I am so glad that my NOLA friends are not too worried about Humberto. I thought about you all day while I ran more errands than I care to count. The weather guys are making it sound a little dire.

I read everything but now I am all discombobulated because I got "booed" (Thanks Tigerkat and Hersey) and then put the wrong picture in. I'll fix it.

Becky- so the surprise is out, oh well now you can all plan some together. I I know that you are going to have a ball! I am looking forward to Pics of the F&W festival. We are going next month and I have never been.

Lauren- I keep picturing your puppy trying to get those cats to play. He might do better to wait a while or risk a red nose.

I was planning on a pork roast tonight but Kady is not home, Buddy id working a little later, Risa and Jeff are moving things to storage and then we have a meeting at 7PM. I better cook it tomorrow.

Hurricane, hurricane go away! You guys are always in my heart.

For the hummus/veggie sandwich, I figured 3 points for the baguette (nice sized piece) 1 point for the pesto, 2 points for hummus, 2 points for the mozzarella and veggies were free, so 8 for a huge, filling sandwich.

I just had soup, so we're making salad and baked okra for dinner. I love fried okra, but it's not WW friendly, and we have some okra in the garden so I thought I'd coat it, use just a little oil and bake it. I'll let you all know!

Here is what I'm making this weekend. I thought of you all when I found it just now. So, it hasn't been tested yet, but here it is

Weight Watchers General Tso’s Chicken
3/4 cup canned reduced-sodium chicken broth

2 tablespoons cornstarch

2 tablespoons sugar

2 tablespoons low sodium soy sauce

1 tablespoon white wine vinegar

1/2 teaspoon ground ginger

2 teaspoons peanut oil
2 medium scallions, chopped

2 medium garlic cloves, minced

1/2 teaspoon red pepper flakes, minced or 1 dried chili, minced

1 lb uncooked boneless skinless chicken breasts, cut into 2-inch pieces
2 cups cooked brown or white rice, kept hot

1. In a medium bowl, whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger; set aside.
2. Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and pepper and cook 2 minutes. Add chicken and cook until browned all over, about 5 minutes.
3. Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes.
4. Serve chicken and sauce over rice. Yields about 1 cup of chicken and sauce and 1/2 cup of rice per serving.
For sesame chicken, omit pepper and top with 2 tsp. toasted sesame seeds!
320 calories, 4 g fat and 2 g fiber per serving – 6 points

I hope that you keep us posted, we love weddings but a Disney Wedding is going to be so much fun! There are not going to be any weddings in my family for a while (unless my oldest meets a nice girl, and he won't let me help :confused3), so I have to live through my DIS friends.

Lori--Ross is going to start keeping you on a pedastel...Now you are the coolest because you eat HP candy........and when I told him you didn't like how the cockroaches looked (thinking that he would) NOPE all he said was "Well who can blame her?!!?" You can do no wrong in his eyes, lmao!!!

Becky--Thanks for the confirmation to the slip of plans..that is to bad,but now like Nancy said, you can all have fun planning together!!
I am anxious to see the F&W pictures as I have not been, though I think that I might have talked Kris into taking me next year for a quick weekend of it.

Ross' schedule for fall is Football m-w-f practice from 5:30-7:15 and games on Sunday, and Karate t-th 5:45-7:10 and Saturdays he helps teach a class of Young Dragons from 9:45-noontime..unless we have a tournament then we are at that all day.............I can't wait for fall to end!!!!!

I am sure I missed something or someone....soo sorry!!

Dinner tonight is bourbon salmon from the fish market, with fresh corn from the farmers market, and wild rice.
Ok I better go get the rest of the groceries put away........this is the part of grocery shopping I really really really hate!!!!
 

Wendie I'll post the chicken recipe later. I'm making rice now to go with. I think it turned out pretty well except I would put less ginger in. I like ginger but since it doesn't have much sauce it gets very concentrated.

Lori I'll be at Target all weekend so I'll get some of the candy. Share with Ross when you see him. They had the jelly sluggs (which despite the name are pretty good) I didn't see the cockroaches so your safe. :thumbsup2

The kids still don't know about Mommom and Grampy coming on the trip, so it is still a surprise for someone. Like Becky said, I guessed the surprise -- it was the first thing I thought of when she mentioned she knew a secret -- so we were trying to plan behind our parents' backs. I am so glad they decided to come. The kids are so much fun -- our last trip the first time we arrived at MK they skipped, jumped and ran up to the gates. It was like a commercial -- and it is still so magical to them.

Dinner tonight was okay. I ended up getting flounder from the market. It was good and fresh --I served it with the tomato/cream sauce I posted a while ago -- but I was still thinking about Sheryl's salmon, so it wasn't quite what I wanted. The eggplant sticks were satisfying though.
 
