My husband took the day off so we could spend it together. We are going to lunch at The Olive Garden, maybe a movie or something after. So no cooking for me!! Woo hoo!

Oops double post!

Here's a pic of last night's dinner. Pics didn't come out great, but it was yummy!

Ropa Vieja with Cuban Black Beans and saffron rice. Cuban avocado, onion salad. And of course gotta have a nice drink that sticks with the theme, Mojito's!!

WFD at my house: well, greg is at the firehouse tonight, so i get to make fish..wheeeee :) Seriously, i am that excited! He hates even the smell of fish..he has no idea what he is missing! I think I will pick up a nice piece of crabmeat stuffed haddock at my fish store and make some steamed zuchinni and brown rice with it..YUM...

I have to tell you that I'm jealous that you can pick up fresh crabmeat stuffed haddock at your fish store! We can get local fresh fish here, like redfish or trout. Sometimes I can find nice salmon or tuna at a decent price. But the only place to get anything like that, fresh & ready to cook, would be a Whole Food Market. And y'all know how expensive that can be! When I see all of the wonderful Markets all over the country, it makes me want to live there! Our own French Market still has not reopened since the storm.:sad1: But even when it was, it only had locally grown veggies & seafood. :confused:
 
Dinner last night was really good. I have to say that I was surprised that some people arrived late and that a few did not come but had not told my sister that they could not make it. She had worked hard to make sure that her home was ready and I know that she made sure there was more than enough food.

My BIL was able to get the chairs in the house and by setting the tables up in the garage there was plenty of room for both. The WC van he rented had a lift so all he had to do for dinner was give the guys a ride around and lower the ramp :thumbsup2. By next summer I foresee a walkway to the back yard and a portable ramp for access to the deck though. We did not use her back yard last night but they entertain a lot in the summer.

My family is impressed by my WFD friends. I have gotten teased a lot because they don't do the "message board thing", but after last night and my stories about all of your recipes and cooking help....they are fans as well!

That lift van is the neatest thing isn't it! I know we like ours! It has been such a relief for my back having that ramp! Hope your Sis & BIL can get the house fixed up so they can enjoy more get togethers with his brother!

Which dishes did everyone rave about? Cause I know they had to be really impressed with that fine spread you set out!!!:goodvibes
 

Sorry to be a downer, but with the anniversary of Katrina tomorrow, all the memories come flooding back. The damage to my house was immense but nothing compared to losing my sweet Dad. He never knew when he evacuated that he would not make it back home, it was the beginning of the end of his life journey.:sad1:

Kathy, I'm sure this is going to be a difficult week for you. However, your wonderful husband anticipated that and I'm sure that's why he scheduled his surgery for today. He knew you would be much too busy taking care of him to have time to reflect on the storm or your Dad. ;) Seriously, I am sorry for your loss.

I can't complain about the Red Sox loss now, I suppose...

Sure you can. Being disappointed in the Sox is a long standing tradition from what I understand. I can completely relate. I am a fan of the Univ of South Carolina football team. More heartbreak than a person should have to stand.


I think he had a good birthday. I threw a kicking murder mystery dinner party for him Sat and tonight was lowkey with just us. Plus we're watching Blades of Glory right now which he has been dying to see.

What a great party! With that and dinner, I'm sure he had a wonderful birthday.

Sorry, but Kathy did ask. I'm glad the dinner party went well. I'm sure you're exhausted. I always find it much more difficult to cook in someone else's kitchen.

Happy Birthday, Lauren!!! Eat some salad and breadsticks for me, ok? I really miss Olive Garden!!! Pasta is too hard on my new tummy, so I tend to stay away from Italian food where I'll be tempted.

Dinner tonight was so much fun, and very kid friendly. For those of you with picky eaters, this might just be for you!

I took a couple of tubes of refrigerated biscuits. I separated them, flattened them into disks, and formed them around the backs of my muffin pan. I baked them according to the directions on the package. While they were cooking I browned up some ground turkey, added taco seasonings, and chopped up taco toppings.

The kids were able to put together their own taco cups. Jacob ate 3 and he is my picky eater. Of course all he ate was the meat and cheese with sour cream on top, but I had added salsa to the meat, so there were some veggies there.


