We're having Chicken and Mushroom Lasagna

It is super easy and very good.

2 Lg. cooked chicken breast - shredded after cooked (make sure not to overcook and make it tough)

1 pkg. fresh button mushrooms - you could substitute any mushroom you like here or have a mixture.

Alfredo Sauce - I make my own with a bechamel base (butter, flour, cream/milk) and add parmesan cheese, salt, pepper, nutmeg. You could use a jarred alfredo if you wanted to but the sauce is pretty quick.

Lasagna Noodles

Mozzarella Cheese

Parmesan Cheese

----

Cook the chicken, noodles, & sauce. Layer the noodles, sauce, chicken, mushrooms, & cheese like you would any other lasagna. Top with parmesan cheese.

You have no idea how much I'm drooling over this one :faint:

Ribs. Not sure about sides yet. May not have any, since I'm only cooking for myself for the next 4 days.

While out shopping for our trip in the next two weeks, we stopped at Skyline Chili. It hit the spot tonight! :thumbsup2

I've had a change of heart. They had marinated pork chops, buy one package - get one free at the grocery. Sooooo, we're grilling lots of pork chops tonight (and saving some for later this week). That'll make for an easy dinner in a couple of days. And we found two flavors, so the family won't be tired of it. :thumbsup2

Guess I'll do the roast beef hash tomorrow. Now I need to figure out what to fix with my pork chops. Maybe we'll have baked potatoes or rice and a veggie.

Merrypoppins: When you start sharing, you do not mess around. :thumbsup2 Thanks for the new recipes. I love to check this thread out for ideas. I'm looking at that amazing lasagna on the previous page for later on in the week.

We are invited to our friends this evening. They bring their produce to the market in kent every Saturday, and came home with a lot of steamers. They are grilling them with some potatoes. I don't know what else. I made lemon cheese squares and brownies for dessert.

I got a little crazy today! I made 2 chicken recipes that I found on this thread; one for today-chicken with Rice Krispies and one for tomorrow-Chicken with Ritz Crackers. Then I made home-made cole slaw and for dessert: Derby Pie. Wow!!! All the posters were right, the Derby Pie was delicious!!!!

Wow, everyone has been cooking amazing dinners this weekend! I saw a couple of recipes I am going to try soon. We ate our Tanglewood picnic early today, and just spent the past three hours fighting traffic on the turnpike to get home, so it's time for a late dinner. Of course, I am tired, and have a headache from traveling, so I'll admit that the late "dinner" is just going to be nachos.

Tonight we are having baked spaghetti. I found an awesome recipe in the latest issue of Taste of Home. If it turns out good I will post a recipe :) We will have sun-dried tomato basil bread with it.

WFD at your house?

Let us know. I use Paula Dean's recipe for baked spaghetti, but because pasta is a favorite here in my home, I like to check out new ones.

No idea. We have some leftover chili but I have decided to go back to Weight Watchers today so I'm not sure. I'll be looking for LOTS of chicken recipes ladies! :teeth:

Tonight we will grill some ribeyes and have tossed salad, baked beans, and parmesan zucchini to go with them--yum!

Don't know what's on tap for the rest of the week yet.

Left over ribs from last night. I couldn't believe I couldn't finish them off, especialy with no sides. It wasn't many ribs.

Leftover Lasagna tonight. Can't let any of it go to waste! ;)

Tonight will be tacos for the kids, and taco salad for me and DH. Nothing glamorous, but the kids will eat it! I'm going to add some kidney beans to stretch the ground turkey I'm using. I think I'll also make some homemade guacamole to go along with it. That sounds yummy!

I think I am making these turkey burgers I have in the freezer. It's a gamble because we've never had them before, and it is very possible my children will hate them. I am making macaroni and cheese as a side dish (backup meal if the burgers are terrible), and we will have broccoli for our veggie.

Salad with tomatoes, garbonzo beans, onions, broccoli, cauliflower, beets and lots of other vegetables. I'm also having garlic bread.
