Hello everyone!

WFD tonight: I get to go to my favorite fish market..:cool1: . I think I will be picking up a salmon florentine pinwheel to cook up for myself, and if my Mom comes over maybe a nice piece of a white fish or stuffed shrimp..her favorites! I think I will have some rice, green beans and I still have a leftover sweetpotato from the other night that I could bake up...

Currently I am enjoying a Fresca..fancy huh? ;)
 
DH got one of his wishes tonight and we had Indian food. Why is it that for the first couple of weeks he was home, all he wanted was my cooking, and now all he wants is takeout? :confused3 Should I be offended by this?? :laughing:

I'm thinking the appropriate emotion is more in the range of ....... Thankful. ;) I'm always thrilled when Kenny suggests takeout. But there are so few good choices nearby, those times are few and far between and seem to suspiciously occur around a peak in my hormone level. :rolleyes1 Coincidence, maybe?


Humongous disclaimer......Not about your cooking...... When I was talking to Chris he told me how much he missed his Mother's cooking :confused3. Are you kidding me?????????No. Boy he sure was homesick because my sister cooks best when she gets ready to eat from Costco :lmao::lmao::lmao:

:lmao: :lmao: Nancy when I was in college I dated someone who joined the army. His mother was such a terrible cook he said he liked the food they served him in basic training. He said it was much better than what his Mom served them as kids. :scared1: But, then again, this is the woman who's "specialty dish" was named "Greasy Beasy" by her family. :rotfl: :rotfl:

I'm glad the rest of your day was uneventful. I'm glad you are ok, but honestly, I never thought anything like that could happen on an escalator. I've heard of shoelaces and shoes getting caught, but I didn't know the entire thing could become possessed and try to throw everyone off.


Gretchen- dinner was good, but overcooked. I followed teh recipe...something I am not good at...and I wish I tinkered, but it was a Taste of Home recipe.....

The potatoes were very soupy but that was good because my beautiful thick cut chops were dry. I'll post the recipe tomorrow, but I think you will want to tinker with it. The taste was good and the potatoes were good, but way overdone.

Thanks, if you get time, I'd like to give it a try. Maybe between all of us, we can fix the problem.

Morning all--
I have p/t first thing this morning, then I have to go to visit my mil....((((aaaarrrghhh)))) then I will come home and drink heavily....I am kidding....at least at this moment I am kidding, I should prob leave that open until I am back from a visit with her huh, especially as this is when I will be telling her that we will not be here for christmas....oh yeah this is going to go over well.....I better check the wine fridge to make sure it is well stocked, lol.

Do you think wine is strong enough for your mil?!? :confused3 Don't take any chances.


Wendie, good luck with that today! I know yuor pain. I am going to see my inlaws this weekend at which time we will be telling them that we are not going to be joining them on Thanksgiving.

Last night's chicken had a good flavor, but was a little too soupy. We have plenty for left overs tonight, so I'll see how it does on a reheat. Kenny liked it, and since he really isn't wild about chicken, it must have been ok. Actually, what he said was the bacon actually gave the chicken some taste. :rolleyes1 But he did say he didn't mind eating it again. The kids liked it (well, except for my DD, who doesn't eat many things - autism issues). So all in all, I guess it was a hit. It has wild rice, mushrooms, green onions, carrots, and mozzarella cheese if anyone is interested in the recipe.

We are talking about the book "Julie and Julia" about a woman in NY who spends one year making all the recipes in Julia Child's book Mastering the Art of French Cooking. Since we are discussing this book, our hostess has promised us a French meal. We'll see!

For the rest of the family, I'm making pizza meatloaf muffins (I know that everyone will eat those), with green beans and mashed potatoes.

how fun! i just started in a book club a few weeks ago, we are reading " the bell jar" ...i probably should have read this book in high school, or at least college but somehow i missed it!
That book sounds really interesting..is it a true story?

I am making lasagna, I made 2 pans a week or 2 ago and froze one so I got the one out of the freezer and decided to cook it tonight, feel lazy, anyone know how long it should take to cook?? It had been in the oven for 30 mins and I checked and it was still mostly frozen solid.

