ooooo--kay...not sure what that was all about, and I certainly don't see any songs posted...but here we go...

I'm doing some kind of chicken tonight(again)...along with spinach pasta and parmesan cheese and not sure of a veggie...my freezer is getting kind of low.

Lindsay...love those recipes you posted...can't wait to try them.

Last night I made a rhubarb custard pie, probably do that for dessert again.
 

I am creating dinner tonight. Usually my family doesn't complain too much when I do this...

I had a half a chicken leftover that I really needed to use. So, I boned out all the chicken meat, and used the bones to make a chicken soup. (I also added spinach to the soup. as well as rice and the little ugly noodles I made when making the fettucine noodles.)

Now I am working on a creamy garlic sauce to go with the chicken chunks I cut up, and spinach over the pretty fettucine noodles. I am just debating wheter or not to use a little provolone and mozzerella cheeses I have with the teeny bit of parmesean...Also have some lettuce for a nice salad and some good sourdough rolls.

I hope this comes out.

FISH FILLETS AND GINGERED LIME SAUCE

Ginger-Lime Butter Sauce
1 1/2 lbs. fish fillets, such as halibut, mahi mahi, salmon or other fish fillets
Seasoned salt
1/4 c. all purpose flour
3/4 c. finely chopped macadamia nuts
1 egg, beaten with 1 tbsp. water (I used egg beaters)
2 tbsp. butter
2 tbsp. vegetable oil

GINGER-LIME SAUCE:

6 tbsp. butter
1 tbsp. fresh lime juice
1 1/2 tsp. finely grated ginger root

Rinse fish; pat dry with paper towels. Cut into 4 to 6 serving pieces. Sprinkle with seasoned salt; lightly coat with flour and gently shake off any excess. Place nuts into a shallow dish. In another dish, beat together the egg and water. Dip flour coated fish in egg mixture; roll in nuts until evenly coated on both sides.
In a large, heavy skillet heat the butter and oil. Add fish and pan fry over medium high heat 4 minutes on each side until fish fillets are golden and test done. Arrange on a platter or serve individually on warm dinner plates. Pass the Ginger-Lime Sauce.

GINGER-LIME SAUCE: In a small saucepan over low heat melt butter and stir in lime juice and ginger root.

You can adjust the lime juice and ginger root to satisfy your taste buds! Yield: 4 to 6 servings.

Tonight we are having leftover roast with carrots and potatoes. MMMMM! One of those meals that are twice as good the next day!! WFD at your house tonight??

Last night we had the most delicious steaks on our gas grill. DH brought home that charcoal grill I wanted and if I can get DS to finish putting it together, we'll be doing burgers tonight. :thumbsup2 Now that it's grilling weather, I'll probably not use my kitchen much.

I think tonight I might try the Spaghetti and meatball stoup.

I have to go into work again today, I don't ususally go in the office 2 days in a row, so it depends on how energetic I feel when I get home. It may be a leftover night! Luckily, DD 13 is very good with cooking herself, very simple things, but some days I'll call and she's got an idea for what to make.

Sun, if it helps, the stoup is very easy and quick to make. If you have the time and energy to roll a few meatballs, you can pull this one off. :) Man, I wish I was having that for dinner :)
 
Well, we ended up having take out after taking DH to the airport so it's going to be the coconut red curry tonight, since didn't make it last night
 
Tuesday night means panini night at my house. I think I am going to bread and sear some chicken and make chicken parmsean sandwiches. It is cold and rainy here today, so this should fit the bill/

Remember yesterday I said we would probably just eat junk food at the park during the ballgame? Nuh uh. If anyone is from Boston reading this, we went to Great Bay before the game and had the most awesome halibut seviche tacos, tuna sashimi, and split a trout with a mushroom-asparagus-potato-quail egg hash. It was REALLY good, and the waitress told us that if you eat there on game day, you can valet your car at the restaurant for only $12--way better than the $90 the stupid Texaco station is charging to park. And, of course, the Red Sox won! :)

Here's my recipe from last night, the original recipe was for salmon and I used Mahi Mahi. It also called for chicken boullion but I substituted wine for that. The only problem I had was that it didn't make much sauce so next time I think I will up the amount of liquid. Other than that it was very yummy.

Pan poached fish

INGREDIENTS:
1/2 cup water
2 tablespoons lemon juice
1/4 cup white wine
2 (4 ounce) fish fillets
1 tablespoon butter
2 tablespoons capers
ground black pepper to taste
1 tablespoon chopped fresh parsley


DIRECTIONS:
Bring water, lemon juice and wine to a boil in medium-sized skillet. Reduce heat to a simmer and place fish fillets in pan. Cover and simmer over low heat, 10 minutes per inch of thickness, measured at thickest part; or until fish flakes when tested with a fork. Remove fish from pan; keep warm.

Boil remaining liquid in the skillet until it is reduced to approximately 1/4 cup. Whisk in butter and stir in capers. Spoon sauce over fish. Season with pepper and sprinkle with parsley.
 
DD has an ice skating show rehearsal tonight so we are eating early. I have a big pot of spaghetti sauce with meatballs and sausages in it simmering and I just put the pasta water on the stove. Hopefully, it boils soon because I am starving! Bread and salad complete the meal.
 
I have pork chop casserole in the oven for dinner. I am so hungry I just raided DS's Easter basket for peanut m&m's.
 
Another successful dinner! Everyone loved the Spaghetti and meatball stoup!!

Tonight we are having an awesome dish my husband loves, and I got the recipe straight from the DIS!! :) It's crockpot Italian chicken. My thanks to whoever originally posted it. Here is the recipe:

[font=&quot]1 package chicken tenders cut into bite-sized pieces
1 can cream of mushroom soup
4 oz. cream cheese
¼ cup butter, melted
1 .7 oz packet dry Italian dressing mix
½ cup white wine
[/font]

[font=&quot]Put chicken in bottom of Crockpot. Mix soup, cream cheese, butter, and Italian dressing together. Pour over chicken. Top with white wine.
[/font]

[font=&quot]Cook on low for 6-8 hours. Serve over angel hair pasta.[/font]

Mmm mmm mmm! It tastes similar to chicken alfredo :)
