Well my dinner with my friends ROCKED!! The food was awesome and I think they really enjoyed themselves. And it was a good call to skip the appetizer. There was more than enough food and they were very stuffed when they left. It was so funny. I made a huge salad with just greens and tossed in a broccoli, cauliflower, and carrot mix, and chopped up some cremini mushrooms. I made a condiment plate that had red onions, green peppers, cherry tomatoes, black olives, and pine nuts on it. The cool part? Everyone went back for seconds on the salad!! :)

Tonight we are obviously having leftovers :)

Yipeeeeee! Tonight is pizza night, also leftover Shepherd's Pie for DH (he doesn't eat pizza, is that crazy or what?)

Most of the meal ideas I've gotten off this thread have passed the picky eater test at my house. The meal that's gotten the best raves by my picky son? The chicken pot pie!! That's a fabulous one. In fact, he wants it again. Guess I'll have to work it into next week's menu!

Welcome to our thread! Your breakfast for dinner sounds great! my kids love to have scrambled eggs, bacon and french toast for dinner.

tammyandtommy ~ :welcome: Your pancakes and bacon dinner inspired me. I'm going to make that tonight. DH::cop: won't be home for dinner and DS and I have to go to cub scouts tonight so this will be a nice easy meal. DS will be happy, he loves :love:bacon.

I have not cooked the past two nights. DH and I both have colds and have been surviving on takeout from the local indian place. Curry is always good for a cold!

I'm feeling better today and am making frisee aux lardons for dinner. It's just another version of bacon and eggs for dinner. I guess a lot of us are of the same mindset recently, foodwise.
 
I just tried a new recipe for tonight - quick potato chowder - and it came out great. I think we'll have biscuits with it.

QUICK POTATO CHOWDER

3 stalks celery thinly sliced
3 Tbsp butter
2 Tbsp all purpose flour
2 14 oz cans chicken broth
1 (1 lb 4 oz) pkg refrigerated diced potatoes with onions
1½ cups milk
1 cup half & half
4 slices bacon, crisp cooked and crumbled
salt and pepper to taste

In a deep saucepan cook celery in butter over medium heat about 5 minutes. Stir in flour until combined. Stir in broth, bring to a boil, stirring constantly. Add potatoes, return to boiling. Reduce heat, simmer uncovered 15 minutes or until tender. Slightly mash potatoes. Stir in milk, half and half and bacon. Heat through. Season with salt and pepper.
 
Easy dinner tonite. Chicken in a lightly flavored cream sauce over noodles. No cooking tomorrow night as DH has an appt at the Mass Eye Institute and it is scheduled to last all day. Last year we did not leave until almost 7 PM.
 
Taco Soup

1 lb cooked beef
1 or 2 cans Diced or Chopped Tomatoes
1 can Rotel Tomatoes
1 can Black Beans (not drained)
1 can Corn (not drained)
8 oz. can Tomato Sauce
8 oz. Water
1 pkg Taco seasoning

Simmer for at least 30 minutes. Serve with grated cheese, sour cream and corn or tortilla chips crumbled on top.

We just finished dinner and dh LOVED the chowder - he went back for seconds! The recipe is definitely a keeper. :banana:
 
well I just spent 4 and a half hours copying and pasting all the recipes into a recipe file on MS word.... I cant wait to get back from disney to try some new recipes! What am I saying I dont wanna come back?
 
I fixed OceanAnnie's Burrito Bake for dinner tonight. Only rather than heat up the kitchen, I just stacked several tortillas with beans, meat and cheese on each plate. (I also combined the taco meat and the refried beans so I could get them both hot with just one pan.) Then we microwaved our plates and topped with lettuce, tomato, salsa and sour cream. It was very easy and quite filling. Thank you!