Wendie I was so totalling unimpressed with the Orange chicken, so I won't be sharing that recipe. I did get it for the Kraft food magazine. I have other crock pot recipes that I know are good. I'll find those for you.

LuLu, I have made this recipe. It really is good...not like the fried version though but still very good.

It's funny. The girls will come upstairs when they know Riley is in his crate or very tired. I guess they can sense these things.

My chicken is the crock was done quickly too. I think 4 hours would have been OK...what do you think?
 
Yes I think 4 hours would be fine.

My chicken was dry and I didn't like the taste of the sauce. I might give it another try if I find a good orange chicken sauce recipe and try to fiddel with it, But I may just give it the "old heave ho"

Lulu, Thanks for the recipe! I'll try that soon, I never order the General's Chicken because of it being fried, so I won't be missing anything to try the WW version!!! Please let me know how the okra came out. I can't wait to hear more about the wedding! You must be spending lots of time researching here on the DIS!!!

I still haven't made the preserved lemon that Hersey gave me the recipe for. I was hoping to find organic lemons but even Whole Foods has conventional ones. So I'll definitly have to follow your tips & scrub them well like you said. I was really wishing I had them for the dish I made tonight, so I'm gonna try it with the regular ones. When I use them do I use less if a recipe calls for just lemons?

Here's some pics of tonight's dinner. ( I did do everything lowfat, but didn't measure or try to figure points for our dieting peeps.)

I started with Rachel Ray's recipe for Lemon Olive Chicken in her mag this month. But I marinated the chicken first in chicken broth. with a whole sliced lemon & added a ton of Moroccan/Middle Eastern seasonings. (I used a local rest.'s mix which has black pepper, coriander, chili powder & garlic. I also added turmeric, cinnamon & Bob's cajun seasoning.) When I cooked it, I added orange & red bell peppers & chickpeas. I also used pitted calamata olives along with the green olives. I also added more of the Morroccan seasoning. This came out great, super lemony & yummy. I wish I had chicken thighs in the freezer though, it was really good, but I just kept thinking it would have been even better with the chicken thighs.

Lemon Olive Chicken with Couscous

4 SERVINGS
Prep Time: 10 min
Cook Time: 1 hr
3 tablespoons extra-virgin olive oil
2 1/2 pounds chicken thighs and drumsticks, skin removed
1 onion, chopped
1 clove garlic, finely chopped
1 cup chicken broth
2 lemons, quartered
1 cup drained Spanish green olives, rinsed and halved lengthwise
1 sprig thyme
Salt and pepper
One 10-ounce box (1½ cups) couscous

1. In a large, deep skillet, heat 2 tablespoons olive oil over medium heat. Add the chicken and cook, turning occasionally with tongs, until golden-brown, 6 to 8 minutes. Transfer to a plate and set aside.
2. In the same skillet, add the onion and cook over medium heat, stirring, until softened, about 3 minutes. Add the garlic and stir for about 1 minute. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Return the chicken to the pan and add the lemons, olives and thyme. Season lightly with salt and pepper. Bring to a simmer, cover and cook over low heat until the chicken is falling off the bone, about 50 minutes.
3. About 10 minutes before the chicken is done, in a small, heavy saucepan, bring 1¼ cups water to a boil. Sir in the remaining 1 tablespoon olive oil and the couscous; remove from the heat, cover and let stand for 3 minutes. Divide the couscous among 4 plates and top with 2 to 3 chicken pieces and some sauce.

I LOVE preserved lemons, with chicken, fish and shrimp ESPECIALLY!

I wouldn't use less lemons, but I would cut out any salt. Preserved lemons are very salty.

I think I might have to make some more preserved lemons, soon, You reminded me how much I LOVE them.

Well, I have my engagement party Oct. 6, so we're planning that.

My mom and I are making chocolate engagement rings (shaped molds) and kids sushi favors because it is at a Japanese Steakhouse (reminds me of Teppanyaki in Epcot). I also have a kimono style dress to wear. So, I am excited about this party first. Then, wedding details will follow after. Although, I do have my tiara and ring bearer pillow already.

Were you using thighs or breast? I knew going in the bnls/sknls chx breasts would cook quickly, but it timed out to be less than 3 hours on LOW! I'm glad I decided to peek when I did, or mine would've been dry as well.

I agree this one will get the "heave ho" as well. It definitely qualified as easy, but I'm still not pleased with the texture of the chicken once it's done.

Now I did find a repeat-worthy recipe in Kathy's Velvet Shrimp! Kicking myself for waiting so long to try that one.

WFD tonight? Hmm.. probably leftovers or pizza. Momma doesn't cook on Fridays!
