Thanks! I found out today that DH knows where he is headed, but he hasn't told me yet. He is kind of paranoid about sending information out on the Internet. That probably means he would frown upon me putting his location up on here.
Sheryl, I am probably too late, but Coho salmon is much leaner than some other kinds of wild salmon. I would definitely marinate it, especially if you grill it, so it doesn't dry out on you. Serve it with a sauce. If you're baking it, topping it with a mustard sauce and some pecans would be good. If grilling, a butter sauce (I know you're trying to avoid that though) or a cucumber sauce would be tasty.
My stomach didn't want burgers tonight, so I just made pasta with a fresh tomato sauce, rolls and carrot salad.
