I will look. I just love Paula Deen...never made anything, but always watch her show...can't wait to see her new show with the audience. She is just a real down to earth person with a great family...she inspires me since I was a single Mom for a long time...OK, now I am babbling!!!

We are going out tomorrow night with my Mom that lives an hour away...she misses DS8 who she basically raised for me when we lived closer.

Sunday may be rotisserie trukey breast or bbq pork in the crock pot...

We have leftover pizza, so that's what's for dinner tonight. It's the night of the homecoming football game, so DD has to be there early in her formal to sing the National Anthem with her Jazz Choir. I'm excited. Even more so since I don't have to cook! :cheer2:

What happened? Bad storm or just Entergy being itself again?

I'm from New Orleans. We relocated after the hurricane.

We are having shrimp chimichangas and homemade guacamole for dinner.
