I used this as a guide:

CARAMELIZED BAKED CHICKEN

INGREDIENTS
3 pounds chicken wings
2 tablespoons olive oil
1/2 cup soy sauce
2 tablespoons ketchup
1 cup honey
1 clove garlic, minced
salt and pepper to taste


DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Place chicken in a 9x13 inch baking dish. Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper. Pour over the chicken.
Bake in preheated oven for one hour, or until sauce is caramelized.

But I didn't measure anything, added corn starch to thicken, used bl/sl chicken, and cubed it to make it cook faster. Oh - and we were out of ketchup so I dumped some honey bbq sauce in it. It was the best I could come up with :confused3

It was actually really tasty, but really didn't caramelize (though I read the reviews and noticed that it didn't for others either). Might work better with skin-on chicken though. The sauce is runny but very tasty put on the rice.

Lori -- You could always have them ship the cookbook home to you. Becky does that all the time because she doesn't want to lug all the stuff she bought on the plane with her. That might be a little less conspicuous than if you left alone and returned with a package.

It has been a crazy day here, so I read this earlier and am just getting to respond now. This week we added gymnastics, chess club and basketball to our activities list, so it may take a while to adjust (and then it will be time for the next set of activities!)

Dinner tonight was good though. I came home while Caili was at ballet and quickly put a roast chicken in the oven and made mashed potatoes, roasted carrots, and cheesy cauliflower. I felt a little like Iron Chef putting all that together in 30 minutes! When we got home I made the gravy, and then realized I forgot the green vegetable, so I put a bed of arugula under the chicken. It was really good, and perfect for the dreary fall day we had here.


Good Grief! I can't believe you have time to even think about cooking, let alone doing it (and so very well!!)

I picked food up after picking DD up from college just because we'd be getting home after 7 and it would "take forever to cook". So we got Chick-fil-a!! All this talk made me hungry for it!!!

Oh My! And I'm the wild child?!?:lmao:

Yep! Gonna be a fun trip!!

ETA: I don't know if any of you remember, but last year my dad was going through a separation and possibly divorce. A few months after he told me, they decided to try to work things out. The other day he came over (he is on vacation this week) and told me it is definitely over.

This is definitely a good thing. My dad has not been happy for a long time and I have known it. He has a spirit in him now I haven't seen in a long time. Please pray for him and pray for me that I can be the support he needs right now. His name is Mark.

I don't think I've actually cooked anything all week & won't tonight either. Tonight we'll be going out to Drago's to celebrate my Mom's 69th birthday & my brother's 44th.

Yesterday DD & I ended up running into each other at the hair salon. She came in right after me & we were able to have lunch together. I had half of a really yummy salmon sandwich left over, so dinner last night was a quarter of the sandwich each for Bob & I & a salad & campbell's select soup.

It's been so crazy this week, shopping for plumbing fixtures & cleaning up getting ready for the remodel. Hopefully I'll get to start doing laundry & then packing this weekend.

Lauren, Glad things didn't go too bad with your sibs!

Lindsay - :hug: regarding your Dad. I know it's hard seeing your parent as a fellow adult having to endure this type of situation.

WFD -- Shrimp jambalaya. I threw it together the other night knowing I would need leftovers for the busy weekend (instead of takeout for everything but breakfast!) It's an old pass-along recipe from my step-mom by way of DH's best friend's mom.

It's prepared in a rice cooker - dump & go! Easy peasy!

Rice Cooker Shrimp Jambalaya

1 stick butter or margarine, cut in chunks
1 3-oz can of sliced mushrooms (do not drain)
1 1/2 cups rice (uncooked, unwashed)
1 med. bell pepper, diced
1 med. onion, diced
2 celery stalks, chopped
2 cups beef consomme
1 lb. shrimp (OK to combine or substitute crawfish, chx, sausage, etc.)
2 T. seasoning (I use Tony Chachere's)

Spray interior of rice cooker pan with Pam (spray well). Add all ingredients to rice cooker. Combine. Turn on rice cooker. Stir again once rice cooker is done. Serve.

