Hey, I am into easy! If it's too difficult I have my kitchen slaves to assist! ;) Seriously, I hope you all don't think I am some big food snob or something. I like all kinds of food, and cook all kinds too!! In fact, someone has been posting recently about their picky food eater. Laura, should I tell them about my picky childhood, and what I used to eat??

Becky- no way no how do we think that you are a food snob....that does not men that I am not impressed by the dishes that you create in your kitchen. Between you and Laura, you have a cookbook that would rival some of the chefs on TV right now.

Hi All!

Well, we had a great time today...the mall is huge and we got to use up alot of gift cards that we had!!! :cool1:

We ate at Dave and Busters, which surprisingly was very good. I thought of my NOLA friends...I had the Cajun Shrimp Alfredo over linguine and it tasted very similar to Kathy's Velvet Shrimp, which I have never had (I made it with chicken for my picky eaters :) )

Oh boy, I am sitting in my screened porch and it is thundering and lightening really bad!!! And the cats are howling like wolves...which I know they aren't since we only have fox and cayote.

Becky, I know you are not a food snob...don't know if I can take a lamb kidney story though!!!

Today we are going to Logan's with my in-laws for my birthday. Hee hee, I am secretly pouting because no one asked me where I wanted to go, it was decided ahead of time. Oh well. It's a meal!! :) My b-day isn't until Wednesday, FYI.

From what you've told us about your in-laws, it could be worse. They could have decided to fix your birthday dinner themselves. :rotfl: Seriously. Hope you have a great time.

Tonight's dinner is steaks on the grill with red potatoes.

Oh Becky, I'm sorry, I by no means meant for you to feel like I thought you were a food snob. You are my hero, are you kidding??? I love your food pics and wait anxiously for them. Please accept my apology if I offended you.:flower3:
 
Nope, not offended at all! :)

I'm not sure wfd yet. DH is going golfing with my father and brother, so we'll eat after they come back. How they can go golfing in this hot humid weather is beyond me--I am holed up in my basement cave with the AC on!

I know that I am making steaks for everybody else, but since I don't eat red meat I have to think of something for myself, plus all of the sides of course!
 
I just made a Triple Layer Lemon Pie. It took 15 minutes max to put together, my kinda recipe. It's a mock lemon meringue pie, if it tastes good and anyone's interested, I'll post the recipe!

Dinner tonight will be Chicken Fried Steak, mashed potatoes and corn. The lemon pie really is very good for a quick, easy dessert and very low fat/cal if you use skim milk and fat free cool whip:

Triple Layer Lemon Pie

2 c. cold milk
2 pkg.(4 serv size each) Lemon pudding & pie filling
1 Tbsp. lemon juice
1 graham cracker pie crust
1 8 oz. tub cool whip, thawed

Pour milk into large bowl. Add dry pudding mixes and lemon juice. Beat with a wire whisk 2 min. or until well blended.(Mixture will be thick)

Spread 1 1/2 cups of the pudding mixture onto bottom of the pie crust; set aside. Add half of the cool whip to remaining pudding mixture and stir gently until well blended. Spread over pudding layer in crust. Top with remaining cool whip.

Refrigerate three hours or until set. I garnished it with a little lemon zest and served it with sliced strawberries on top.
 
My grandmother used to can all the time. I was fortunate to have watched and learned from her. I would really miss her plum jelly if I never watched her.

Tonight we are having marinated flank steak snap peas and rice.

I've got plum jelly on my horizon, as well! My tree is loaded, and I'm just waiting for them to ripen. I'm so sad about my peaches, though. We have a little tree, and DH just didn't thin the peaches enough. We lost 2 major branches just loaded with peaches. We've got all the unripe peaches boxed up, and sitting in the dark, hoping they'll ripen, but I'm not too hopeful. I was planning on canning some peach pie filling, jam, and just bottling some peaches to eat in the dead of winter. Now, I'll have to choose.

I don't think you're a food snob! You're what I want to be when I grow up: someone at home in the kitchen, who can throw together delicious meals at a moment's notice. I love reading your posts, simply because you make such delicious meals, and sound so "down home". It's a really cool mix!

Our big meal will be at lunch today: Curried honey chicken, green beans and brown rice. Later we are going to BIL's house to celebrate a couple of birthdays with hot dogs, hamburgers, and squash from my garden. We'll top it all off with a couple of Maggie Moo's Ice Cream Cakes!!!!!

Baked sole stuffed with crab meat from Omaha Steaks for me
Baked tilapia for dd (she doesn't like the crab meat stuffing)
Baked potatoes
Salad

Easy and quick clean up.

I'm making dinner soon. We were supposed to go to my inlaws today, but they bailed on us last night--said they were too tired. OK by me! Now DH and I will eat Sunday linner with my folks and brother. Laura and the kids are at her inlaws. I'm sure she will have tales of delcious food to tell us all later. ;)

Everyone but me is having steak, as I said before, and I am making myself a piece of chicken. I am also sauteeting up the lobster and chanterelle mushrooms I got at the farmer's market, and my Mom is making a cauliflower casserole and zucchini fritters.

You know, I thought about that after the fact. At least I know my hunger will be satisfied at Logan's!!

Eek, hope the Tag Fairy doesn't see that one :scared1:
 
My internet has been out since late Friday night (I'm at the library on one of their germy :eek: computers). We may not get our connection back until Wednesday. :headache:

We were supposed to go to a baseball game last night, but it got rained out. We ended up going to Olive Garden with DH's family instead. Tonight we're having porterhouse steaks, baked potatoes, broccoli, and salad.
