Here's dinner tonight--curried coconut chicken, jasmine rice with sesame seeds, and bok choy stir fried wih sesame oil and sriacha condiment. It was spicy! I really liked the bok choy--less so the chicken. I am having a really hard time eating meat lately--I think I am just naturally reverting back to being a vegetarian--well, maybe a pescetarian! :)

:worship: WOW!!!! Man does that look fabulous! You just keep outdoing yourself!!! Becky, what's in the chicken, looks some veggies in there with the chicken. And I've never cooked bok choy before! Does it take much longer to stir fry than napa cabbage?
 
I made DH a happy man tonight. He actually said his lack of enthusiasm this morning was because he thought I coudn't pull it off! ;)

I wonder how everyone is keeping up with after school activities and kids???
I only have a DGD and my DSIL was home with her yesterday and my house is upside down, laundry is backed up, I have no food cooked and today is not looking any better :rotfl2:!

We shopped for dinner and I have a list of things I want to prepare early before I help at Gail's house. My BIL is working on a ramp but I can see that he is going to be tearing down parts of their brand new home.....they did not buy a handicapped accessible home and thought that they would manage, but this is the first event that they plan and it is clear that it is not going to work. They are out of the radius for the wheelchair service so that is bad, but his brothers chair is massive so swinging it around is going to be very difficult. Mike was pretty upset with himself yesterday so I am especially glad that we planned on the garage for dinner. We are going to use china and silver and we bought more wine glasses, so it is going to be a little weird, but fun! I was able to get more Rosa....funny, after the wine guy got some there seems to be a market for it :confused3.


Thank you for all the suggestions, I appreciate them. This is not my party or my guests so I worry about how my cooking will be. We bought sugar peas and green beans so I am not sure which I will fix, minted peas or the beans with tomatoes. Which do you think works better?

Sheryl- I have my DH thinking about the 500!

Good Morning All!
No cooking here today...well, breakfast only. We are going to see American Idol tonight and Tom is home so we can get an early start...he also got a new part to his lawn tractor yesterday and wants to hook it up...how convenient! ;)

Breakfast will be english muffins, eggs, canadian bacon and maybe homefries...I wanted crepes but do not feel like making them...Dinner will be a great chinese restaurant.

Last night was Quesidillas again..had to use up the veggies and beans! :) I did make homemade guac. again though, which is always good with me!
Tonight..not sure, gotta take the dog to the vet :( poor guy...we found some crazy lump on him that needs to be checked out..i know, appetizing...:lmao:

Well, all my babies are now officially in school! I just got all 4 out the door to catch the bus. The twins were so excited to get up, get dressed in their new outfits, and be with the "big kids". I have to admit that I got a bit teary, but I expected that!

Dinner tonight will be taco cups, green salad, and brownies for dessert. Fast and easy.

I can't believe how quiet my house is right now. Hopefully I'll get used to it!

Glynis, you know it's coming & still it tough isn't it. :hug: Hugs for Mama! But wow, a couple of quiet hours will be nice won't it!

Dinner tonight, DH requested Mexican. So if I get off the comp. & get myself out the door I'm gonna fix Pork Loin in Tomatillo Sauce, if I don't get to the store it's going to be Ropa Vieja. I know technically Cuban not Mexican but close enough!

Sheryl - With all sincerity, that dish looked fabulous. Almost fabulous enough for me to try some of that vile, nasty, okra. Alan and Becky have their food issues, okra is mine (well, and peaches, but that is another horrible story). My mom used to boil it and would put that slimy goo on our plates as kids. Just thinking of it makes me shudder. But the dinner looked lovely. I just imagined it didn't have any okra in it. ;)

Gretchen, It's funny the stuff I'll eat these days!! I've been trying out lots of old recipes & foods that used to make me want to barf! Greens, okra, eek even liver! I guess as I get older I'll just eat about anything! :laughing:

But the okra dish really did come out great! Kathy's tip of putting the lemon slice in it really cut down on the sliminess of it. So it came out just like a thick stew, still had those little okra seed things in there though, so beware of that too!

I'm going to cook Ropa Vieja tonight. Going to try it with a bottom round roast though. Never tried this usually use flank steaks, so I hope it works.
I'm trying roast because that's what in the freezer, but also DD loved it the last time I fixed & wanted to fix more of it & only had one little flank steak in there.
I know Jenny(MominRI) fixes this often & for a bigger crowd. Jenny if you're lurking, think this will come out okay?:confused3

I feel like I am feeding Buddy, just made some tuna sandwiches for when Tom gets done tinkering!!!...he is adding a "Johnny bucket" to his tractor...this is like a front end loader. He goes on the tractor message boards and he wants to post a pic of me in the bucket since it holds more weight than me (I will not tell you guys my weight but I am 5'11" and could really lose 30+ #S)...

I will show you guys the pic too. I will try and take pics at the concert but we don't have too great of seats...I broke down and put my contacts in today...I just about poked my eye out. I have longer nails than usual...ouch!!!

Ok, but remember, you asked for it. One summer when I was probably around 9 or 10, my great-aunt took my sister and I with her to visit another great-aunt in GA. Before we left, she promised several of her friends and members of her Sunday School class that she would bring them back some fresh peaches from GA.

Now my aunt drove an OLD Buick with no air conditioning and it was the middle of the summer - read HOT, really HOT. On the way home, we had to stop at an orchard to pick all these peaches my aunt promised her friends. Because her budget was tight, we had to pick all of those peaches ourselves.

After several brutally hot hours in the orchard, we crammed the car full of the peaches and started home. We were hot and sweaty and covered with peach fuzz and containers of peaches were literally everywhere in the car - on our laps, in the floor, in the back window, you name it. So we rode for 6 hours miserable because we were hot and itchy and due to the quite pungent smell of peaches and my aunt's rather significant B.O. :sick:

To this day, I associate the two smells and cannot and will not eat a peach. Nor can I use any soap with a peach odor. My sister doesn't seem to have this problem, but she laughs whenever we are together and peach cobbler is on the menu.

No dear, I was really just teasing you. From everything you've told us, Tom sounds like a wonderful man who has the good sense to have fallen in love with you. I could just imagine how he could be so wrapped up in his excitement over his new toy he could say something like Sheryl posted.

My DH is the type of person who would never hurt anyone's feelings on purpose, but he is also very honest. He will say things before he thinks about how they will be received. He and I had been dating for less than a month when I had a Dr's appt for my blood pressure. It was high and I was telling Kenny what the Dr told me to do. Kenny immediately told me that if I lost weight, my BP would come down. Almost as soon as the words were out, he realized what he had said. I let him stew for a couple of seconds and burst out laughing. That's just the way he is.

EEWWWWW!! That's horrible associating those two smells. I'm not a big peach eater but I love the smell, at least I used to.:rotfl2:
 
We are having baked stuffed pork chops, mashed potato and peas. My dh had his rotator cuff done today and I figure he can eat the potato if he doesn't feel like the rest of it. It's one of his favorite meals though... I bet he'll eat it.
 
Hi Sheryl, the veggies in with the chicken are red onion, red peppers, jalepeno peppers, nd garlic. If I made this dish again I would add a lot more vegetables--definitely tomatoes, and then more green--either peas or green beans, I think.

Bok choy is really easy to cook--yes, just like napa cabbgae it comes together in a minute or two.

I still have not decided wfd tonight...Laura gave me a good idea for a panini with roasted eggplant, roasted peppers, fresh mozarella and pesto, so I might make that. Or else maybe (turkey) sausage sandwiches to have with the baseball game (Go RED SOX!), but I am feeling kind of meated out.
