The lemon pie really is very good for a quick, easy dessert and very low fat/cal if you use skim milk and fat free cool whip:

You should have seen Andrew when there was a very loud crack of lightening and then they cayote started howling...he nearly jumped into my lap!!! :scared1: Poor thing!

Simple tonight:

Baked sole stuffed with crab meat from Omaha Steaks for me
Baked tilapia for dd (she doesn't like the crab meat stuffing)
Baked potatoes
Salad

Easy and quick clean up.

I love the stuffed sole...very easy too! I may have to order up some more soon...:)

We went to Cracker Barrel this AM for breakfast...which is sooooo good but I always get sick after. Maybe I should change what I order.

I didn't think I would be hungry but I am so we will have cheeseburgers and fries. Easy Peezy!

okay - the lamb kidneys had me curious - but has my complete attention!!

Ok, but be warned: this could turn your stomach. Especially if you've just eaten.

My MIL is an "interesting" person (for lack of a better word, and one that won't earn me points). When my DH was born 3 months early, he had a hip that had only partially formed. She read in some homeopathic magazine that there is some mineral in beef brains that would help "develop" the hip. So, from the time DH was about 3 months old, she would blender up some beef brains and fill his bottle. I don't know if that worked or whether the hip would have developed on it's own, but his hip is just fine, now.

As DH got older, she decided that if the beef brains had done so much good for DH, then all the kids should share in the benefits. So, each morning, she would line up large glasses on the counter (picture 11 glasses all in a row), and she would fill them to the top with the blendered up mess. DH says it was really gross, all filled with stringy fibers that couldn't be pulverized by the blender. They just couldn't gag that down, so my FIL would offer them pineapple juice chasers to get the taste out of their mouths. Some of the older siblings would try to sneak out of the house without drinking it, and when they got home from school, they would find their glass waiting for them. They were not allowed to eat or drink anything else until that warm, gooey mess was ingested.:sick: :sick: :sick:

Like I said, my MIL is a piece of work!

The lamb kidney story is that I was an extremely stubborn eater as a baby/child. I would not eat when expected to, and I wanted to do everything myself, not be fed, or sit at any particular time. My Mom says that she usually fed me by hiding food around the house, because I would eat things I discovered on my own, rather than things given to me. So, I got kind of thin, and the doctor said I was malnourished. He told my Mom to boil lamb kidneys and blend them up in the blender with their cooking juices and force me to eat them! BLEEECH!!!

The ironic thing is that, like most kids I think, I grew out of it, and became healthy, and now eat pretty much everything...except meat! I eat no red meat, no pork (except bacon...yummy, yummy bacon), no veal, no duck, and no lobster. I don't really like chicken all that much, but once in a while it is OK. It's a mostly textural thing for me, with the exception of beef, which is a flavor thing--to me beef tastes like metal.

So, on to today's linner (Laura sadly missed :( ) Pictures are limited because of my Dad's whole "no picture" thing.

My brother grilled steaks for all but me, (L, you would have been glad you missed it--it was BEYOND rare--raw!! Yuck!!!). My brother also grilled me a piece of chicken, but I could not eat it. I made a saute of the mushrooms. Action shot of the mushrooms cooking here:

My Mom made cauliflower casserole (yum) and zucchini fritters (meh). The star of the show, though, were the frites I made. I just got this horrible hankering for frites. I tossed them in garlic, parsely, parmesean cheese, and truffle butter. OH, they were so good! My mushroom hating brother had four helpings. He does not know that truffles are mushrooms. ;) Photo:

Glynis If you do make plum jelly remember to have some cut lemons and nowhere to go for a couple of days. They turn your fingers and nails a lovely shade of brown.

I'm going to have pasta with salad for dinner nothing fancy I have one of my headaches today. Plus I decided to scrub the hallway tile and clean the grout, since it was nice and sunny out not rain :dance3:.

Becky - That sounded pretty bad too, but your pics, as usual, were amazing. Tell your Dad that we HAVE to have more pics - I really wanted to see the grilled steaks! Can you share the frites recipe????

Just wanted to come on here and let ya'll know that DS ate ALL his dinner tonight--even had seconds!:cool1: Okay, so it was just spaghetti and meat sauce--but even that has been a challenge of late. He even ate the meat in the sauce. I was beyond amazed. Last night we had a cookout at some friends' house. We picked up some amazing 3 cheese burgers from Fresh Market! They were to die for. We also picked up our hamburger buns there as well, never had such a tasty burger. And then hot fudge brownie sundaes for dessert. Yummo!

Glynis--that was the most disgusting story I think I've every heard!:scared:
 
Frites:

3 large idaho potatoes, scrubbed, peeled and sliced--I have a mandoline to do the slicing--if you don't you are looking for a thin, shoestring type size of potato. I also have a deep frier so...

Water, for soaking

seasonings to taste.

Mandoline or slice your potatoes. Soak in cold water for at least 20 minutes, or up to overnight. Rinse very well, and dry completely.

