I've got sweet & sour pork chops in the crockpot. It's the first time I've tried this recipe, so we'll see how it goes. I'll probably make egg noodles or rice to go with it & some kind of vegetable. And I'm making apple crisp for dessert with fresh apples from the orchard. Yummy. :thumbsup2

I just bought a chuck roast at the store today & I think I'll try Glynis' recipe tomorrow, only halve it. We would never be able to eat 2 roasts.

Let me know if the pork chops are good! They sound yummy!

I don't usually use 2 chuck roasts, but I NEVER halve the sauce stuff. I just use it to make a really yummy gravy for some potatoes, and over the roast. Just my opinion! I like a lot of gravy!
 
I wonder if you could freeze one of the roasts after you cooked it and have it still be good when you thawed it out? I'm all for cooking in advance for a busy day. That recipe sounds really good. I'll have to try it.

DD gets out of musical practice at 7:00. I'm an officer of our church women and we're having a wine and cheese party at (you guessed it) 7:00. Soooo, dinner is probably going to be a sandwich on the way to the party or a pizza after it's over. Poor DD is going to be starving if we have to wait. It's at grandma's house, so I guess I'll just have to sneak her some appetizers to eat while she's doing homework. :teeth:
 
I mostly lurk on this thread but I wanted to thank everyone for some great ideas. Mondays are crazy for me. 2 dds taking dance class at different times and homework. So for us tonight it is Stouffers lasagne with a salad straight from the bag :goodvibes I will try to do better tomorrow.

Okay...this is getting ridiculous. Tonight was Open House at my school so I was at school from 7:00 AM to 7:30 pm. Supper????? Ready???? Cottage cheese, carrots and cookies!!!!!!!!!!!!!!!!!!!!

I'm not a huge pork fan but I thought the pork chops were good. I served them with egg noodles. DH loved them & is taking the leftovers to work tomorrow. DD4 loved them, DD3 didn't eat any, she has given up eating I think. :rolleyes:

Here's the recipe:

Crockpot Sweet & Sour Pork

* 1 onion
* 1 carrot
* 2 stalks celery
* 1 red bell pepper
* 1 can pineapple chunks, drained (save juice)
* 2 lbs. thick cut boneless pork chops
* reserved juice from pineapple
* 3 T. apple cider vinegar
* 2 T. soy sauce
* 1 T. cornstarch
* 2 T. brown sugar
* 1/4 tsp. ground ginger
* 1/4 tsp mustard powder
* 1/2 tsp. garlic powder
* 1 or 2 dashes hot pepper sauce
* 6 oz. can tomato paste

Cut up vegetables & place in crockpot with pineapple chunks. Season chops with salt & pepper & put in crockpot. Stir pineapple juice, vinegar, & soy sauce together. Add cornstarch, stirring until dissolved. Mix in remaining ingredients & pour over pork chops. Cook on low for 6-8 hours. I thickened the sauce with a little more cornstarch at the end.

Some nights it's all about a quick fill up. But girl with your schedule, it's time to break out the crockpot!! :)

Tonight I am making Rachael Ray's chicken pot pie soup. I haven't made it all year so this will be a treat. Here's the recipe:

1 tube jumbo bake-off butter biscuits, from the dairy aisle of market (recommended: Grands by Pillsbury)
Sweet paprika, for sprinkling
1 1/2 pounds chicken breast pieces, diced
3 tablespoons butter
2 ribs celery and greens from the heart, chopped
1 medium yellow onion, chopped
1 large carrot, peeled and diced
Salt and pepper
2 teaspoons poultry seasoning
3 tablespoons all-purpose flour
1 cup shredded potatoes, ready to cook hash browns, available in sacks on dairy aisle
1 pint half-and-half or cream
1 quart chicken stock, available in boxes on soup aisle
1/4 teaspoon grated nutmeg, a healthy grating
1 cup frozen green peasPreheat oven according to package directions and arrange biscuits on cookie sheet. You will have 4 extra biscuits. Save them for ham and cheese or egg and cheese breakfast sandwiches the next morning. Sprinkle biscuits with a little paprika and bake for 10 to 12 minutes. In a medium pot over medium to medium high heat, cook chicken in butter 2 minutes then add veggies and season with salt and pepper and poultry seasoning. Cook 5 minutes more, add flour cook another minute. Add potatoes, then whisk in half-and-half or cream and chicken stock. Add nutmeg. Bring soup to a boil by raising heat, then turn heat back to simmer and cook soup another 10 minutes. Adjust seasonings. Add peas. Stir in to warm them through a minute.

Serve mugs of soup with biscuits on top to cap the mug: chicken mug pies!

Tonight we are having grilled chicken breast; I have it marinating in chipolte lime now. I jut need to decide what sides I am having or if I should just do it over a tossed salad...DFi is on Atkins so I am trying to stay away from carbs...Thank God for instant rice and mashed potatoes for me and DS8!!! :sunny:

Well, I guess tonight it will be some chicken on the grill--I was going to do it yesterday, but as luck would have it, it rained, then I got a flat tire--so instead we had nuked chicken nuggets. DH is out of town until Friday, so I get to eat whatever I want (or I guess whatever the kids will eat ;) )

Sugarpie--Have you ever tried that pork recipe with chicken??? it sounds yummy but we aren't big pork people here.
 
Tonight will be Baked Reuben Chicken (if you like reuben sandwiches, you'll like this), Roasted red potatoes and string beans. The chicken is a quick fix!

I love reubens, but the fatty corned beef bothers my stomach sometimes. Is there corned beef in your recipe or just chicken?



I'm making DH's grandma's Spanish Rice, peas and a fruit salad for dessert.

No fatty corned beef for me either, just chicken. I'll post the recipe when I get back from Dr. appt later this morning!!

I haven't. It was the first time I tried it. I'm not a pork person either & I'm thinking about trying it with chicken next time. I'll probably not cook it as long, though.

I am so sorry about losing your Dad and that your Mom is suffering from Alzheimers. This terrible disease robs you of so much, and you have to deal with this alone :hug: . Come here, everyone is supportive and will try to help when you need to talk.

It has been crazy in my house, and I am almost embarrassed to say that I have done very little cooking, and when I have it does not seem to be what I posted. So today, I am shopping for my Aunt, and will pick something up something for us at the same time.

Baked Chicken Reuben

4 skinless, boneless breasts
salt & pepper
16 oz can sauerkraut, drained and liquid pressed out
4 slices swiss cheese
1 1/4 c. Thousand Island dressing (I use the fat free)
1 Tbsp chopped parsley


In greased baking pan, place chicken breasts. Sprinkle with salt & pepper. Place sauerkraut over chicken; top with swiss cheese slices. Pour salad dressing evenly over cheese. Cover with foil and bake in 325 oven for about 1 1/2 hours or until fork can be inserted in chicken with ease. Sprinkle with parsley to serve.

This sounds yummy... I'm going to make something similar.Apricot chicken