Thinking about it, I'm not sure how many of you have rice cookers. They're practically a necessity here in LA with all of the rice-n-beans we eat here. I'm sure this could be adapted for stove top if you watch your liquid amounts.

No cooking for me tonight, Kyle's school homecoming bonfire is tonight so we'll grab something while out.

We are having friends over and the menu is:
Stuffed burgers (stuffed with blue cheese and garlic)-topped with red onion, mixed greens and tomato ( I am making reg. beef ones for the guys and turkey for the girls)
Salad
Apple pie...yum.
i am totally going to cheat with the pie though and buy that stouffers frozen harvest apples to use as the innards..i know, how Sandra Lee of me..but i am not going to have too much time..and HEY its "semi home-made" lol!

Tonight I'm making asian wings and shrimp fried rice.

I've never made fried rice so I'm very nervous!

I'm sure it will be great. Just make sure to prepare the rice ahead of time. It needs to be kind of dry to fry up right. If there's too much moisture in it, it will turn out mushy.

Here's my baking disaster story: The kids' school has their Fall Fair tomorrow, and they asked people to bring in baked goods to sell. I decided to make those cupcakes that are inside the ice cream cone because those always seem to be a huge hit among the kids. I've never made them before though. Right in the recipe in huge print it says DO NOT OVERFILL CONES OR BATTER WILL OVERFLOW. Well, overfilling is a relative term. What might seem overfilled to one person might seem awfully short to another. I had all this batter, and the recipe said it made 24, so I just kept distributing the batter among the cones until it was all gone. This, as it turned out, was not a good idea because this brought the batter level in the cones almost to the top. Well, I figured they weren't really serious about the batter overflowing. I mean, with regular cupcakes, they just get bigger and better, right? I am sorry to report that they were serious, and yes, the batter did overflow all over the place (although not into my oven, thank goodness!) I figure frosting covers any mistake though, so I just peeled off all the overflow and left the cake in the cones. Once I dump them off in the morning, no one has to know who made them. :thumbsup2

Dinner tonight hopefully will be less eventful. We're having fish and chips, and I really don't want any hot oil overflows!

Oh no! I would have thought the same way you did, like cupcakes - bigger & better. That's one I'll have to remember. I'm sure everyone will love them anyway!!:goodvibes

Are you ready for the very difficult and time consuming cake recipe?

Incredible melted ice cream cake

1 pkg 18.25oz. plain white cake mix
2cups melted ice cream any flavor
3 large eggs

Mix cake mix,melted ice cream and eggs together in a large bowl for approx 1 min. scrape down bowl and beat again for 2 minutes. Pour into a greased and floured bundt pan. Bake 350 38-42 minutes or when tooth pick comes out clean. let cool 20 minutes then remove from pan and let cool additional 30 minutes.

Chocolate marshmallow frosting

2cups confectioners sugar
1/2c unsweetened cocoa powder
6 large marshmallows
4 tblsp butter
1/3c plus 1tblsp milk
1tsp vanilla extract

sift sugar and cocoa powder together into a large mixing bowl. set aside. place marshmallows butter and milk into a saucepan over low heat. stir until marshmallows are melted 3-4 minutes. Remove from heat. pour in the sugar mixture and vanilla extract and stir until frosting is smooth and satiny. Frost cake immediately.


If you use premium ice cream you'll need 1 pint I used Ben & Jerry's Cherry Garcia.

Does the cake need frosting? Neither of us care much for frosting but love moist cakes.

I wonder if I could find lemon ice cream... he's a lemon fantatic.

Actually it doesn't need the frosting. I just poured alittle on the cake so it dripped down. This frosting is not overpowering.

If you use lemon ice cream just make sure it is not lemon sorbet or sherbet.