Meanwhile, heat oil to 325 degrees. Dump all potatoes into heated oil and fry, stirring with tongs, until fry does not snap when broken in half. At this point, you do not want the fries to be brown at all. Totally white, and limp.

When you get the fries to this stage, remove with a slotted strainer on to a towel lined baking sheet and let cool. Cool a minimum of 20 minutes, and up to 3 hours.

meanwhile, heat your oil to 375 degrees. Also, turn on your oven and have ready a baking sheet with wire rack.

Now, fry your frites in batches. To get a nice brown, it will take at least five minutes, maybe more. Watch and decide. When done, remove from oil, and place in oven on rack until all are cooked. All frites should be seasoned with salt immediately upon removal from fryer.

Seasoning. When all fries are cooked, get a big paper bag and put in seasonings. I used salt, parsely, garlic, parmesean cheese, cracked pepper, and truffle butter. Shake everything really well in brown bag until evenly coated and serve.

Let's just say that my parents had a rule that we had to eat our dinner or we went to bed. Becky went to bed almost every night. She would rather starve than eat something she didn't want. To her credit, she didn't eat some of the things my mom put together...I ate those casseroles and suffered greatly for it later.

My MIL today just got a bunch of platters from the store for food today. Since that didn't involve any cooking on her part, it was edible.

As for the lamb kidneys and beef brains in the bottles....YUCK!!! I still remember the smell of the lamb kidneys as my mom was blending them to put into Becky's bottles. I really can't blame her for being mostly vegetarian.

Little yelp of shock and surprise come out of me!! I will be 29!!!! As if I wasn't already self-conscious enough about looking older than I am (gray hair and all)!!!

Yeeeeeaaaaaah. My MIL ( Buddy's Mom, I have two) would have loved her "medicine". He was treated for polio when he was a kid and she force fed my poor DH liver for years. To this day he won't eat anything that reminds him of it.

He told my Mom to boil lamb kidneys and blend them up in the blender with their cooking juices and force me to eat them! BLEEECH!!!

Yesterday was a busy day. Buddy helped a friend most of teh day on his farm and DD and I shopped for DGD. Dinner was easy, DSIL grilled sirloin burgers adn turkey burgers and I cooked onions and peppers with fresh garlic from the garlic farm as a topping. We also had sliced tomatoes. I made a fudge marble cake and DS brought a ginormous Reeses Peanut Butter ice cream cake for dessert. Yum!
 
Okay, Ladies....I need so help this morning. Remember teh dinner party my sister wants for her DH...well soon to be DH, they are getting married Sept 14 in Mexico. Tomorrow is the dinner.

I need some critique on my menu plans to make sure you think it will be balanced and will work out for a buffet type meal. She is hoping that Mike will have the garage cleared out because I believe that space will be better there. Mike can arrange for his brither and his roommate to enter the home from teh front, but dinner would be in two separate rooms and way too crowded IMO.

Appetizers:
Shrimp Cocktail on a large tray
Artichoke Wonton cups

Main meal:

Heirloom tomato, mozzerella and fresh basil 'salad" drizzled with balsamic vinegar adn olive oil, salt and pepper

Make ahead mashed potaotes (sour cream and cream cheese) topped with fresh chives

Fresh green beans and cherry tomatoes seasoned with a little basil and fresh garlic

Spinach gratin on top of portabello mushrooms

Boneless prime rib

Prosciutto Roast pork

Some sort of gravy ( I only want to make one)

rolls and butter

Cake ordered from a Franklin Ave bakery ( I really don't want to make dessert


I am trying to have food that I can prep ahead of time. She has only one oven, although I can use the microwave as a convection oven if I need to. I have never done this.

I am going to see if I can fit both roasts in the oven at the same time, I will need to get them in the same roasting pan, I think.

I want to make the stuffed mushrooms like a casserole, sliced mushrooms for the bottom and topped with a spinach and gruyere and parmesan cheese mixture almost quichlike, I think recipe calls for heavy cream, a little flour, tons of chopped onion and some nutmeg.

I can change to a crabmeat stuffing if you think it works better.

Wonton cups can be made ahead of time, I an going to buy the filling at Costco..I think it is pretty good. I do have to see if I can fit in the convection oven, I need to heat the potatoes somewhere :confused3

There will be about 20 people. I have two bottles of Rosa....do you think it will be enough to bring? I don't think I can get more, and Gail and Mike do have a good wine selection at there home.

Morning! Well, DS woke up in true form this morning refusing to eat breakfast--maybe I should have warmed up some spaghetti:confused3 ;) Tonight is going to be Glynis' Lime chicken Nachos/Tacos. Yummo!

Hey, anyone have any experience with spider bites? DD has this really odd bite on her leg. It's been really red and swollen since Sat. She's complained about it hurting but never itching. :confused3 Might take her to the dr. just to be safe.
 
Take her to the Dr. I have had spider bites and they itched, did not hurt. My Sis IL was bitten in the Dominican Republic...not sure if it makes a difference...and she just put a bandaid on it until she came home. It got infected adn it was a really nasty infection. The Dr gave her heck for waiting to come in. It is probably nothing but better sure than sorry.
