Tonight I am digging into my New Orleans box and making shrimp and grits.

Last night we just vegged and had panini in front of the TV, exhausted from staying up to watch the Red Sox win the ACLS the night before. It was OK though, the entire office was walking around like zombies and freely admitting it, so I did not stand out too much. I do have pictures of the panini, I'll post them when I get home, along with some food photos I took while on vacation.
 
And for the booths nobody cares if I'm "dress casual"- I can swill my wine in my natural setting of cargo shorts, flipflops, and a tee!:rotfl2:

And I think this will be my biggest problem in convincing Kenny to go. He hates having to dress up on vacation but if I can get wonderful reviews of the fabulous food, I may be able to tempt him without resorting to my natural charms. :rotfl: Thanks for the recipe BTW, I didn't expect you to dig it up before your vacation. I've printed it and I think it looks too good to wait until Thanksgiving to try it.

Not sure if you would want another version of a pecan pie but the "Mystery (Cream cheese) Pecan Pie is really good. Another family favorite is an old fashioned coconut pie (I've got a foolproof version!)

Sounds like a wonderful tradition you've started!!!

Nah, I'm ok. I don't know what was wrong with me last night. I just could not get to sleep. I am pee-poopered out so I know I will sleep tonight. Thanks, though :)

Sour Cream Muffins

1 heaping cup of self-rising flour
1 cup sour cream
1 stick melted butter.

Mix together and drop spoonfulls in muffin tin (I think I had about 9 muffins). Bake for about 15-18 minutes, or until golden brown on top.

I have two quick food questions for you experts here....

I bought a 3lb london broil yesterday (its on sale for $1.99/lb at our Safeway)
I've been marinating it in a combo of red wine, soy sauce, ketchup, steak seasoning, and worchestire sauce since yesterday. Now what do I do with it? (I can't grill on a grill b/c we are out of propane.) How else can I cook it, and what kind of things can I make with the meat?

2nd question:

I bought four boxes of the frozen phyllo shells and am wondering what kind of quick and easy appetizer I could make with these?

Thanks so much! Any input is appreciated!
 
My birthday dinner last night was just so-so, we have to find a better Chinese take-out place. DH did get me a little cheesecake from Publix that was very good though.

My mom took me out to lunch for my bday today (she had to work yesterday). It was the first time mom and I ever went out for lunch together, just the two of us. We had a good time. It started with going to a little park by the ocean to watch the shuttle launch. Then we went to a little local museum and finally to her friend's cafe for gourmet wraps.

I'll have to come back later and post WFD. Gotta go pick DS up at school.

It is a fun tradition. And the neat thing is that there's always enough pie left over for dessert the next night, as well!

I believe the pecan pie recipe is in the index. I'll go check. If not, I'll post it. It takes a bit longer than most, because you have to brown the butter for the filling, but it makes all the difference!

Those muffins sound divine!!! Can't wait to try them.

With the phyllo shells, you could use them to make desserts. Fill them with a cream cheese/confectioners' sugar mix, and then top them with berries.

Let me look through my stuff and see if I can find any savory appetizer recipes for you. I think I have some, just have to find them!

I think lunch with your Mom is a wonderful way to celebrate your birthday. I knew someone who sent his Mom flowers every year on his birthday and I thought it was so thoughtful.

I made this pie last year and it was a winner! My DDIL's favoite pie is pecan and she gave it a huge thumbs up :thumbsup2

I have a recipe for artichoke spinach and artichoke Parmesan dip you could fill them with if you are looking for savory. I would probably go for a sweet filling though. Let us know what you like.

I was planning on a roasted chicken tonight but I have had repair men and service guys here all day. I have the plumber coming soon so I give up. I tossed the chicken in to poach for chicken salad and will ask DD to see what the special is for today at Big Y.

For savory you could stuff them with a yummy (easy) spinach and cheese type of mixture ( like a spin/artichoke dip) and bake it in there..yum
OR you could even fill it with a pizza type of filling (mozzarella, pepporoni, some sauce)...really phyllo is just plain yummy with almost anything! :thumbsup2

We ate them as the dinner bread with our meatloaf. Next time I am going make them at breakfast and sprinkle a little cinnamon and sugar in them :)

Old Fashioned Coconut Pie

1 1/4 c. coconut
1 c. milk
1 T. flour
3 eggs, beaten
1 c. sugar
1/2 stick of butter, browned
pinch of salt
1 pie shell

Mix 1 c. of the coconut with remaining ingredients and pour into pie shell. Dust nutmeg over top if desired. Bake at 350 until set about 30 minutes. While baking or before baking, toast the remaining 1/4 c. coconut and sprinkle on top of pie when finished.

PLEASE don't think badly of me after reading this.

I have been a smoker most of my life. My parents both smoked as I was growing up. Well I'm going to try and make this long story short. I quit smoking 7 years ago and did very well until KATRINA turned my world upside down, needless to say I began smoking again the day after Katrina. I could use the excuse that the folks we evacuated with smoke, but I won't. With the deaths of my parents after that, well you all know the stress I was under.....

I've been contemplating quitting again for quite a while now and I can proudly say that I have been successful, it's been one week since I've had a cigarette and I'm doing VERY WELL!!!!!!!!! Johnny & Kyle are so proud of me, but I have to say it is the hardest thing I've ever done and I have a lot of work ahead of me with the anniversary of Dad's death this weekend. SO....

If you don't think badly of me now (I am so aware of the social stigma) I really would love to be able to report my progress and ask for support if needed, to my best friends.:guilty:
