Last night we had baked stuffed haddock and baked stuffed shrimp with rice pilaf.... tonight we will have ham steak, mashed potatoes and peas. I need something simple.
 
Morning, everyone!

Dinner tonight is really simple. I'm finishing off the leftover honey pineapple chicken, and the kids will have macaroni and cheese with tuna.

We're leaving tomorrow morning to go to my mom's house while Alan is at the mine. I'll be gone through Saturday.
 
Tonight we're having Chicken Pasta Parmesan, basically a chicken & pasta dish in a creamy parmesan sauce with bell peppers. Sides will be corn and a salad.

If this isn't already posted, would you please share the recipe?

Lauren - the renovations look great.

I felt like I was on auto pilot yesterday but thankfully, I feel more like myself today. Last night I made Lauren's Tom's Home Chicken again and it still got rave reviews. Tonight I am making brown sugar pork chops with steamed veggies.

Hey ya'll! What's up with all this heat all of a sudden? Before this week I was commenting on what a mild summer we were havin.... That's over now!

Last night was chicken & proscuitto tortelloni(store bought refridg stuff) topped with some leftover fresh salsa and low fat mozzarella and steamed sugar snap peas. It turned out yummy- I really wanted that fresh tomato-y flavor and that's what I got!:rotfl:

Tonight I think is sautee- cubed pork with the leftover peas, onion and some greek marinade. But that could change, it's about "that time";) and I can't seem to be able to make up my mind.

Maybe I'll just sit in front of the fridge with a fork and spoon...:eek: :headache: :rolleyes1 :sad2:
 

Today I am making chicken and apple sausages with a buttery peach compote, corn on the cob, tomato salad, and sauteed summer squash.

I never cooked anything last night. I was cleaning out closets and was on a roll so we had sandwiches with whatever was in the fridge. I tend to keep a lot of sandwich fillings for you know who:rolleyes1

Tonight we will have the burgers.

:lmao: :lmao: I can relate Lori. Really I can. A couple of days last week I was ready to eat everything in sight. Now that my hormones have shifted some, I only have my normal overeating urges. :guilty:

He was. I am commiserating with you and Lori about normal overeating urges. I just finished a piece of cake and am so full that I don't even feel like cleaning my kitchen :sad2:.
 
Gretchen - Here ya go:

Chicken Pasta Parmesan

2 Tbsp. EVOO
1 lb. boneless, skinless breasts, cubed
1 c. sliced mushrooms
1/4 c. chopped onions
2 Tbsp. dry sherry
1 can cream of chicken soup
1 c. thinly sliced red & green peppers
1/2 c. grated parmesan cheese

Heat EVOO in skillet, add chicken and brown. Remove and set aside. Cook mushrooms and onions in oil until tender. Add sherry and soup to mushroom mixture. Heat through, stirring often. Add chicken and peppers. Cover and simmer 10 minutes, stirring often. Stir in cheese until melted. Serve over pasta.
 
Today was Farmer's Market day, so I am making lots of veggies -- corn on the cob, tomato salad, eggplant sticks and sauteed squash. The kids will be thrilled. ;) Okay, I'm not that mean, I'm making macaroni and cheese too.

Nancy, dear, I don't know how to tell you this, but it might not be the cake. I don't think my position on cleaning changes at all whether I am full or not. I dislike it all the time. ;)

Last night we had the Crawfish Etouffee and I tried the changes that shovan suggested and it was great! Thank you shovan!! :wave2:

Tonight we are having Brochette of Kefta, it is a recipe my sister-in-law passed to me, she got it in Epcot during the Food and Wine festival a few years ago. We love it, it is VERY spicy though, so be warned!

Brochette of Kefta

1 pound Ground Beef (between 1 and 2 pounds)
1 Medium Onion, finely chopped
½ bunch Chopped Cilantro (about ¼)
½ bunch Chopped Parsley
1 tsp. White Pepper
1 tsp. Salt
1 tsp. Cumin
1 tsp. Paprika

Combine ingredients. Form into patties and grill.
Serve with Shermula Sauce.

Shermula Sauce

1 cup Tomato Sauce (I use a whole can)
1 medium Onion, chopped
2 medium Tomatoes, diced
½ Tbs. Fresh Garlic, chopped
½ Tbs. Cumin
½ Tbs. Salt
½ Tbs. White Pepper
½ bunch chopped Parsley
1 bunch Cilantro, chopped (or less)
2 ounces Olive Oil

Combine ingredients and bring to a boil. Reduce heat and continue cooking until sauce reaches desired thickness.

Serve with couscous cooked in chicken broth. Can add peas and/or carrots to the couscous. Fresh cilantro is best with this recipe, but can use dried parsley, just lesson the amount. Pour Shermula sauce over meat and couscous. Serve with salad and bread.

I'm on my own until saturday Alex is with his dad. I wonder where dinner is coming from tonight? In prediet days I would have answered Baskin Robins for a banana split. I pigged today at lunch I had mexican so I think just a salad for me tonight.
 
You guys...(in a whining voice)...

now have me craving chocolate cake!!! I may have to make my diet soda cupcakes tomorrow...or hit those 100 cal cupcakes in the kitchen!!!

Nancy, I was thinking about your friend today...I have been craving tuna sandwiches. :)

OK, so I took a pic of my super gourmet dinner...:rotfl: . We had hamburger gravy over buttered noodles, green beans and tomato salad (all veggies courtesy of my neighbor). It was really good...this is my plate; it was only half a serving of noodles but it kind of spread out...although with me loving noodles I couldv'e eaten the whole pot!!!

:) Sure, I think you could just leave it out, I don't put in quite as much as it calls for either, cilantro can be overwhelming! (If you like basil, you could try using that instead...maybe...?)
