My sister and her kids came into town for the day so that we could go over the final plans for our Grand Gathering at WDW :woohoo: and we all went out for dinner (Chinese) ~ we had an assortment of General Tao's chicken, sweet and sour chicken, shrimp fried rice, egg drop soup, Chinese vegetable soup and egg rolls. I'm still stuffed! :sunny:
 
Last night: grilled shrimp and scallops in a garlic-herb marinade, orzo salad with basil and lemon zest, sliced tomatoes, and summer squash-zucchini saute.

Tonight: thin crust pizza topped with garlic and portobello mushrooms, and a mixed salad with tomatoes, cucumbers, and olives.
 
The Noodle Bowl was a huge hit and it was really easy. I used baby carrots (cut in half) instead of sliced carrots, broccoli, and snow peas. I also used sandwich steaks that I had pre-grilled earlier this week and then sliced. It turned out great. DD told me to fix it sometime when one of her friends is coming to dinner, and that's a big compliment.

Tomorrow DS and DH are going out to dinner at DH's old frat house, so DD and I are going out somewhere. I figure if they get the evening out, so do we.
 

Tonight I am making Rachael Ray's Jambasta. It's a combo of pasta and jambalaya. I will post a recipe later.

Last night we had spaghetti and sausage with a green salad. Tonite I have some boneless country style ribs marinating in a chinese red sauce. I am going to roast them and serve with some roasted red potatos and onions with garlic and olive oil and some grilled eggplant. A green salad on the side.
 
It is so hot, I don't want to think about cooking, LOL! But, since there is a houseful of people here who will want to eat at some point, I think I'll get some chicken and dumplings simmering pretty soon and then later I'll throw together a pot of mashed potatoes and a vegetable for on the side. :sunny:
 
I'm spending the day making raspberry jam, so we're going to go easy and try the baked spaghetti that Lindsey posted! I'm excited to try it! I'm using whole wheat pasta as I am going lower carb these days. Hopefully that won't affect the taste at all. Lindsey, if you get a chance, can you point me in the direction of the recipe for the bread you served with the baked spaghetti? I've been dreaming about it since reading the name!
 
Left over wings, from the one's I ordered from Papa John's last night.
 
I have to make something with b/s chicken breasts, but I don't know what. I usually grill them, but we're out of propane. hmmm...
 
Scalloped Potatoes with Ham

Either grilled fish or shrimp with lemon butter and homemade Asian coleslaw (really easy- just packaged shredded cole slaw mix, with Ken's light Asian dressing and some toasted sesame seeds and minced scallions) I might throw some leftover rice onto DBF's plate since I'm "off starches" this week.

Sorry to do this to ya, but I buy that bread at Bi-Lo :(

A little tip on the spaghetti: if you find multitasking hard when cooking, as I o sometimes, you can get the sauce all ready and then just leave it on low and THEN cook the spaghetti. That's what I did. While I was making the sauce I got my water going. When the sauce was done, I cranked 'er up and then dropped the pasta.
 
I use whole wheat pasta for nearly everything these days and I don't find it changes any recipes. Whole wheat pasta has come a LONG way!
 
Since it is my birthday - were are going to go out! Where, I am not sure yet! :banana:
 
DS and DH will be away for a dinner meeting. So, DD and I have decided to beat the heat and stay out of the kitchen. We're going out somewhere tonight, just the two of us.