Tonight's dinner will be the chicken bruschetta bake from this list. I'm so excited!! I love this meal. I'm making some broccoli with cheese sauce to go with it. No starch, since there's stuffing on top of the chicken. Not sure about dessert. Will have to see how things go today!

Up until yesterday I got the looks....you know which ones "Oh, you chat to women on a message board???????" Goodness knows when I say my friends. Well that changed after dinner.......

They really liked to pork roast. No one had ever tasted one with that kind of flavor combination. The artichoke wonton cups were a hit as well and, this is for Kathy, EASY!

Big surprise was the spinach gratin with mushrooms. I cooked the mushroom first as suggested and then topped them off with the spinach mixture. My sister hates mushrooms and is not a fan of spinach but she said she really liked this.

Now I cannot get out of my own way today. I get up with my DH at 4:30 and I did not get to bed until after 12:30 :scared:, so today is a bust :upsidedow


That lift was perfect. I have to tell you Sheryl, I was surprised by his family a little. They knew that Gail had set up tables so that we could all eat together but they did not realize that Mike was going to help both men so that they could join us. Their reaction made me realize how isolated people who have limited access to special events can be. I understand those power chairs take a lot of room but if family thinks it is normal to keep them separated :confused3

The procedure went very well, the doctor is pretty sure this will be all that is needed for Johnny to have full use of his arm again, along with a little therapy. He's sleeping now and honestly he's doing much better than I thought(but he's still drugged).

The best news is he can go back to work on Monday!:dance3: :yay: :cheer2: Since this wasn't an invasive procedure recovery time is minimal. So I will cater to his every need for the next few days to let him know how special he is to me.

I've gotta go back and catch up with all that's going on, but I did see Becky did tater-tots! Now I know she's my hero for sure!:thumbsup2

Dinner tonight was planned - I had made meatballs a few weeks back and made a huge batch to freeze. So spaghetti & meatballs, caeser salad and garlic bread!

He's sleeping now and honestly he's doing much better than I thought(but he's still drugged).

The best news is he can go back to work on Monday!:dance3: :yay: :cheer2: Since this wasn't an invasive procedure recovery time is minimal. So I will cater to his every need for the next few days to let him know how special he is to me.

I've gotta go back and catch up with all that's going on, but I did see Becky did tater-tots! Now I know she's my hero for sure!:thumbsup2

I'm so glad that everything went well! I will keep him in my prayers for a quick and relatively painless recovery! Good for you on planning ahead for your meal tonight. I would be running around like a headless chicken!

My DH cousin have the GBP and she looked at me as though I wanted her to chew glass when I offered sparkling water. I had no idea the carbonation was her idea of torture. She won't touch rice either, but I am learning :thumbsup2.

I had to look twice at Becky's picture to make sure I wasn't seeing things. I won't even make my own fries so Tator Tots are not unusual in this house, but now that I see them in her home I am going to consider them A-OK :cheer2:

That reaction gives me a :headache:. I could have sold pictures of my sister's face yesterday. I told her I was drooling over Sheryl's summer stew and she could not believe we had pictures. I wish you could have see her face when I told her the "Food Porn" is almost the best part :lmao::lmao::lmao::lmao::lmao:I thought I was going to have to tell her to close her mouth before she caught flies!

Tonight I am making pasta all norma--pasta with eggplant-tomato sauce. Of course, then in this morning's food section of the paper I saw a recipe that I really want to make instead, for a zucchini-corn-goat cheese clafouti. I already have the eggplant salting though, so I think I am going to have to stick to my original menu for tonight and make the clafouti tomorrow.

If you think last night's photo was goofy, I will be sure and take photos of the food we'll be eating at Fenway on Friday. That stuff will make the tots look like gourmet cuisine.

How do you stand it? My sister was already annoyed because her SIL was an hour late and she was bring Mike's Mom along with his niece and nephew. Her face got purple, it was clear that we had not set two lonely little places in the kitchen :confused3. Now these guys have very limited motion now and both require some help. My sister and my brothers wife, (her brother goes through this constantly) made sure that they had food they wanted and not food that was placed without thought. Gail said if Mike doesn't have the Holiday off it is a real possibility that no one will make sure they are included. He is a PA in an ER so he cannot pick and choose his days, he ends up going without sleep in order to drive them there. He is researching buying a wheelchair van so that they are not always worried they cannot get one on short notice.