Did you like the book? I actually read that story as her blog, before the book came out. I found it hilarious. I know there are some people who thought she complained too much and drank to much, but I did not really agree. I thought it was a really interesting idea for a cooking experiment.

MApigletfan, yes, it is a true story. It was actually her blog, and it got so popular that she was able to publish the finished blog as a book.

OK, off to cook some Asian food!

Yes, it's a true story. It's a fun premise, and she writes really well, but she has a really foul mouth! If that turns you off, don't read it. I enjoyed it, though! There are some really wonderful comments that relate well to life.

My neighbors and I have been holding monthly club meetings for 2 years next month! It's been so fun, and I've read a ton of books that I would never have picked for myself! If you want any recommendations, let me know. I've kept a list of all we've read!

Pizza meatloaf muffins are a recipe I found a while ago, and got 2 thumbs up from my picky eaters. Basically, it's a meatloaf recipe with Italian seasoning and pizza sauce in the meat. You bake them in muffin cups. I think the recipe is posted on the front page. I like them because they cook up quickly! I love meatloaf, but hate having to wait so long!

I did enjoy it! She really expounds on her experience. There's not as much of her blog writing as I would have thought. She really takes a good look back at her "year of cooking dangerously." There's so much that all of us could relate to in it! If you liked her blog, check out the book!
 
Dinner smells so good! I have the garlic clove chicken in the oven now and will serve it with mashed potatoes sweet corn on the cob and sliced cucumbers. I have a baguettes to serve with the garlic.

Gretchen- I'll post the recipe after dinner...it does need some tweaking.

Kim, I don't really know, but my best guess would be about 4 hours, give or take. If Lauren checks in, she may know.

Lasagna unfrozen takes over an hour to bake. I would cover the pan and let it cook that way. I'm going to say close to 2 hours :confused3

Someone asked if it could be done with boneless skinless breasts and I'm not really sure it would work, what do you think?
 
I think it wouldn't work only because it is a slow roast of the garlic. That's what I think make it taste so good. Boneless would get dry IMO.

I forgot to tell you what other "treasure's I found. I have no less than 5 different pasta's. 3 boxes of elbow, 4 boxes of orzo, lasgna, linguine, thin spaghetti, vermacelli and bow ties. Make that 7 different pasta's. Stuffed back in my pantry was tuna and salmon and jello that no one eats. Who buys this stuff? Must be the same people who come and leave all their dirty laundry for me. :rotfl2:

I would not do it. I think this is one recipe that needs the skin and the bone for flavor, which was very good!

Kathy- I have gynormous garlic...it is not elephant garlic but it very big. I used about 7 bulbs and then just added 3 whole bulbs to the pan. We loved it, but the best part was the garlic. I asked DD and DSIL..the kitchen elves, not to toss the cooking liquid, but I am not sure what I can do with it, it just seems like such a waste of cook tasting stuff that is terribly bad for you :lmao:

Ok Gretchen, here you go.
Pork Chops with Scalloped Potatoes

3 T butter
3 T flour
1 1/2 tsp salt
1/4 tsp pepper
1 can (14 1/2 oz) chicken stock
6 rib or loin pork chops 3/4 in thick
additional S&P optional
6 cps thinly sliced potatoes
1 medium onion sliced

1. In a pan melt butter, stir in flour S&P.Add chicken broth, stir and cook until mixture boils. Cook 1 minute. Remove from heat and set aside.

2. In a skillet brown chops in oil, season with additional S&P if desired. In a greased 13x9 in baking pan layer potatoes and onion. Pour broth mixture over potatoes. Place chops on top. Cover and bake for 1 hour. Uncover and bake 30 minutes longer or until potatoes are tender.

6 servings

I used 9 boneless chops and about 9 cups of potatoes. I used chicken stock. My potatoes are not starchy and that may be part of the problem. I used convection bake and baked 1 hour an d15 minutes.

I think I would use bone in chops and used a thicker roux. I would also bake less time or avoid the convection cycle. What do you think?
