Well, in that case Lauren, expect a phone call. Kathy you know he's going to drive you insane. Husbands think that is their absolute right after any surgical procedure. When I took DH for a procedure, while I was waiting for the surgery to end in the waiting room, I was working on my laptop. One of the nurses walked by and said "Oh honey. You really ought to rest while you can. He's going to run you ragged when you take him home today." :rotfl: And she was right! :lmao:

I so know what you're saying is true and going to happen, but I'm trying to convince myself "It won't be that bad". Not working. This man doesn't even know how to turn a computer on and he asked me an hour ago to fire up the old tower so he can research his procedure and recovery time. He's already discovered that his shoulder may dislocate and will be making awful cracking noises, which he wants ME TO HEAR. He actually asked if I'd go in the OR with him. I politely told him I literally went with my Dad for hundreds of procedures and no one is allowed on the OR.:sad2:

Becky -awesome pics girlfriend!!!

The boiled crabs we got last weekend were so good, we're getting more today and that will be dinner!!!

Morning all! Hope everyone's weekend is shaping up to be great! It's a gorgeous day here. We are all set for some yard work! I have a garden full of tomatoes that need to be picked. I think that I'll dry the cherry tomatoes. I like to do that, and then I have them all winter long for pasta sauces. Yum!!!!! I need to can the rest of the large tomatoes. I won't start that until late tonight, as it's much too hot already to heat up the house with the stove!

DH and I are going out tonight. Not sure where, but we're celebrating the fact that he's back and doesn't have to go back to the mine! Don't know what the kids will have. Most likely, roast beef sandwiches and soup of some kind.

The menu for today's linner is set. Three kinds of fish--seared tuna in a teriyaki marinade with pickled ginger, whole sea bass with a caribbean sauce, and whole snapper with mango butter. Here's a picture of the fish, just back from the market:

We are also having the roasted curried sweet potatoes, eggplant sticks (Mom's making them), and green beans.

The kids asked me if they could help in the kitchen. As you can see, I found a good use for them. :rotfl:

Hey, somebody had to clean up the mess from the popovers the other night!

Have a great Saturday everyone.

Gretchen, We have booked 2 studios at OKW for February for our Daytona 500 trip! :goodvibes Any tips for me on which bldgs or area of OKW is best? Also, Olivia's sounds yummy, will I need ADR's to eat there? Any other suggestions, would be appreciated!

Hey y'all,

Don't know WFD yet, might go out!

Becky, Love the pics of the kid's helping out! Can't wait to see the cooked fish!

Glynis, A yard full of fresh tomatoes sounds wonderful!:goodvibes I'm also impressed that you will dry some & that you do canning! I've always found canning to be so difficult. But I also don't have a yard full of fresh veggies,:sad1: so it's never become a neccesity to do canning. Enjoy the pretty day!

Kathy, You better do some cooking now & stick it in the freezer. Cause Johnny is going to want you at his beck & call this week!! ;)

My mom taught me to can when I was a teenager. It was always a chore, back then. However, now there's something really satisfying about seeing those jars on my pantry shelves. It's really not that hard, but it does take some time!

That is something I've always wanted to do and just never have gotten around to. It must be a very satisfying thing to do.:goodvibes

It is! It's also a very easy thing to do. I always figured it would be hard, but the hardest part is growing the produce.

I just made a Triple Layer Lemon Pie. It took 15 minutes max to put together, my kinda recipe. It's a mock lemon meringue pie, if it tastes good and anyone's interested, I'll post the recipe!

Thanks Lauren, I may be calling you if he drives me INSANE!

My DH acts Army-tough, but he is really a big baby. The other day he stepped out of the car wrong, which made his leg cramp or something and he whined about it the rest of the day. When he did it, he said I was going to have to bring him home so he could go to bed instead of our planned day out with the kids. I ignored him. Good luck this week!

Laura sorry you didn't catch anything. But I'm going to be completely honest with you. If I was faced with the reality of cleaning anything I caught myself, I'd much rather buy something from the seafood market. Wimp, I know. And I've lived on the coast my whole life. I won't head my own shrimp either.

