The kids and I were supposed to have a beach day today with my dad followed by a trip to Captain Frosty's for a clam roll, but the weather didn't cooperate. Now I'm not sure what I am having for dinner. It will include eggplant sticks, since I bought two at the market yesterday, and corn. Maybe I'll go to the fish market and see what they have in today. I'll post a finalized menu later.

Becky - I have printed your tomato/brie pasta recipe. I think I can maybe manage that one. We'll see.

Tonight's dinner is already in the crock pot. We are having Glynis's Polynesian Pork Roast. Not sure what veggies, depends on what looks good at the store.

Not sure WFD tonight--I'm working a 2-10 shift, so I'm sure the kids and DH will be having take-out or frozen pizza. But I thought I would share some before and after pics of my kitchen. The painting isn't 100% complete, but close enough to share with ya'll

Well since I never got around to making the Curry Cajun Chicken last week, I'm doing it tonight. We'll have a salad with cherry tomatoes from our garden as a side.

Last night's baked hunter's stew was incredible!!! Here's the recipe if anyone is interested

1 pound hamburger (I used ground turkey)
1 medium chopped onion
3 large carrots, sliced
3 large potatoes, chopped (I used summer squash instead!)
1 10 oz. bag frozen green beans
1 can tomato soup
1 1/3 C. water
(I added 5 "glugs" of Worcestershire sauce and it was great!!)

Crumble the hamburger into the bottom of a greased 9 X 13 baking dish. On top of the meat, layer the onion, carrots, potatoes and green beans. In a small bowl, mix soup and water (and Worcestershire sauce) and pour over meat and vegetables. Cover and bake at 375 degrees for 2 hours or until meat is no longer pink and vegetables are tender.

I only cooked it about an hour and a half, and it was perfect! This was very yummy! Since DH and I are low carbing it, it was a perfect meal for me! I added some dinner rolls for my kids and that was it!

Last night I couldn't decide on dinner, so I walked to the casino to cash in a ticket and decided since I was that close to Gordon Biersch I REALLY needed the seared ahi tuna and garlic fries....needed, like I would have died without them! And then, since God knows I would feel guilty about eating the fries(umm, maybe) he made sure there were no taxis waiting to take me back home- so I walked 15 blocks in the near 100 degree heat!:eek:


But, I gotta tell ya- after I cooled down and started nibbling at home- those fries were yummy!:cloud9:

Tonight is definitely going to be something back on the diet, or else I might start to feel guilty!:lmao:
 
Stephanie, I just saw the links to your kitchen photos--it looks awesome! Two things: I have the same wine posters in my house! The union poster is hanging over my wine fridge, and the little ones are in the side hallway.

What shade of red did you use? DH and I are about to paint our finished basement room (partially) red, and I am looking for ideas on what shade to use.
 
Latest update on the miners:

As of 11:00 last night, the rescue mission was halted. According to the mine owner, seismic activity had undone all that the rescuers had done. So, they were back to square one. It was judged unsafe for the rescue to continue from underground, so they are trying to drill from the top down. It will take days for them to drill through 1500 feet of solid earth, rock and coal. Keep them and their families in your prayers, please!

Good Morning All!

Sheryl, I am here not too chatty lately though...we were away over the weekend and now I am in clean out closet mode. I don't think I'll be able to catch up so I think I missed alot. We are going to start doing some renovations around here so I better get organized. :)

Our stairs are almost done but I forgot to take a before pic. We just need to clean up some of the paint that ran under the tape and carpet. I will post when we are done.

We are having london broil, home fries and broccoli with cheese tonight.

I go to the dr today to see if there was anything wrong with my biopsy...I am sure they would have called if there were.

Lauren, Glad to hear you were busy. I was worried that you were stressing & depressed waiting for test news. What do you mean get organized before renovations? ;) My sweet hubby is trying to help me do that, but I'm not budging! He bought a wine refridgerator for me! I'm going to lose the very large closet in the den when we do the bathroom. It's my wine cellar now. Not really a wine cellar, styrofoam wine holders stacked up to hold the wine! :lmao: But so far the wine is still in the closet. :guilty:

Lori, I don't think you have to worry too much about blowing your diet with those yummy garlic fries! 15 blocks in that heat more than makes up for it!

Here's one of my less flattering than usual food pics! (I didn't even manage to clear all of the junk off the table.) But I wanted to show y'all my first ever attempt at biscuits from scratch. It's the Irish Lamb Stew I fixed on Monday, with a glass of Honey Meade Wine we bought at last year's F&W Fest. The biscuits were pretty tasty, but a little heavy, I'll have to work on that.

It was all very good, but again what was I thinking, heating up the stove & oven with 95+ temp. outside! That's a middle of the winter meal not an August meal!

Here's the recipe for the Lamb Stew, although I'm sure most of you will be smarter than I was and wait till it cools off before cooking stew!

IRISH LAMB STEW

A traditional Meal- Just right for after a night out at the pubs-and it gets better as it gets older!

Ingredients:

1/2 pound thickly sliced bacon,
diced 6 pounds boneless LAMB shoulder cut into 2-inch pieces
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup all purpose flour
2 cloves garlic,peeled and finely chopped
1 Large Yellow Onion peeled and finely chopped
1/2 cup water 4 cups Beef Stock -canned or home-made
2 teaspoons sugar
4 cups carrots-cut into 1 inch pieces-use large manly ones!
2 large yellow onions peeled and sliced
3 pounds potatoes peeled,quartered and cut into 1/2 inch pieces
1 teaspoon dried thyme,
whole 1 bay leaf
1 cup dry white wine
Garnish-chopped parsley

Instructions: Saute bacon in large frying pan-reserve fat and bacon. Put lamb salt pepper and flour in large mixing bowl-toss to coat meat evenly Brown meat in frying pan with bacon fat. Put meat into 10 quart stove top casserole-leave 1/4 cup of fat in frying pan. Add the garlic and yellow onion and saute till onion begins to color.Deglaze frying pan with 1/2 cup water and add the garlic-onion mixture to casserole with bacon pieces,beef stock and sugar.Cover and simmer for 1 1/2 hours or till tender. Add remaining ingredients to pot and simmer covered for 20 minutes until veg. is tender. Check for salt and pepper before serving-top with parsley garnish before serving.

I cut this recipe in half. Used Lamb Blade Chops & left the meat on the bone, which just fell off after cooking. I also added a little bit of finely sliced cabbage. The dish I was trying to copy from F&W last year had cabbage in it. Nothing diet or light about Irish cooking is there?!

Looks yummy!!! Biscuits take a lot of work, I've found. I need to make some more for practice myself. My grandfather was a cook for a bunch of sheepherders during the Depression, and he learned how to make the best sourdough biscuits ever. He mixed them all up by hand (no spoon), and they tasted to light and fluffy! I wish that he had written down his recipes, as he was a fantastic cook, but he didn't. The only thing I have is a videotape of him making them, and it's hard to get things right just watching him.

My husband is cooking as we speak.... Coq au Vin....... he doesn't cook very often..... I'm enjoying it!