It is pretty gross. However, I saw my mom do it all the time when I was little, so it doesn't bother me. It smells better than chicken.

The kids asked me if they could help in the kitchen. As you can see, I found a good use for them. :rotfl:

Are you all still sure you want to work in Becky's kitchen??

Dinner today was so yummy. I probably should have had more. I have to eat at my ILs tomorrow.

Do you really have to ask if we want the recipe??

My grandmother used to can all the time. I was fortunate to have watched and learned from her. I would really miss her plum jelly if I never watched her.

Tonight we are having marinated flank steak snap peas and rice.

I so know what you're saying is true and going to happen, but I'm trying to convince myself "It won't be that bad". \

Kathy- I am sorry to tell you this................it will be that bad. Just get prepared, make some food, buy some wine and haul in a chair and a good book.

I would love that recipe...DH likes anything lemon and the queen of EASY says it is easy, then that is good enough for me

I haven't canned in years and I really do miss it. I loved having jars of tomatoes, relish and pickles on my selves, and you are do right....there is something very therapeutic about his task.

Becky- I would love to have the recipes for those gorgeous drinks if you would not mind sharing.

Well, not everyone is into "EASY" on this thread, like umm your gourmet cook sis. Heck, I even had to fuss at Nancy one time for making her own graham cracker crust.:lmao: It's still setting up in the fridge, if it's good I'll post it.:goodvibes

I forgot to post dinner. There is none.

Really, the DD and family are at DS for dinner and my DH got way too much sun today. He just had some toast abd i am having some caponata on multigrain crackers.

Yesterday I spent the day washing and ironing so DD was in charge of dinner. We had her old standby.....hot dogs :rotfl2:! I know that she can cook and I know that I had plenty of things here to fix but no....hot dogs on buns....French fries and that was it. I was tired so it did taste good to me.

Sheryl, honestly I haven't been disappointed with any location I've stayed in. You did tell them you had to have a first floor unit or in an elevator building, didn't you? DD can't do stairs (lack of bi-lateral coordination) and she's too big for me to carry up or down, so I've stayed in Bldg 62 (elevator) on the 2nd floor and in first floor units at other times.

The elevator units are near the hospitality house with Olivias, Goods food to Go and the main pool. Bldg 62 had a lovely view of the golf course and the pond with the fountain from the balcony.

But if you prefer to be away from the hustle and bustle and since you will have a car, you could request a villa near one of the quiet pools. Those have been some of our favorite locations so far. We felt like we had the entire place to ourselves.

We have also stayed in Bldgs 25 and 26 which were close to the first bus stop. We were able to see the higher Illuminations fireworks from the patio.

Olivias has been roller coaster like in its quality the past few years. Really good in 03 and 04, not so great in 05, but good again in 06. You shouldn't need ADRs for breakfast or early dinners. Anything after 5:30 or so and I would make some just in case.

Goods to go is the quick service window located sort of behind Olivias, facing the main pool. We don't care for it very much, although Kenny said the breakfast croissant was ok. When we get the burger/fry craving, we actually prefer to take the very short ride to POFQ and hit their food court. And once we discovered Giordano's would deliver there, well, we were set.

I hope you enjoy your stay there. We love the peaceful surroundings and the large rooms. Maybe a little too much. I can't get Kenny to agree to try anywhere else. :confused3

Hey, I am into easy! If it's too difficult I have my kitchen slaves to assist! ;) Seriously, I hope you all don't think I am some big food snob or something. I like all kinds of food, and cook all kinds too!! In fact, someone has been posting recently about their picky food eater. Laura, should I tell them about my picky childhood, and what I used to eat??

Anyway, here is dinner. The bass and snapper, stuffed with herbs and waiting to be grilled:

Mom's famous, fabulous eggplant sticks:

And, a late addition, a grilled waterlemon and haloumi salad:

No photo of the green beans, or of the baguette (that I forgot about and burned to a crisp in the oven...it's that whole baking thing again...).
